until mayonnaise turns<br />

green; set aside.<br />

Prepare the potatoes: Boil<br />

baby potatoes until tender.<br />

Cool, cut in half, and<br />

transfer to a bowl. In a pan,<br />

cook the bacon until crispy;<br />

set aside. In the same pan,<br />

sauté garlic until fragrant.<br />

Add the fried bacon, bacon<br />

fat, garlic, mayonnaise<br />

mixture, onion, and parsley<br />

to the potatoes; mix well.<br />

Season to taste with salt<br />

and pepper. Chill and serve<br />

cold.<br />

Seafood salad<br />

with Lime<br />

dressing<br />

This Seafood salad with lime<br />

dressing is a fairly simple<br />

and easy to prepare dish. It<br />

can be served as an<br />

appetizer or as a side dish<br />

and is ideal for the healthconscious.<br />

Ingredients<br />

300g shrimp peeled and<br />

deveined<br />

300g squid bodies cut into<br />

rings<br />

350g fresh tuna fillet cut<br />

into cubes<br />

3 tomatoes de-seeded and<br />

diced<br />

3 stalks celery chopped<br />

3 tablespoons chopped<br />

parsley<br />

2 white onions chopped<br />

1/2 tablespoon<br />

Paprika(optional)<br />

Dressing Ingredients<br />

1 ½ tablespoons olive oil<br />

2 cloves garlic, minced<br />

1/4 cup of lime juice<br />

3 tablespoons of vinegar<br />

1/2 teaspoon of sugar<br />

salt and pepper to taste<br />

Preparation Method<br />

In a shallow bowl, combine<br />

the dressing ingredients.<br />

Season the tuna with a dash<br />

of salt and pepper. Set aside.<br />

In a frying pan, heat the oil<br />

and cook the tuna for 2 to 3<br />

minutes or until done. Drain<br />

and set aside.<br />

In a pot, bring the water to<br />

the boil. Add a dash of salt<br />

then boil the shrimp for 2<br />

minutes. Drain and set<br />

aside.<br />

In the same boiling water,<br />

boil the squid for 3 minutes.<br />

Drain and set aside.<br />

In a large bowl, combine the<br />

seafood and the rest of<br />

ingredients.<br />

Pour the lime dressing over<br />

the salad then toss and<br />

sprinkle with parsley. Serve.<br />

Waldorf Salad<br />

This salad is named after<br />

the New York Waldorf<br />

Astoria Hotel where it<br />

was probably invented. If<br />

you want to have more<br />

protein, then I think you<br />

will find that Chicken<br />

goes pretty well with most<br />

of our salad recipes, as<br />
