However, more prevalent to<br />

me are the influences of<br />

other Asian neighbors,<br />

particularly China and to a<br />

lesser extent Japan and<br />

Thailand, plus the almost<br />

pervasive influence of<br />

America. In the stores, most<br />

imported brands are<br />

American and American<br />

foods become more of a part<br />

of the eating culture and<br />

cuisine every day. To the<br />

point that it is now a blurred<br />

line with some Filipinos as<br />

to what is Filipino and what<br />

is American food.<br />

McDonalds, KFC, Burger<br />

King and Pizza Hut grow by<br />

the day, alongside Jolibee<br />

with its FilAM menu. Still<br />

places like Mang Inasal,<br />

Tokyo Tokyo and Chicken<br />

Bon Chon continue to grow,<br />

but here in the Philippines,<br />

American fast food is<br />

winning the battle for minds<br />

and peso’s, as it has done<br />

pretty well everywhere.<br />

There have been notable<br />

misses, such as Carl’s Jr.,<br />

Wendy’s and Burger King,<br />

none of which has achieved<br />

the popularity of<br />

McDonald’s. In fact, Carl’s<br />

Jr. has now closed down in<br />

the Philippines.<br />

Still Americana and the<br />

West is an integral part of<br />

this friendly Asian country<br />

and its outlook. I just hope<br />

that it retains the best parts<br />

of its history, heritage,<br />

culture and cuisine as it<br />

evolves and modernizes.<br />

but by no means least,<br />

Desserts.<br />

This copy has around 10<br />

recipes in each category, but<br />

the future editions will have<br />

between 15 and 20 recipes<br />

per category, making a total<br />

of 225 – 300 recipes in the<br />
