Always worth giving in to temptation

the temptation of cake or pastry
is going to do it right – with

researcher at the Coppenrath & Wiese
company. The triumphant march of frozen
cake over the last quarter of a century is
unstoppable. Alois Coppenrath traveled to
major cities in Germany and each time, he
went to the best address in town and
ordered a Black Forest cherry cake,
cheesecake or some kind of chocolate
cake. He found, however, that there were
no standards for “the mother of all baked
goods”. In a bold move, he and his cousin
Josef Wiese from Mettingen in Westphalia
got to work and created the cake that
today is the talk of the town as Black forest
cherry cake – for the freezer. Every day,
80,000 liters of whipped cream and 80
tons of apples are processed in the pastry

The advantage of this process is that neither
flavor nor valuable ingredients are lost. A
total of 27,000 cakes are stored at minus
21°C [minus 5.8°F] in one of the world’s
most modern freezers. Such a volume
leaves the warehouse every two weeks. The
cakes are protected by sturdy Styropor ®
packaging. This impact-resistant and coldretaining
Styropor ® packaging ensures that
the cakes will survive the trip all the way
home unharmed, and it also prevents undesired
thawing for up to four hours. In addition
to its outstanding heat-insulation capacity
and impact-resistance, BASF’s Styropor ®

low weight and low sensitivity to
moisture – all aspects of crucial relevance
when it comes to keeping frozen foods fresh.
