Barley and Mint Salad<br />

INGREDIENTS:<br />
500g pearl barley<br />
2 onions, diced<br />
4 red peppers, diced<br />
½ cup parsley, chopped<br />
1 cup fresh basil, chopped<br />
¼ cup fresh mint<br />
shredded mixed lettuce<br />
lemon juice<br />
black pepper<br />
sea salt<br />
herb dressing (olive oil, lemon juice and mixed herbs)<br />
METHOD:<br />
Cook the barley for 40-50 minutes. Be careful not to<br />
overcook it<br />
Combine the onions, peppers, parsley and herbs in a mixing<br />
bowl. Add the cooled barley<br />
Mix the shredded lettuce, lemon juice, black pepper, salt and<br />
dressing, and garnish<br />
