Malva Pudding with Ice Cream and<br />

Brandy Snaps<br />

Serves: 24<br />

INGREDIENTS:<br />

Malva Pudding<br />

4 eggs<br />

300g sugar<br />

180ml apricot jam<br />

120g butter<br />

500ml milk<br />

80ml white vinegar<br />

560g cake flour<br />

20ml bicarbonate of soda<br />

4ml salt<br />

METHOD:<br />

Cream the eggs and sugar and then add the jam<br />

Melt the butter and add to the eggs and sugar<br />

Mix in the milk and vinegar<br />

Sieve the flour, bicarbonate of soda and salt. Add the wet and<br />

dry mixtures together<br />

Pour into individual ovenproof ramekins and bake at 180°C<br />

for about 20 mins<br />

INGREDIENTS:<br />

Sauce for Malva<br />

1 125ml cream<br />

500g butter<br />

600g sugar<br />

METHOD:<br />

Place all ingredients into a saucepan and bring to a boil<br />

Pour the syrup over the puddings while they are both still hot<br />

INGREDIENTS:<br />

Vanilla Ice Cream<br />

500ml milk<br />

500ml cream<br />

½ vanilla pod<br />

6 egg yolks<br />

200g sugar<br />

METHOD:<br />

Bring the milk, cream and vanilla pod to a boil in saucepan<br />

Mix together the egg yolks and sugar until they form a paste<br />

Remove the vanilla pod from the heat and add the milk mix<br />

to the egg<br />
