Tofu Chocolate Brownies<br />

Serves: Makes 20 brownies<br />

INGREDIENTS:<br />

125g tofu<br />

125g cake flour<br />

¼ teaspoon salt<br />

½ teaspoon bicarbonate of soda<br />

125ml vegetable oil<br />

125g cocoa powder<br />

250g castor sugar<br />

15ml vanilla extract<br />

300g walnuts, roughly chopped<br />

METHOD:<br />

Preheat the oven to 180°C<br />

Grease a 25cm x 40cm square baking tin<br />

Cream the tofu until it is smooth and has no lumps<br />

In a separate bowl, sieve together the flour, salt and<br />

bicarbonate of soda<br />

Using a jug, whisk together the oil, cocoa powder, sugar and<br />

the vanilla extract. It is important that this mixture is well<br />

blended and smooth before you stir it into the tofu mixture<br />

Beat until fully incorporated, before adding the flour mixture<br />

and beating until smooth<br />

Fold in the walnuts and spoon the mixture into your<br />

baking tin<br />

Bake for 25 minutes<br />

Remove from the oven and allow to cool in the tin<br />

TO SERVE:<br />

Dust with icing sugar and serve warm.<br />
