Vegetable Poha/Vegetable Rice<br />
Serves: 3-4<br />
INGREDIENTS:<br />
2 cups rice flakes (poha)<br />
1 tablespoon oil<br />
½ teaspoon mustard seeds<br />
½ teaspoon cumin seeds<br />
6-8 curry leaves<br />
1 slit green chilli<br />
½ cup roasted peanuts, coarsely crushed<br />
1 medium-size tomato, finely chopped<br />
¼ teaspoon turmeric powder<br />
1 teaspoon red chilli powder<br />
salt, to taste<br />
2 teaspoons sugar (optional)<br />
2 teaspoons lemon juice<br />
coriander leaves, to garnish<br />
METHOD:<br />
Rinse and soak rice flakes in water for about 5 minutes<br />
Heat oil in a pan and add mustard seeds, fry them until they<br />
pop<br />
When they crackle add cumin seeds, curry leaves, slit green<br />
chillies and crushed peanuts<br />
Add finely chopped tomatoes, turmeric powder and red chilli<br />
powder<br />
Add salt<br />
Cook until tomatoes soften<br />
Stir soaked rice flakes into the mixture<br />
Add sugar and lemon juice to taste and mix everything well<br />
Let it cook on a low heat for about 2 minutes<br />
Place in a bowl and garnish with fresh coriander<br />
