Vanilla Panna Cotta with Poached<br />

Strawberries<br />

Serves: 6<br />

INGREDIENTS:<br />

Vanilla Panna Cotta<br />

300ml fresh cream<br />

200ml milk<br />

45g castor sugar<br />

1 vanilla pod<br />

4g agar agar<br />

METHOD:<br />

Pour the cream, milk, castor sugar and vanilla pod (sliced<br />

open and scraped) into a heavy-based pot<br />

Add the agar agar and bring to the boil<br />

Whisk to dissolve the agar agar and allow to simmer for<br />

about 2 minutes<br />

Remove the vanilla pod and pour into desired mould and<br />

place in the fridge until set<br />

INGREDIENTS:<br />

Poached Strawberries<br />

200ml champagne or sparkling wine<br />

200g castor sugar<br />

1 punnet of fresh strawberries, washed and sliced<br />

METHOD:<br />

Pour the champagne or sparkling wine and castor sugar into<br />

a heavy-based pan and bring to the boil<br />

Pour over the strawberries and allow to cool<br />

TO SERVE:<br />

Place the strawberries in a bowl with some of the poaching<br />

liquid. Carefully unmould the panna cotta and place on the<br />

strawberries. Garnish with a fresh sprig of mint and some<br />

air-dried vanilla pod.<br />
