Hot and Cold Fruit Compote<br />

INGREDIENTS:<br />

2 ripe peaches<br />

2 golden delicious apples<br />

1 mango<br />

1 cup boiling water<br />

¼ teaspoon salt<br />

1 teaspoon tahini<br />

1 banana<br />

METHOD:<br />

Roughly cube peaches and set aside<br />

Peel and roughly cube apples and set aside<br />

Peel and roughly cube mango and set aside<br />

Add boiling water to a small pot and keep it boiling<br />

Keeping plate hot and water boiling, add peaches, apples<br />

and salt and replace lid on pot. The idea is to quick-stew the<br />

apples and peaches — 5 minutes should do (after about 3<br />

minutes make sure there is just enough water in the pot. It is<br />

ideal if after the 5 minutes all the water has been used)<br />

Remove pot from heat and add tahini, fresh mango and<br />

banana<br />

Take off the heat and process all the ingredients in the pot<br />

with a stick blender<br />

Serve warm or, when cool, place in fridge and enjoy cold at<br />

a later stage<br />
