Time and nature
As long as we live, air, plants, time… all of this exists naturally
around us at all times. They are utterly important to us, for our
lives depend on them, and yet they are often neglected, for they
are so omnipresent that we take them for granted.
Closing our eyes, thinking about the countryside we grew
up in as children. Green rice fields, dew drops glittering in
the sunshine, waking from a slumber, stretching our limbs,
breathing in the fresh and unpolluted air… At that time, we
were so busy fantasizing about skyscrapers and urban sceneries
that we never thought that these times would also end, the days
and nights spent in untainted nature have turned into a far away
memory.
Nowadays, “organic” fruits and vegetables are becoming
rare, “green” has become a synonym of high value, natural
environments need to be protected to exist. Countrymen are
moving into cities, rich men often travel the countryside. People
strive and fight, time flies away, nature is being unnaturally
transformed, and in the end, people exchange their place with
each other through a “wall” but in the end nobody finds what
they are looking for.
“The grass is always greener on the other side”, we always
cherish what we have only once we have lost it. As the Chinese
saying goes: after losing a sheep, it’s not too late to repair the
fence, better late than never. Is it really not too late? Even if it’s
not too late, it’s still time for the human, what about the sheep?
All the culture we threw away, the manners, everything we now
despise: the serenity given by respecting divinity and accepting
fate, the generosity of honoring earth and heaven, the humility
of adoring the divine, and we ignore those whispered callings,
hoping that people drifting in the flow of everyday life would
stop, and listen.
This issue of Taste of Life leads the reader to contemplate
natural beauty and experience the mysteries of time. What the
world has to show is still so rich and varied that it is easy to get
lost. If we were spinning tops, why not decide by ourselves to
rest for a while, and enjoy this moment of serenity to think
about the future?

從 未 想 到 這 樣 的 時 光 也 會 逝 去 , 當 初 自 然 清 新 的 日
與 夜 化 作 一 個 遙 遠 的 記 憶 。
如 今 『Bio』 的 蔬 菜 瓜 果 稀 有 了 ,『 綠 色 』 一 詞 成
了 昂 貴 的 代 表 , 天 然 的 環 境 也 要 保 護 才 能 看 到 。 農
民 走 向 城 市 , 富 賈 常 遊 鄉 村 。 人 們 辛 苦 奮 鬥 , 時 光
流 過 , 自 然 被 不 自 然 地 改 變 著 , 最 終 , 卻 是 進 進 出
出 一 堵 『 圍 牆 』。
『 他 鄉 月 兒 圓 』, 我 們 對 自 己 擁 有 的 總 是 逝 去 後 才
知 珍 貴 。 亡 羊 補 牢 , 真 的 未 晚 嗎 ? 就 算 未 晚 也 是 對
人 來 講 , 對 羊 呢 ? 我 們 那 些 被 拋 棄 了 的 珍 貴 文 化 ,
人 文 禮 儀 , 那 份 被 歧 視 的 敬 天 知 命 之 坦 蕩 、 俯 仰 天
地 之 胸 襟 、 篤 信 神 祗 之 恭 誠 , 還 有 被 輕 視 的 諄 諄 呼
喚 , 希 望 在 生 命 的 道 路 上 隨 波 逐 流 走 遠 的 人 們 能 適
時 停 下 汲 汲 營 營 的 生 活 , 有 機 會 聽 得 見 。
這 一 期 品 位 帶 領 讀 者 欣 賞 自 然 的 美 麗 、 體 驗 時 光 的

『 奢 侈 品 』 一 詞 如 今 變 成 商 家 吸 引 眼 球 的 術 語 成 千 上 萬 次 地 映 入
人 眼 簾 , 於 是 大 量 的 奢 侈 品 淡 化 成 一 個 浮 誇 的 炫 富 符 號 , 深 層 面
的 意 義 就 這 麼 被 同 時 『 消 費 』 掉 了 。 其 實 , 又 哪 裏 能 怪 消 費 者 ,
大 家 都 是 見 了 太 多 『 不 認 真 放 羊 的 孩 子 』、 聽 太 多 次 『 狼 來 了 』
的 人 。

The company never turned away from its original values, the
carefully researched material, the ancient craftsmanship and
management spirit have been transmitted through six generations
during the last few centuries. In the nineteenth century,
the Loro Piana family from the little town of Trivero were already
known for their business in wool fabric. In 1924, Pietro
Loro Piana started his own business apart from the family,
founding a brand new company that could keep up with the
rapid changing times. It was based in Quarona, and to this day,
it is still the headquarters of Loro Piana as we know it. In 1941,
Franco Loro Piana, Pietro’s grandson took the leadership of the
company. After WWII, he seized the fashion market to rapidly
develop the brand and make Loro Piana the leader in wool fabrics
for men and women. In the 70’s, the company was handed
over to Sergio and Pier Luigi Loro Piana,
the brothers – joint CEOs used
to act alternately as chairman every
three years. In 2013, the company
joined the LVMH group, and after
Sergio Loro Piana passed away, Pier
Luigi Loro Piana became the deputy
chairman, Antoine Arnault the
President, and Matthieu Brisset the
CEO.

yet infinitely detailed, this kind of spirit transpires through every
aspect of the company, from products and communication

To fulfill their promise of providing the clients with the
best woolen fabrics, Loro Piana’s footsteps are all around
the world. They also have a direct presence in all the major
markets where raw materials originate. The natural fibers
discovered by Loro Piana are priceless treasures, like vicuna
from Peru and Argentina, cashmere and baby cashmere from
Mongolia and China, merino wool from Australia and New
Zealand, etc.
Vicuna is considered the queen of the Andes, its hair is qualified
as fibers from the gods, once used as royal tributes by the Incas.
It has an average thickness of 12.5 to 13 microns. Each year, an
adult vicuna can only produce 120g fiber usable for weaving. For
but they are sheared every two years – 250 gr gross every two
years – 125 gross yearly, this species nearly went extinct: consistent
poaching left less than 5000 individuals. In order to continue
protecting this wildlife, in 2008 Loro Piana also built a private
natural reserve in Peru, succeeding in preserving them to reproduce
and quietly live on. Today, local vicunas are over 180 000.

Baby cashmere is obtained from the underfleece of the
Hircus goat foals, with an average thickness of 13 to 13.5
microns, light and soft. It can only be harvested on a goat
combed between 3 and 12 months old, which cannot supply
more than 30 to 40 g. After 10 years of efforts, Loro Piana
has convinced Mongolian and Chinese farmers not to mix
baby goats’ highly valuable wool with the rest of the hairs
from adults, thus granting the world with a unique chance
to enjoy this rare and precious material.
Australia and New Zealand are well-known for their Merino
wool. Each year, the productions of both countries are carefully
sorted and sold at auction. Each time, Loro Piana purchases the
finest lots, especially the topmost quality 1PP and the 30 to 50
best bales among the 3 million for sale. One bale among the
finest is rewarded with the title of “World Record Bale” for its
exceptional fineness. Loro Piana regularly purchases this bale.
Working together with Australian and New Zealand farmers
for a long time, establishing trading partnerships, giving
positive feedback and supporting their work, Loro Piana
encourages them to keep producing the finest Merino
wool. Without this support, the farmers would very likely

The Gift of Kings® originates from an eighteenth century
European tradition. The King of Spain used to give the
finest Merino wool as a present to the Saxon elector and
the reigning families in France, England and Holland. Loro
Piana made this regal symbol into a series of men’s outerwear,
with neutral scarves and elegant jumpers, presenting
the true connoisseurs with a unique gift. The Gift of Kings®
series uses the world’s best quality Merino wool, thinner
than regular Merino with no more than 12 microns in diameter.
The result is an infinitely soft and delicate material,
highly breathable yet thermo-regulating, it is hard-wearing,
doesn’t wrinkle, and feels like a second skin. This series
has to be pre-ordered, and only 2000 pieces are produced,
each one resulting from top quality material crafted by
the best.
With this profusion of fine quality fibers, Loro Piana
still hasn’t lost its passion for discovery. They also introduced
a new finding: The Loro Piana Lotus Flower®, the
fiber of lotus flower from Myanmar. Should one compare
a textile company to a thriving tree, then collecting
raw material would no doubt be its roots, the key

haute joaillerie watch which is the result of 1,440 hours
of work by highly skilled designers and makers. 7,848
snow-set diamonds define the sharp, clean-cut geometrics
of the bracelet, which is expertly engineered as
a unique piece of 56 dazzling pyramid facets. Beneath
a secret sliding cover, the cool beauty of the dial is
revealed : set with a further 300 diamonds. Taking
inspiration from the graphic design codes of the punk
era, a rhythmical pattern of pyramid studs constructs
a new Haute Joaillerie design language that resonates
with creative energy.

At the end of the 19th century, the so-called
“trembling setting” technique was introduced,
enabling Cartier to let its diamonds move freely
without restraint. Today, this has inspired Cartier’s
ground-breaking Vibrating Setting. This magical
version of the Ballon Bleu de Cartier watch adapts
this ingenious invisible system which brings precious
stones to life and makes the diamonds gleam and
pulsate like the beating of a heart. It carries calibre
430 MC, mechanical movement with manual winding.
42mm case and set in rhodium-finish 18-carat white
gold set with brilliant-cut diamonds. Water-resistant

Created in 1935, Cadenas is a symbol of sentimental attachment. The watch is
said to have been inspired – like the Zip necklace – by the Duchess of Windsor.
In 2015, Van Cleef & Arpels reveals a new treasure of Cadenas watches – true
icons among the jewels of the Maison. Adorned in sumptuous finery, the Cadenas
Pavée watch sparkles with diamonds in serti neige style. Its clasp offers increased
security. Two small ceramic beads inside the clasp provide a more resistant fastening.
The hidden, polished side of the clasp lends itself to a discrete personalized
engraving. The upper surface of the case is adorned with princess-cut diamonds,
while round diamonds – in serti neige style setting – illuminate the case, clasp
and dial. It carries a quartz movement and is paired with a snake chain bracelet in
white gold. Also available in a pink gold.

At the occasion of its 260th anniversary celebrations, the Manufacture Vacheron
Constantin is enriching its Métiers d’Art collection with two timepieces distinguished
by movements that are entirely hand-engraved in keeping with classic ornamental
watchmaking traditions. The plates and bridges of the hand-wound 4400 calibers
are adorned with delicate scrolling motifs and arabesques which pay tribute to the
acanthus leaf. 21 jewels set in the caliber. Diameter 39mm. Approximately 65 hours of

the iconic Bugatti 370 model, and its transverse tubular movement, as its basis. The Bugatti Mythe is where industry meets the craftsmanship

The 47-mm-diameter case surrounds a three-dimensional dial that positively invites admiring scrutiny. The 281 components that comprise

In the movie "Interstellar", Nolan depicts a five
dimension world where time can be controlled. "Time"
takes the shape of huge book cases or gigantic looms, it
can be searched, skimmed through or shifted. This kind
of imagination, as much as it gives viewers great visual
effect, also holds a part of specualtion. In theory, the
life forms in that world are close to gods for humans,
so they also should have a greater expectation for the
beauty around them.
When time can cris-cross until it becomes a visible
network, then maybe it can be woven into a variety of
shapes? We could even wildly guess, if a six dimension
world could be perceived by our senses, there could be a
time of happiness, with bright colours, delicate textures
and light material. Times of gravity would bear dark
colours, sharp textures, and strong material. Spirit and
matter are born as one, the continuation of life and
the prosperity and downfall of history no longer only
rely on oral transmission, memory can be transported
or given at will... Of course, there are no such thing as
watches there, so they have become a “heirloom” of our
four dimension world, with beings unable to influence
time. Thinking thus, we can’t help but feel that the
meeting of a “Four dimension heirloom” and “ Time
loom” has suddenly become interesting. So let’s have
this imaginary experience!

Treasure trails of Chantilly,
riding past seasons and flavors
滄 桑 沉 浮 遺 寶 跡 走 馬 春 秋 品 真 味
If there was one place in the outskirts of Paris that deserves
a visit, it is Chantilly. There, fragrances come
from the grass, the trees and the flowers, the air is fresh,
the environment calm and natural. The castle is located
in the north of Paris, first built in the Middle-Ages on
a large rock in the middle of the marshes. The Marshal
at the time of Francois I, the Duke Anne de Montmorency
renovated the medieval castle into Renaissance style.
After his granddaughter married the Prince de Condé, it
also became the stronghold of the renowned Condé family.
The Princes of Condé are the closest kinsmen of the royal
family (Prince de sang). The most famous of them is “le
Grand Condé “, cousin of Louis XIV, his image can be seen
everywhere in the castle. In spite of his numerous martial
victories, because of his betrayal during the Fronde, Louis
XIV banished him away from Versailles to settle in Chantilly.
Later, to make amends to the king, he invited him and 3000
court members from Versailles for a party that lasted for
three days. In preparation for the banquet, the maître d’hôtel
Vatel did not sleep for twelve days running. For the last
day of the feast, on a Friday where Christian tradition dictated
that fish must be served, the fish delivery had still not
arrived. Unable to stand the pressure of failing the Prince,
Vatel committed suicide with his own sword. However, the
fish arrived an hour later, which is why future generations
consider: until the last moment there is still hope! As the
result of this banquet, the two cousins buried the hatchet
and rebuilt kind relations.
The galery of the castle holds a gigantic painting, ordered after
Grand Condé’s death by his son. It is entitled “Repentance” (Le
repentir), representing “Grand Condé”, stopping with one hand
Pheme (goddess symbolizing fame and renown) from proclaiming
his rebellious actions against the King, with the other hand he
urges another Pheme to express his repentance. On the bottom
left, the muse of History tore shameful pages off his book, sitting
on the back of Saturn, god of Time.
After the French Revolution in 1799, the extension of the
castle has been razed to the ground, the family collection has
been confiscated. The last descendant of the Condé family was
killed by Napoleon, leaving no heir, thus the heritage has been
passed to the Prince’s nephew and godson Henri d’Orléans,
Duc d’Aumale, who was only eight years old when he

一 定 要 吃 魚 的 星 期 五 , 卻 遲 遲 沒 運 來 魚 , 瓦 德 勒 感 到 壓 力 巨 大 、
沒 法 向 親 王 交 代 , 就 拔 劍 自 殺 了 。 遺 憾 的 是 魚 在 他 自 殺 後 一 個 小

inherited it. His father was the last French king
Louis-Philippe, from the House of Orléans who
gave the determining vote for the death of Louis
XVI. So, this family has issues with Napoleon supporters,
republicans, and royalists.
In 1848, another revolution started, the Duc d’Aumale
with his Royal father and the whole family fled to England.
While overseas, he bought back a great part of the family’s
collections. Twenty-three years later (1871), after his wife
and children died in England, the Duc d’Aumale returned
to France alone, and reconstructed Chantilly castle. Since
he had no direct descendants, and because he had personally
experienced the many changes in the country and in
his family, he donated everything to the Institut de France
prior to his death. The only condition was that they are not
to make any changes in the interior display and never lend
anything of the collection, so people can only look at it in
site. The castle we can visit today is in the exact state of origin.
Here is the most well-furnished private library, with a
collection of eighteen thousand books, dating back as far as
the tenth century. The Condé museum also owns the most
important collection of classical paintings in France after
the Louvre.

The visitors often wonder why so many paintings are hung so closely all over the
wall, and whether it is by lack of room. In fact, in the 19th century, paintings
were exposed in this way inside one’s house. Therefore, what you can see there, is
more exactly like a 19th interior display than a museum.
The Chantilly four-star hotel near Mont Royal,
has the standing of a classic castle, surrounded by
greenery. With the arrival of spring, the chef Franck
Charpentier especially recommends his original
four-step fresh carp. First step: he marinates the
fish with salt, then washes it. Step two: the fish is
smoked with orange peel, grapefruit peel, lemon
peel mixed with Russian tea for 15 minutes, then
he leaves it overnight in the refrigerator. Third step:
the next day he roasts the carp on a grill, then he
steams it at low temperature (40°C). Step 4: he grills

The gallery La Tribune gathers Renaissance works by masters like Botticelli, Bellucci,
Fra Angelico, Titian, by 17th and 18th century painters Nicolas Poussin
and Pierre Mignard, French neoclassical painter Jean-Auguste-Dominique Ingres,
by nineteenth century romantics like Delacroix, Delaroche, Scheffer, etc.
The precious collection covers all of the five walls, telling the complete history
of Western classical art. The museum’s greatest treasures are three paintings by
Raphael, one of them was only discovered in 1976. In fact, it has been in the museum
for a long time, but has been considered as one of the 200 copies.
Upscale leisure: polo, golf and gastronomy
La Table du Connétable is the Michelin two-star restaurant of the five-star hotel
“Auberge du Jeu de paume”, right at the castle’s gate. The chef Arnaud Faye prepares
very delicate dishes, he often changes the flavor to accommodate to the taste
of the guests. His specialty is partridge sprinkled with truffle pieces, smooth taste
and tender texture. There is also grilled foie gras with parsnip, the overall flavor is
rich and harmonic, extremely fresh and tasty. Another dish is scallops with broccoli,
fresh to the taste, colourful like a garden in Spring: there isn’t too much sauce
on the plate, but seasoning steeped deep into the scallops, and the broccoli turns

it in a frying pan with salted butter. After these four steps,
the carp is tender inside and crispy outside, with seasoning
well impregnated, one can taste hazelnut butter flavor
and the taste of smoked fish. This forty-eight hours cooking
technique for the four step fresh carp is the exclusive recipe
of the chef Franck Charpentier, accompanied by refreshing
and fragrant raw spinach sprouts, April and May are the best
time to taste it.
The four-star hotel Dolce Chantilly, has a golf course. In the
morning, breathing the fresh air, listening to the birds chirping,
facing the light morning breeze, Golf is a cosy and relaxed activity
to play with family, friends or business partners.
Behind the Dolce Chantilly hotel, you find the most famous
polo school in France - L’Ecole de Polo du Domaine
de Chantilly. Courses are given for all levels. For beginners,
they start with an indoor session where the rules of the
game are explained, and then they would stand outside to
practice hitting a ball with short bats, they could also use
a mechanical horse to practice swinging movements, or
experience it on horseback. You can also experience a real
polo game on a Segway vehicle.
Every year, two race events take place in Chantilly. The Grand
Prix de Diane (goddess of hunting), sometimes referred to as
the “French Oaks”, is held around the 14th or 15th June, it
honors the best three-year old filly. It is the gathering place of
chic and distinction, especially with the elegance contest rewarding
the lady with the best hat and look. Another race, the
Prix du Jockey-Club takes place two weeks before, on the first
Sunday of June. It honors the best three-year-old colt.
What are the places to visit in the town of
Chantilly?
Speaking of Segway electric vehicles, with its 20 kilometers
per hour, it is a very easy to learn way of transportation,
you can take the road in five minutes. With your
two feet firmly set in the car, without effort, you only
have to lean slightly forward for the Segway to start
sliding smoothly, even going uphill it is not difficult.
Muddy road, or bumpy fields all feel like flat road. Along
the way, Chantilly castle, the racecourse, the horses, the
scenery, you can film everything with one hand without
getting off the vehicle. You must be careful to keep both
feet on it though, if you lift one foot by excess of confidence,
a blue-light alarm will beep.
Walking through the city of Chantilly, one can also
wander towards the museum of Chantilly Lace. In the
seventeenth century, the handmade lace of Chantilly
were exclusively dedicated to royal use. In the three
galleries of this museum, the refined and lively works
of yore are exposed and a lacemaker would provide a
live demonstration.
Pavillon de Manse shelters hydraulic works designed by
royal gardener Le Nôtre. Unlike the water works in the
gardens of other castles, it used two water sources, from
the river and from the well, providing fountains and
waterfalls of the garden with a continuous flow. Nowadays
the machine is used as an example of seventeenth
century engineering, exposing principles of hydraulic
equipment.
A trip to Chantilly offers such a variety of activities,
people can go to relax, to enjoy the scenery or the art
collection, watching horse races or techniques, play golf,
try polo, drive a Segway ... Making it worthwhile for visitors
to plan a one to three days visit, which could still
be insufficient to experience everything!

Hotel Royal Saint-Honoré, a four-star hotel built in 1924, is called a “Boutique Hotel”, its predecessor
was Hotel Noailles, built in 1774, in which the Marquis de Lafayette and his wife Mademoiselle
Noailles used to live. Like in a novel, the arranged marriage evolved into a truly loving couple.
In the nineties, the hotel has been completely renovated and officially opened in 1993, the year in
which M. Herpeux arrived as the reception manager. After gaining experiences in various hotels of
the group around the world, he was eventually hired after the retired manager recommended him to
become his “successor.”
What is a typical day as a hotel manager? At eight o’clock, Mr. Herpeux enters the hotel greeting
every employee he sees. The hotel service team is mostly composed of employees who have been
there for decades, they are like a family, they are also quite close to their oldest clients. Located in a
shopping area, near the Opera and the Louvre, the majority of the guests are foreign, mostly Americans
and Japanese. There are not many children, so it is very quiet.

After greetings, he starts on a routine inspection by checking the results and occupancy records of
the night before and those of the day to come. For example, the previous day’s revenue, he makes
sure that the old guests are well placed in the room they are accustomed to, etc. Then he follows by a
commercial meeting about the hotel’s situation.
Once the meeting is over, he would proceed to check the hygiene of the rooms. He very carefully
inspects every details of the room, his requirement about cleanliness is almost obsessive, especially
for the bathrooms. Even the slightest dust between tiles would make him call the cleaning staff to
clean up again.Before knowing the guest’s tastes, the room must not leave any kind of smell, be it
cigarette smoke or perfume. Some people may be overly sensitive about some smells, no perfume
would be sprayed in the room, nor any trace of smoke left.
Like every day, everything is going normally, in an orderly manner and in a way he is satisfied with.
This hotel is under his supervision, clean, with excellent services, greeting old guests coming back
and waiting for the new guests to explore.

一 、 以 信 為 本
誠 信 經 營 , 是 每 一 個 成 功 「 儒 商 」 的 不 二 法 則 。 中 國
近 代 著 名 的 「 紅 頂 商 人 」 胡 雪 巖 曾 說 :「 信 用 是 人 的 第 二
生 命 。」 那 他 又 是 如 何 以 信 用 成 就 了 自 己 富 甲 天 下 的 商 業
帝 國 ? 所 有 商 家 都 知 曉 的 誠 信 道 理 , 在 他 手 中 又 煥 發 出 了
怎 樣 不 同 尋 常 的 力 量 呢 ?
胡 雪 巖 的 「 阜 康 錢 莊 」 剛 開 業 不 久 時 , 來 了 一 位 特 殊
的 客 人 。 這 位 軍 官 名 叫 羅 尚 德 , 在 戰 場 上 拚 殺 了 十 三 年 ,
辛 辛 苦 苦 存 下 來 一 萬 二 千 兩 銀 子 的 俸 銀 。 最 近 , 他 接 到 命
令 要 到 江 蘇 打 仗 。 行 軍 途 中 隨 身 攜 帶 一 筆 巨 款 很 不 方 便 ,
可 兵 荒 馬 亂 一 時 又 找 不 到 可 靠 的 人 去 託 付 。 情 急 之 下 他 來
到 了 「 阜 康 錢 莊 」, 想 把 錢 存 在 這 裏 , 心 中 又 不 禁 疑 慮 ,
自 己 若 是 不 幸 戰 死 沙 場 , 錢 莊 是 不 是 會 私 吞 了 這 筆 錢 。
為 了 消 除 羅 尚 德 的 疑 慮 , 胡 雪 巖 請 來 鄉 紳 作 證 , 又 讓
賬 房 寫 了 一 張 存 據 給 他 。 羅 尚 德 本 來 只 想 找 個 地 方 把 錢 存
Traditional Confucian values — “benevolence,
righteousness, propriety, wisdom, and trust”
— sound like rather staid notions, more suitable
for a refined scholar of literature than a go-go
entrepreneur. But cases abound through Chinese
history of Confucian businessmen, who built vast
commercial empires relying on those ideas.
Take the case of Hu Xueyan, a banker who went out of
his way to be fair and to make good on a commitment,
contrary to the conventions of the time.
Right makes might
“Credibility is the second life of a man,” Hu once
said, and demonstrated it as owner and operator of
Fookang Bank. During the Qing dynasty, a man named
Luo Shangde, who was often called to battle, needed
a place to store the 12,000 taels of silver he had accumulated
from a lifetime of military service. He was
preparing for a new campaign in Jiangsu, and couldn’t
take the coins with him, nor could he find a reliable
person during wartime to leave them with. He eventually
happened across Fookang Bank.
Hu, the owner of the bank, promised Luo that that
he would not keep the money if Luo died in battle,

When fire ravaged a village one day during the Song Dynasty, Pei, a Chinese shopkeeper who followed Confucian principles, let his own shop burn. Instead of saving it,
he left straight away and bought building materials from a nearby town, supplies that his neighbours would soon need. He was heartily welcomed when he returned,
and profit boomeranged back to him, even though his only thought was for others.
下 , 並 未 想 要 利 息 , 胡 雪 巖 卻 堅 持 按 照 三 年 三 千 兩 的 利 息 付
他 , 並 保 證 如 果 羅 尚 德 陣 亡 , 他 會 把 連 本 帶 息 一 萬 五 千 兩 銀 子
寄 到 他 家 中 。 喜 出 望 外 的 羅 尚 德 揣 上 存 據 就 奔 赴 戰 場 。 誰 知 ,
他 這 次 作 戰 負 了 重 傷 。 臨 終 前 , 羅 尚 德 托 付 兩 位 老 鄉 前 往 「 阜
康 錢 莊 」 取 錢 , 帶 回 給 他 家 鄉 的 親 人 。
可 是 , 羅 尚 德 沒 來 得 及 把 存 據 交 給 他 們 , 這 兩 位 老 鄉 只 得
抱 著 試 試 看 的 想 法 , 兩 手 空 空 來 到 錢 莊 要 錢 。 店 面 夥 計 自 然 不
肯 , 將 事 情 稟 告 給 了 胡 雪 巖 。 胡 雪 巖 在 查 明 了 兩 人 的 身 份 後 ,
毫 不 猶 豫 地 將 連 本 帶 息 共 一 萬 五 千 兩 銀 子 , 一 分 不 少 地 付 給 了
兩 人 。 這 事 情 很 快 在 軍 隊 中 不 脛 而 走 , 官 兵 們 紛 紛 將 錢 存 入 「
阜 康 錢 莊 」, 錢 莊 得 以 飛 速 發 展 , 很 快 成 為 分 號 遍 佈 大 江 南 北
的 , 最 具 實 力 的 錢 莊 。
此 事 後 來 流 傳 甚 廣 , 被 認 為 是 胡 雪 巖 日 後 成 為 商 業 巨 賈 的
關 鍵 點 之 一 。 胡 雪 巖 不 因 顧 客 的 變 故 而 違 背 自 己 的 承 諾 , 他 由
此 建 立 的 信 用 , 恰 是 開 設 錢 莊 的 金 字 招 牌 。
and insisted on paying Luo 3,000 taels of interest
over three years. During battle, Luo’s worst fear
came true — he was fatally wounded. In his will, he
had asked friends from his hometown to go to the
Fookang bank and retrieve the money for his family.
They arrived at the bank without a receipt and
were quickly refused. But Hu heard about the matter,
and began making enquiries. After confirming
that the men were who they said they were, he released
the15,000 taels without hesitation. The news
spread like wildfire, and the Fookang Bank became
the most sought-after bank in the country, because
many other financiers would have simply kept the
money after the customer died. Fookang Bank
branches sprang up across China.

二 、 知 人 善 任
儒 商 中 晉 商 的 代 表 人 物 喬 致 庸 , 資 產 曾 達 到 數 千 萬 兩 白
銀 。 清 朝 末 年 , 他 名 下 的 票 號 、 錢 莊 、 商 埠 、 碼 頭 遍 佈 全
國 。 後 修 建 了 規 模 龐 大 的 「 喬 家 大 院 」 做 為 家 宅 , 至 今 保 存
完 好 , 是 著 名 的 山 西 民 居 代 表 建 築 。 作 為 成 功 的 儒 商 , 喬 致
庸 的 經 商 理 念 是 一 信 、 二 義 、 三 利 , 即 以 信 譽 徠 客 , 以 義 待
人 , 利 取 正 途 。 而 他 取 得 成 功 的 另 一 個 要 素 , 是 特 別 善 於 用
人 。
喬 致 庸 用 人 不 拘 一 格 , 唯 才 是 舉 , 不 論 出 身 。 馬 公 甫 本
是 「 復 盛 公 字 號 」 的 小 夥 計 , 喬 致 庸 識 他 是 個 人 才 。 在 大 掌
櫃 告 老 後 , 讓 他 從 小 夥 計 一 躍 當 上 了 復 盛 公 的 大 掌 櫃 。 馬 荀
本 是 「 復 盛 西 字 號 」 下 屬 糧 店 裏 的 小 掌 櫃 , 連 字 都 不 認 識 ,
但 他 管 理 的 糧 店 一 直 獲 利 頗 豐 。 喬 致 庸 就 給 了 他 一 筆 本 錢 ,
讓 他 的 糧 店 獨 立 經 營 , 後 來 果 然 盈 利 不 少 。
平 遙 「 蔚 長 厚 票 號 」 福 州 分 莊 的 經 理 閻 維 藩 和 年 輕 的 武
官 恩 壽 交 情 很 好 , 對 他 很 信 任 , 曾 貸 給 他 十 萬 兩 白 銀 。 總 號
知 道 了 這 件 事 后 , 嚴 厲 斥 責 閻 維 藩 自 作 主 張 放 貸 。 然 而 時 隔
不 久 , 恩 壽 就 陞 遷 至 了 漢 口 將 軍 , 不 僅 沒 幾 年 便 還 清 了 欠

轎 , 自 己 騎 馬 跟 隨 左 右 , 並 說 這 是 父 親 特 地 囑 咐 的 。 這 更 讓
閻 維 藩 受 寵 若 驚 , 謙 讓 了 半 天 , 始 終 不 肯 上 轎 。 最 後 只 好 在
八 抬 大 轎 內 放 上 閻 維 藩 的 衣 帽 , 算 是 代 他 坐 轎 , 二 人 並 馬 而
行 。
來 到 喬 家 , 閻 維 藩 受 到 喬 致 庸 的 盛 情 款 待 。 喬 致 庸 見 閻
維 藩 只 有 三 十 六 歲 , 卻 舉 止 有 度 、 精 明 穩 健 、 精 通 業 務 , 心
中 更 是 喜 愛 讚 歎 。 當 即 提 出 聘 請 閻 維 藩 出 任 喬 家 「 大 德 恆 票
號 」 經 理 。 此 時 , 對 比 在 「 蔚 長 厚 票 號 」 的 遭 遇 , 閻 維 藩 深
深 感 到 喬 家 對 他 的 器 重 , 也 當 場 表 示 願 為 喬 家 效 力 。 後 來 閻
維 藩 主 持 「 大 德 恆 票 號 」 二 十 六 年 , 票 號 日 益 興 隆 , 後 來 居
上 成 為 全 國 最 具 競 爭 力 的 票 號 之 一 。
三 、 靈 活 機 變
如 今 , 隨 著 金 融 危 機 , 次 貸 危 機 等 大 經 濟 環 境 的 動 盪 頻
發 , 如 何 在 風 雲 多 變 的 商 場 中 迴 避 風 險 , 是 許 多 商 人 最 關
心 的 問 題 。 然 而 , 老 子 曾 說 過 :「 禍 兮 福 之 所 倚 , 福 兮 禍
之 所 伏 」, 即 好 事 和 壞 事 是 可 以 互 相 轉 化 的 , 在 一 定 的 條
件 下 , 禍 也 能 變 成 福 。
據 《 夷 堅 志 》 記 載 , 宋 朝 年 間 有 一 次 臨 安 城 失 火 , 一
位 裴 姓 商 人 的 店 舖 也 隨 之 起 火 。 但 他 不 去 救 火 , 而 是 帶 上
銀 兩 出 城 採 購 竹 木 磚 瓦 等 建 築 材 料 。 火 災 過 後 , 許 多 房 屋
店 舖 面 臨 重 建 , 市 場 上 建 築 材 料 緊 缺 。 裴 姓 商 人 賺 得 錢 數
十 倍 於 他 店 舖 的 價 值 , 這 種 敏 銳 的 洞 察 力 和 準 確 的 判 斷 力

清 末 民 族 工 商 業 鉅 子 葉 澄 衷 , 是 寧 波 商 團 的 先 驅 , 也

災 、 瘟 疫 流 行 、 市 場 一 片 混 亂 。 後 又 因 蠶 絲 價 格 大 跌 , 引
發 了 嚴 重 的 金 融 風 暴 , 大 量 商 埠 、 企 業 倒 閉 。 就 連 財 大 氣
粗 的 「 紅 頂 商 人 」 胡 雪 巖 在 上 海 開 設 的 錢 莊 也 未 能 倖 免 。
僅 僅 一 個 月 的 時 間 , 六 七 成 的 上 海 錢 莊 宣 告 歇 業 。 由 此 又
累 及 無 數 的 商 行 、 小 型 企 業 和 手 工 作 坊 。
憑 藉 自 己 的 敏 銳 , 葉 澄 衷 搶 先 抽 回 了 在 銀 行 和 錢 莊 的
存 款 , 又 火 速 催 討 客 戶 欠 的 貨 款 , 盡 一 切 辦 法 回 籠 資 金 。
這 時 , 美 孚 石 油 公 司 將 大 量 煤 油 運 進 上 海 , 希 望 以 增 加 銷
售 量 來 彌 補 1866 年 倫 敦 金 融 風 暴 帶 來 的 損 失 。 葉 澄 衷 抓 住
時 機 , 獲 得 了 美 孚 石 油 在 華 的 獨 家 經 銷 權 。 他 調 整 經 營 方

去 煮 30 分 , 再 放 入 其 餘 食 材 , 煮 熟 後 熄 火 , 最
後 用 冰 糖 調 味 。

煮 乾 蓮 子 ( 或 豆 類 ) 不 需 要 泡 水 , 洗 淨 後
立 即 煮 才 會 鬆 軟 , 這 是 因 為 種 子 類 食 物 遇 到 水
會 活 化 , 泡 水 反 而 不 容 易 煮 爛 。 糖 會 讓 豆 類 煮

delicious medicinal dessert heralds the dawn of spring.
White jelly mushroom reduces facial age spots, making
it a much-sought-after ingredient for beauty care. During
the Qing Dynasty, it was hailed as a must-eat delicacy for
the highest-ranking imperial concubines. It nourishes yin,
reduces inner fire, strengthens kidneys, and prevents hypertension
and arteriosclerosis.
The mildly sweet lotus seeds benefit qi and can heal
most common ailments, while goji berries are a panacea
for kidneys, liver, and eye ailments. Also known as a longevity
fruit, this superfood can calm nerves.
As winter thaws into spring, these three ingredients
— cooked with jiuniang and quail eggs — can alleviate
restlessness caused by seasonal changes. This delicacy
soothes frayed nerves, eases inner fire, and relieves
sleeplessness.
Ingredients (serves 2):
3 cups water (700ml)
⅓ cup lotus seeds (40g)
0.35 oz (dry) white jelly mushroom (10g), or 1 cup (wet)
1 Tbsp goji berries (6g)
1 cup jiuniang (250g)
8 quail eggs, hard-boiled
Crystal or rock sugar
Directions:
1.Soak jelly mushroom in water for 20 minutes. Discard
water and soak again.
2.Remove stalk and cut into pieces.
3.Boil water, add jelly mushroom and washed lotus seeds.
4.Simmer for 30 minutes.
5.Add goji berries, jiuniang, and eggs.
6.Remove from heat after all ingredients are cooked.
7.Add sugar to taste.
Tips:
Don’t pre-soak lotus seeds; soaked seeds cannot be
cooked soft. Add sugar last; it also prevents seeds from
being cooked soft.

TOL: DO you mean that one can easily identify
the ingredients when tasting the cake?
C.D: Not necessarily. I have two ways of working the ingredients.
One way is the essence, for example, for the
cake “Absolute lemon”, I wanted to work the essence
of the lemon. To do that, we worked on the lemon, the
juice, the zest, we were working a lot on the cooking.
That is the first way. The otherway can be an overall
work. For instance, one of the iconic creations of the
house is the dessert “Kashmir”, it has this global note,
like a perfume, the saffron is blended with dates, oranges,
and vanilla, but what is interesting is the overall
note, which gives this special sensation.

TOL: What is the source of your inspiration for the
decorations and toppings?
CD: I’ve always thought decoration as the last step.
My inspiration comes from life. For example for the
Green Absinthe cake, in spring in the morning near my
grandparents and my great-grand parents’house, to go
to the stream below the domain, there is a path where
the scent of wild mint and many wild plants emerges. In
addition to all of that, I wanted to transcribe the sounds
and colors on it, to deliver fullness and appeasement. I
also added angelica, because it comes from my home.
When you bite in and taste it, it will make a sound,
which is very similar to the sound of someone walking
on grass. So, the design comes naturally: the color, the
taste and the sound. It’s something very simple: a few
chunks of angelica, some elder flowers, because there
are also many elders in my region! What I like is the
elegance of things, and not the overload.
TOL: What are the criteria of elegance according
to you?
CD: Simplicity, no unnecessary ado, beautiful curves, beautiful
colors. Something quite pure, something that needs to be
appetizing though.
TOL :In your cakes, we can see a lot of colors and it
is full of serenity.
C.D: Really? Actually, it was involuntary at first. One
morning at the end of January, with my team, we were
putting cakes on the shelves, then we took a step back
to see how it looked, there was an almost monochromatic
range: yellow, orange, darker orange, lighter orange,
bolder orange, it was still a uniform color range, so at the
beginning I thought it was a problem. I returned to the office
and I thought, this is not possible. Why do I have the
same color range there? Since I do not work the appearance
first, it was not a willing effect. Then I realized that it is
because I respected the seasons, so in January and February,
we have lemons, oranges, grape fruits, saffron, then
exotic fruits like mango, passion fruit, pineapple, all these
fruits are yellow or orange. I finally told myself this is not
so bad, we will accentuate it, we will keep working on these
monochrome ideas. In fact, people need sun in winter, so
nature provides us fruits that have the color of the sun, like
yellow, orange, they are incredibly lively! I’ve realized that
it is very coherent throughout the year. It means that in
spring, it is very energetic, that’s when the first wild mints
arrive, the rhubarb, angelica, lime. So nature brings atone
to spring: green.
Nowadays, everybody wants answers immediately, and
nature stops us, there is a rhythm of season, there is a
rhythm of nature, there is nothing to do about it!
To make an apple chausson (pie), it takes 7 days. Not because
there are days of rest, it really needs 7 days during
which the dough is spread, extended, folded, swept,
turned, everyday there is a fully manual operation in order
to get this extremely layered and crispy dough. I don’t
know how others make it, at least this is the way I work.
The true luxury is the beauty of the things and the time we
take to make them.
TOL : In your shop, I saw an uncommon French
toast.
C.D: I like things that are a little more gourmet, so I make
it differently. I cut brioche into cubes, then soak them in

a crème brûlée mixture, with cream and vanilla, then I shape
them and cook them for about forty minutes to get them well
colored and very soft. Children love it. It’s funny, because I
think it’s a taste that will remain in their memory, our French
toasts might be to them like the madeleine was to Proust.
TOL: For you, what is the quality that makes a good
patisserie chef?
C.D: Sincerity! This is the first thing. It is doing this job
with a lot of heart, and a willingness to share a pleasure. In
other words, doing with generosity, benevolence and care!
Without sincerity there is no soul, in the professions of arts
and craft, it is this additional soul that always makes the
difference.
Recently, I got this wooden ball. It is a beautiful object, a
game called “Boulingrin” that my mother gave me. It reminds
me that “life is a game”. I also would like to have
this “vanitas” painting, it’s a skull on a table, (for example
in the Vanitas by Philippe de Champaigne). Everything is
vain, whatever happens, we know the end. We do a lot of
things out of vanity, it is what often guides us. So for me,
it is a call to order: be careful, all is vanity, you must keepyour
safe-control.

Debauve & Gallais the royal chocolate supplier since 1800. Standing in front of the store we can feel the traces of
history, the decoration inside is also rather regal. The shop provides more than 200 kinds of chocolate; each of them
has a history. The founder Sulpice Debauve was the pharmacist of King Louis XVI and had to meet the expectations
of Queen Marie Antoinette • Pioneer of the solid chocolate - Les
Pistoles de Marie-Antoinette are said to help with the Queen’s
migraines; as for the fleur-de-lys chocolates, they were created for
the coronation ceremony of Charles X; as early as 1825 they had
already invented the now popular pepper Ginger chocolate. People
mainly come here to have the opportunity to taste chocolates that
were developed for royalty.

Nearby the Place Vendôme, on Saint-Honoré Street, there is a very unique
hot chocolate at Jean-Paul Hévin’s. When the oyster hot chocolate is
served, neither a little spoon nor any sugar are provided. Indeed, once you
take a sip, you understand that nothing more is needed. Oysters are frozen
and fragmented at high-speed, then reduced to a creamy mixture according
to a secret recipe, poured in the hot chocolate, in short, the result is
indescribably delicious, very delicate, a hint of sea flavor, the flavors of
chocolate and oysters enhance each other, with just the right combination
of salty and sweet flavours, warm yet very refreshing, leaving a fragrant
after-taste.
The store also sells a box of four kinds of cheese-filled chocolate, recommended
to serve with Jura wine as appetizers. The first bite gives an unexpected
feeling, a hint of cheese, no choking smell, but is very gently melted
with the chocolate, leaving only the best memory of the cheese.

On the Pasteur Street, a shop called “Cakes and bread”, a very straightforward name, offers very delicate
desserts, eating them or even just watching them will make you feel very happy. Here the snacks
are mainly made of fruits, in spring you will see green pastries, whereas in the cold winter, you will
see warm orange cakes. The owner Claire Damon said that the color was not a deliberate choice, but
given by nature, she just selected each color in accordance with the seasons. One of the star products
is the cake Kashmir, a gentle and rich taste, a unique flavor, the taste could linger for 3 days.

Paris Art Fair 象 往 年 一 樣 於 3 月 26 到 29 日 在
巴 黎 大 皇 宮 舉 行 。 本 次 展 會 有 來 自 二 十 多 個 國 家 的
一 百 四 十 個 藝 廊 參 加 , 負 責 人 是 Guillaume Piens 先 生 。 展 示
內 容 包 括 現 代 和 當 代 藝 術 作 品 , 設 計 及 攝 影 作 品 等 。
2015 巴 黎 藝 術 博 覽 會
在 藝 術 的 領 域 , 巴 黎 藝 術 博 覽 會 是 探 索 世 界 的 先 鋒 。 繼 中 國 以 後 , 今 年 的 巴
黎 藝 術 博 覽 會 特 邀 地 區 是 東 南 亞 、 新 加 坡 。 展 覽 作 品 中 外 國 作 品 占 51%, 很 多 是

Art Paris Art Fair 2015 as usual, is held from March 26th to 29th at the Grand
Palais. This exhibition features 140 galleries from more than 20 participating
countries and is headed by Mr. Guillaume Piens. The show introduces modern
and contemporary art, design work, photography and more.
In the field of art, Art Paris fair is the pioneer of exploration. After China last
year, this year’s guests of honor will be Southeast Asia and Singapore. Among
the works presented in the exhibition, 51% are foreign works; many of them
will be shown for the first time in France. Visitors will then feel the diversity and
vitality of the arts.
A part of the artworks has been selected by the specialist of Southeast Asia Ms.
Lola Lenzi, her distinctive style will let the visitors explore unfamiliar realms of
art. Southeast Asian works will be placed in the main hall. The Partners such as
Art Seasons Gallery, Chan Hampe Galleries, and Element Art Space will together
represent Singapore area. Visitors will feel like being transported in Casablanca,
Bangkok, Zurich, Singapore… and other places. Unlike previous editions, Art
Paris Art Fair 2015 also includes up to 30 solo exhibitions, reaching a world record.
This will allow the visitors to savor the depth and consistency of the artists’
work in better conditions.
The exhibition is divided into a number of galleries: the main exhibition area, the
“Promises” exhibition, the Artdesign district, the “Spring in Paris” VIP pavilion.
The participation of the Boisserée, German modern art gallery, and Plutschow,
modern artist from Zurich, give a new skin to the main exhibition. The “Promises”
exhibition is designed to stimulate a new generation of artists around the
world, introduced in 2013, it is a highly anticipated space, 12 galleries under five
years old will be set up for the first time. Regarding Artdesign district, this one
is to navigate at the uncertain boundary between design and modern art, for
the 4th year of the district’s creation, there will be a dozen galleries and editors
such as Sleek Design magazine. As for “Spring in Paris”, it will be devoted to local
artists, such as “Les clefs d’une passion” by Louis Vuitton Foundation.
Each year new ideas and new work visions are revealed thanks to a rigorous work
selection made by the fair. Although the exhibition is only held only a few days,
the Grand Palais is always a hotbed of activities, the art spirit of this exhibit is
more and more influential.
