September 2009 The World News® 31AnythingBut BlandChef Dave BlandWine 101Wine has become increasingly popularin the American lifestyle. In Europe,it is part of every meal and there is littlepomp and circumstance to it, they merelydrink it.Scientists believe that drinking oneglass of red wine per day for women andtwo glasses for men can lower the risk ofheart attack and even help to prevent inflammatorydisease.Although there is a lot of mystery andromance in the marketing of wine, hereare the facts:• Wine is fermented fruit juice.• Sugar plus yeast equals alcoholplus carbon dioxide.• Once fermented it transforms intocomplex flavors.• Through a technical process, wineis produced mostly the same way;although some wine is cheap andothers very costly. What Makes a Good Wine?• Good quality grapes or Vitis Vinifera, which is a European grapevariety where all fine wines derive.• A suitable growing location.• Farming expertise.• Favorable weather equals good orgreat wine; if all the planets align.Choosing a great wine without spendingtoo much can be challenging with allof the choices. Here are some tips to thinkabout when buying wine:• Use the web for advice or to buy.• Shop at Sam’s Club for incredibledeals.• Talk to the staff, they can let youknow of deals.• Know your budget and the occasion.• Look for sales but beware of greatsales; it could mean bad wine.• Look for lesser wines from a winery.• Buy a case if you love it; this willsave you money.Tasting Wine 101• Pour the wine allowing room inthe glass• Swirl the wine to allow it tobreathe• Use your nose to pick up aromas• Taste the wine with all of yourmouth• Breathe in air to add oxygen• Does the wine have finish?• Do you enjoy the wine? Here are six major varietals and theircharacteristics:Riesling is a light refreshing whitewine with a crisp acidity. Fruit aromasand flavors are subtle and with tree fruitof apples, peaches and citrus dependingon where it was grown. This wine pairswell with sushi and Chinese food.Sauvignon Blanc is a medium distinctivelyflavored wine with aromas of citrusfrom lemon to grapefruit. It grows well inCalifornia but best in New Zealand whereit has an earthier aroma. It has very littleoak. It goes well with seafood.Chardonnay is a full-bodied rich winewith a buttery, vanilla scent. Flavors canrange from pineapple and other tropicalfruit to tree fruit. This wine is oftenvery oaky and creamy. This wine is greatto drink alone or with chicken, pasta andanything with white cheese.Pinot Noir is a lighter delicate grapewith ripe cherry fruit. It is silky in themouth with some acidity. It has a nicesmoky nose with some earthiness likemushrooms with vanilla in the finish. This works well with lean steak, chicken, salmon and red pasta dishes.Merlot is a medium fuller bodied winewith aromas of plum, and dark berry. It leaves a velvety tannic finish on thetongue and goes well with spicy chickendishes, pork chops, pizza and filet mignon.Cabernet Sauvignon is an intensely flavoredwine with huge aroma of tobacco, leather and earth. It has jammy blackberriesin the fruit, black mission figs andcassis. You will note full velvet aroundthe tongue and cheek from the full tannins. This is why it ages so well. Thiswine is perfect with lamb, ribeye steak orgrilled veal chopsallows all members to meet other membersthey may not have met before. Well, this month you Windows usersmight want to check out the Mac Tip asit is not just for Macs but works equallywell for Windows PCs.It came about because at a recentQ&A session a member complained thatwhen she had many applications and/orfiles open some of them would disappearfrom her task bar! In reality, they weren’tactually gone, just not visible! When youhave several items open, the taskbar cannotalways display them all (the numberdepends on the resolution of your screen)so windows will “stack” similar items orfiles. They are still available but you haveto locate them yourself. Check out theMac Tip to see how easy it is to do!All meetings are held at 9 a.m. at theArbor Conference Center, Suites B and Con Tuesdays, Thursdays and Saturdays. Ifyou aren’t a member yet but want to seewhat we do, come on up and give us alook-see. This is because we all havevarious items that result in our not beingable to attend our club dinner sometimes. When we know if you are available toattend a dinner, you will be matched withone of the hosts for that month. Naturally,if you are a new member, you wouldautomatically be a guest and not a host. This is done in order for you to get a feelabout how things happen at the dinners.Normally, at any given dinner, sinceeach participating couple will be providingsome type of prepared dish, activitiesget underway around 6 p.m. Cocktail hourgets started with hors d’ oeuvres preparedand brought by one of the guests.(The framework of the club is built uponthe idea that no one-member couple willever have to prepare all components ofthe meal.) Following this, a salad, eitherprepared by another guest or the host,is served. The host will then serve themain meal, with an accompanying dish,if appropriate, another guest couple hasprepared that. Following the main meal, the dessert, prepared by another guestcouple is served. This always ends upwith everyone having a great meal withoutanyone needing to prepare the entireundertaking! Some members occasionally have“theme dinners.” We have had Irish American,Greek, Italian, Spanish and Germandinners, to name a few. Club hosts arefree to decide if they want to host a “themedinner” or have a traditional meal.Additionally, for the past few years,we have had all-hands member’s dinners. This is where one club member graciouslyvolunteers to invite all members to theirhome on a regularly scheduled dinnernight. Again, the same idea applies wherethe host member does not have the overwhelmingeffort of preparing the entiremeal. Each member couple is asked tobring either two hors d’ oeuvres or twodesserts.
