Dietetic Technology:<br />

Food Service Management Option<br />

ASSOCIATE IN APPLIED SCIENCE DEGREE<br />

Florissant Valley<br />

This <strong>program</strong> <strong>in</strong>cludes a variety of courses <strong>in</strong> food and<br />

nutrition sciences, foodservice systems management,<br />

communication and education. <strong>St</strong>udents complet<strong>in</strong>g the <strong>program</strong><br />

are eligible to sit for the national registration exam to become<br />

credentialed as a Dietetic Technician, Registered (DTR). Dietetic<br />

technicians <strong>in</strong> the food service management area work<br />

<strong>in</strong>dependently or <strong>in</strong> teams with registered dietitians <strong>in</strong> schools,<br />

day-care centers, correctional facilities, health facilities,<br />

corporations and hospitals manag<strong>in</strong>g employees, purchas<strong>in</strong>g and<br />

food preparation, and prepar<strong>in</strong>g budgets with<strong>in</strong> food service<br />

operations. Food companies, contract food management<br />

companies, or food vend<strong>in</strong>g distribution operations hire dietetic<br />

technicians to develop menus, oversee<strong>in</strong>g food service<br />

preparation and food safety, and prepar<strong>in</strong>g food label<strong>in</strong>g and<br />

nutrient <strong>in</strong>formation.<br />

nurs<strong>in</strong>g homes, retirement centers, hospital health care <strong>program</strong>s<br />

and research facilities help<strong>in</strong>g to treat and prevent disease and<br />

adm<strong>in</strong>ister<strong>in</strong>g medical nutrition therapy as an important member<br />

of health care teams. WIC <strong>program</strong>s, public health agencies,<br />

company health <strong>program</strong>s, health clubs, weight management<br />

cl<strong>in</strong>ics and community wellness <strong>program</strong>s hire dietetic technicians<br />

to develop and teach nutrition classes and educate clients about<br />

the connection between food, fitness and health.<br />
