9.0 PROCESSING AND UTILISATION :9.1 Processing :Potato is a perishable commodity and it’sharvesting time (March/April) coincides with therise in temperature in Indo- Gangetic plains whichcontributes about 85 per cent of total production inIndia. Therefore, the potato produced requires toshift in cold storage.It has been observed that all varieties ofpotato are not suitable for processing. The drymatter and reducing sugar content are two important parameters for selecting rawmaterials for processing. The varieties namely Chipsona-1 and Chipsona-2 released byCentral Potato Research Institute (CPRI), Shimla, have been found fit and beneficial forpotato processing.
