Carbonara
Ingredients
400g spaghetti
1 tbsp olive oil
200g chopped streaky bacon
2 garlic cloves, crushed
3 eggs
75ml double cream
50g finely grated cheese
Tip: Substitute streaky bacon
with chopped peppers,
mushrooms and other
colourful veg for the perfect
veggie carbonara!
Method
1. Bring a large, deep pan of
salted water to the boil.
Plunge spaghetti into the
water, stir well and cook
until the pasta is soft but
still with some bite in the
middle.
2. Meanwhile heat oil in a
frying pan, tip in the bacon
(or veg) and fry over a
medium heat until lightly
golden. Remove from
heat.
3. To prepare the sauce,
crack two of the eggs into
a mixing bowl and add only
the yolk of the third egg.
Beat together, along with
the cream and cheese.
Add a pinch of salt and a
sprinkling of pepper for
more flavour.
4. Add garlic to the bacon
and fry for 1 min until garlic
is cooked and the bacon is
warmed through.
5. Meanwhile, drain spaghetti.
Tip back into the hot
saucepan off the heat.
Pour egg mixture over
pasta, followed by the
bacon and garlic. Toss
quickly and thoroughly
to combine all of the
ingredients. The sauce
will thicken and become
smooth and creamy.
6. Serve, topped with cheese
and freshly ground pepper.
