Banana Nut Cake<br />

Kendra Kelley – ZL-12<br />

½ stick butter or margarine<br />

1 ½ cups sugar<br />

2 eggs, separated<br />

¼ cup buttermilk<br />

1 teaspoon baking powder<br />

1 ½ teaspoons baking soda<br />

2 cups flour<br />

1 cup mashed bananas<br />

1 teaspoon vanilla<br />

½ cup chopped nuts<br />

• Cream butter and sugar and egg yolks.<br />

• Add buttermilk and dry ingredients, then bananas and vanilla.<br />

• Beat egg whites until stiff and fold in last with chopped nuts. (I like<br />

pecans, but walnuts may be used.).<br />

• Bake at 350* about 30-40 minutes in 13x9x2 inch pan.<br />

• Poke holes in cake with handle of wooden spoon. Icing should be spread<br />

on cake while still warm.<br />

Icing:<br />

1 banana<br />

1/2 stick butter<br />

1 teaspoon vanilla<br />

1 (1 lb) box powdered sugar<br />

• Mash banana with a little lemon juice.<br />

• Melt butter and add vanilla.<br />

• Add powdered sugar, mix and spread over cake.<br />
