All 23 bedrooms are delightfully

Liverpool
Home to two Premier league football clubs, labelled the World Capital City
of Pop by Guinness World Records and European Capital of Culture in 2008,

and with a large selection of tours available for first-time visitors and those with
specialist interests, this designated UNESCO World Heritage Site and birthplace

One of the most recognisable landmarks in
the city is the Royal Liver Building, home
to two fabled Liver Birds which watch over
the city and the sea. Legend says should the
birds fly away the city will cease to exist.
The Grade I listed building is located at Pier
Head and along with the Cunard Building
and Port of Liverpool Building, they are
collectively known as the Three Graces.
Conceived and constructed as symbols
of Liverpool’s 20th century international
prestige and commercial prowess, standing
at 98.2m tall, the Royal Liver Building was
the tallest storeyed building in Europe in
1932, and remained the tallest in the UK

Buy a ticket to ride and jump aboard
the Ferry cross the Mersey for a 50
minute river explorer cruise taking in the
best views along the riverside. The Mersey
Ferry Snowdrop has recently received
a dazzling make-over from famous pop
artist Sir Peter Blake to commemorate
World War I.
The dazzling camouflage was introduced
to confuse the enemy to a vessels speed
and direction making it more difficult
to target.

A POSTCARD FROM...
Sefton Park Palm House is a Grade II three
tier dome conservatory dating back to 1896
and housing many exotic plants and flowers.
Situated in an award-wining Victorian park
with a lake, statues, bandstand, play area
and tennis courts, it makes a great green
escape for a couple of hours any time of the
year; Spring showcases fields of daffodils,
the conservatory and lake shimmer in
summer sunshine and the riot of colours
in autumn are picture postcard pretty.

of £1million, The Grand National at

iconic 1960s English band.
For football fans The Anfield Experience
at Liverpool FC & Museum provides an
unforgettable day with two experiences;
listen to Liverpool legends and hear personal
insights and memories, and for more active
fans, train with the coaches and LFC
legends at The Academy.
You don’t need to know your Matisse from
your Magritte with a visit to Tate Liverpool.
Entry is free for National Collections such as
Henry Moore, Barbara Hepworth and Paul
Cézanne plus there’s a changing programme
of special exhibitions where you may
discover something new or a familiar

Voted by The Sunday Times as the number
one restaurant in Wales and in the top
100 UK restaurants, plus in the top 50 for
Waitrose’s Good Food Guide and winner of
the Best for Green Practices Award 2016 by
Condé Nast Johansens - these are just some
of the accolades which Llangoed Hall have
recently added to their extensive list of
achievements and the reason why we
wanted to find out more from the hotel’s
award-winning chef Nick Brodie.

How long have you been working at Llangoed Hall?
“Three years.”
What made you want to be a chef?
“I sort of fell into the trade, but enjoyed the lifestyle,
working environment and people.”
What do you look for when you create a new dish
or menu? What are your main considerations?
“Placement on the menu, the flavour, creative, artistic,
production”

CHEF’S CORNER
What’s proving to be the most popular dish on your
menu this month and why do you think that is?
Our Mackerel starter because people can relate to the
ingredients and it’s well executed so it’s a bit of a winner!
The #shelfie - a chef’s five must have herbs and
spices always available on the shelf! What are yours
and why?
Soy because it’s good for seasoning and dressing.
Chilli flakes. We always need chilli in our lives!
Baking powder is essential in pastry.
Oyster sauce gives good depth of flavour to dishes.
Rice wine vinegar because it’s good as a pickle base,
dressing or a clean acid for sauces.
When you go home, who does the cooking?
Are you territorial in the kitchen!?
Cooking is all about sharing and enjoying, I don’t mind
who cooks but I will always get stuck in!
Do any celebrity chefs inspire you? And if you had
to compare yourself to one, who would you say
you most resemble in terms of cooking style and/or
temperament?
The Dutch Michelin Star chef Jonnie Boer because of the
style of his food and the journey he’s been on. He uses
nature as his source of inspiration to develop new dishes
and as basis for his cooking.
What’s your favourite cuisine and why?
Chinese. There’s such a broad spectrum of dishes and
ingredients, and I never tire of the flavours.
Which famous person, dead or alive, would you love
to cook for and what would you serve them?
I would like to cook for the Royal Family. I think that
would be pretty special. I would need some preparation
and research before I undertook that job and decided
on a final menu!
If you were stranded on a desert island and allowed
one item or ingredient from your kitchen, what would
it be and why?
My cook’s knife. You always need a good knife!!!
You’re sharing a recipe with our readers today,
why did you choose this one?
It’s one of our chocolate dishes and I’m sharing it
because it’s good!

Chocolate Cremeux
Method
Start by making the sponge, put the egg
whites into a mixing bowl and whisk
gradually adding the sugar until stiff
meringue consistency
With the machine still running add the
yolks and once incorporated stop the
machine. Fold in the cocoa powder.
Spread this onto a tray lined with grease
proof paper and bake in the oven at
160°C for 15 minutes. Remove from the
oven and allow to cool.
For the cremeux whisk the yolks and
sugar together until pale. Bring the milk
and cream to the boil and pour on to the
yolks whisking continuously, return this
mixture to a clean pan and cook out
slowly to 86°C.
Once cooked cool to 50°C. Melt the
chocolate gently over a bain marie, once
melted, gradually add the custard and
emulsify with a hand-mix. Pour this into
the lined baking frame and refrigerate
until set.
For the caramelia mousse soften the
gelatine and melt the chocolate, make
a pâte à bombe with the egg yolks and
sugar, add the softened gelatine.
Semi-whip the cream. Fold the pâte à
bombe into the chocolate then add the
whipped cream, place this into a piping
bag with a nozzle.
To plate up roche the cremeux and place
onto the plate, add a small amount of
crushed Maldon salt and gold leaf, pipe
on the caramelia mousse, garnish with
chocolate and caramel sauce and
caramelised peanuts.
