of festivals is on!<br />

The UK music festival scene continues to thrive with a range of festivals from family-run<br />

events to the granddaddy of them all - Glastonbury, now in its 46th year.<br />

For many music fans, camping in tents and staying onsite is an important part of the festival<br />

experience. If you prefer your music after a good night of sleep in a clean and comfortable bed<br />

One of the most recognisable landmarks in<br />

the city is the Royal Liver Building, home<br />

Sefton Park Palm House is a Grade II three<br />

tier dome conservatory dating back to 1896<br />

and housing many exotic plants and flowers.<br />

Situated in an award-wining Victorian park<br />

with a lake, statues, bandstand, play area<br />

and tennis courts, it makes a great green<br />

escape for a couple of hours any time of the<br />

year; Spring showcases fields of daffodils,<br />

the conservatory and lake shimmer in<br />

summer sunshine and the riot of colours<br />

For football fans The Anfield Experience<br />

at Liverpool FC & Museum provides an<br />

How long have you been working at Llangoed Hall?<br />

“Three years.”<br />

What made you want to be a chef?<br />

“I sort of fell into the trade, but enjoyed the lifestyle,<br />

working environment and people.”<br />

What do you look for when you create a new dish<br />

or menu? What are your main considerations?<br />

“Placement on the menu, the flavour, creative, artistic,<br />

production”

What’s proving to be the most popular dish on your<br />

menu this month and why do you think that is?<br />

Our Mackerel starter because people can relate to the<br />

ingredients and it’s well executed so it’s a bit of a winner!<br />

The #shelfie - a chef’s five must have herbs and<br />

spices always available on the shelf! What are yours<br />

and why?<br />

Soy because it’s good for seasoning and dressing.<br />

Chilli flakes. We always need chilli in our lives!<br />

Baking powder is essential in pastry.<br />

Oyster sauce gives good depth of flavour to dishes.<br />

Rice wine vinegar because it’s good as a pickle base,<br />

dressing or a clean acid for sauces.<br />

When you go home, who does the cooking?<br />

Are you territorial in the kitchen!?<br />

Cooking is all about sharing and enjoying, I don’t mind<br />

who cooks but I will always get stuck in!<br />

Do any celebrity chefs inspire you? And if you had<br />

to compare yourself to one, who would you say<br />

you most resemble in terms of cooking style and/or<br />

temperament?<br />

The Dutch Michelin Star chef Jonnie Boer because of the<br />

style of his food and the journey he’s been on. He uses<br />

nature as his source of inspiration to develop new dishes<br />

and as basis for his cooking.<br />

What’s your favourite cuisine and why?<br />

Chinese. There’s such a broad spectrum of dishes and<br />

ingredients, and I never tire of the flavours.<br />

Which famous person, dead or alive, would you love<br />

to cook for and what would you serve them?<br />

I would like to cook for the Royal Family. I think that<br />

would be pretty special. I would need some preparation<br />

and research before I undertook that job and decided<br />

on a final menu!<br />

If you were stranded on a desert island and allowed<br />

one item or ingredient from your kitchen, what would<br />

it be and why?<br />

My cook’s knife. You always need a good knife!!!<br />

You’re sharing a recipe with our readers today,<br />

why did you choose this one?<br />

It’s one of our chocolate dishes and I’m sharing it<br />

because it’s good!<br />

Chocolate Cremeux<br />

Method<br />

Start by making the sponge, put the egg<br />

whites into a mixing bowl and whisk<br />

gradually adding the sugar until stiff<br />

meringue consistency<br />

With the machine still running add the<br />

yolks and once incorporated stop the<br />

machine. Fold in the cocoa powder.<br />

Spread this onto a tray lined with grease<br />

proof paper and bake in the oven at<br />

160°C for 15 minutes. Remove from the<br />

oven and allow to cool.<br />

For the cremeux whisk the yolks and<br />

sugar together until pale. Bring the milk<br />

and cream to the boil and pour on to the<br />

yolks whisking continuously, return this<br />

mixture to a clean pan and cook out<br />

slowly to 86°C.<br />

Once cooked cool to 50°C. Melt the<br />

chocolate gently over a bain marie, once<br />

melted, gradually add the custard and<br />

emulsify with a hand-mix. Pour this into<br />

the lined baking frame and refrigerate<br />

until set.<br />

For the caramelia mousse soften the<br />

gelatine and melt the chocolate, make<br />

a pâte à bombe with the egg yolks and<br />

sugar, add the softened gelatine.<br />

Semi-whip the cream. Fold the pâte à<br />

bombe into the chocolate then add the<br />

whipped cream, place this into a piping<br />

bag with a nozzle.<br />

To plate up roche the cremeux and place<br />

onto the plate, add a small amount of<br />

crushed Maldon salt and gold leaf, pipe<br />

on the caramelia mousse, garnish with<br />

chocolate and caramel sauce and<br />

caramelised peanuts.<br />
