With a love for challenging her baking skills, the Prebbleton resident has baked an array of cakes which are in hot demand with friends and family. Her baking has received a surge of support on Instagram and Facebook, with people asking if she will start up her own business. “I just sell to friends and family but I wouldn’t say I have got a business as such, and I don’t think I really want to go down that route of having a business. But never say never, who knows,” she said. Creating picturesque cakes wasn’t always a desire of Mrs Goodfellow’s. But when her eldest daughter Emmy celebrated her first birthday in 2014, the former Avonside Girls’ High School teacher was determined to make her daughter’s day as special as possible. PHOTO: MARTIN HUNTER “I had some time up my sleeve because I was off on my maternity leave from teaching . . . it was that time in my life where I could challenge myself,” she said. Soon after successfully baking her daughter a “giant cupcake”, Mrs Goodfellow began hunting for more cakes to bake in a bid to perfect her new craft. Four years down the line and she has created a range of cakes, from the three-layered hungry caterpillar-themed SELWYN TIMES cake to an “ice cream smash” cake and a layered macaroon cake. “I love helping people to make their special day and seeing the joy on their face when I drop off their cake,” she said. Mrs Goodfellow also has a passion for building fondant flowers, which she says finishes off a cake. Although she initially continued to do relief teaching while on maternity leave, she now has her own health and wellness business linked to Arbonne International. Mrs Goodfellow also recently became an education consultant for Linc-Ed, a technology company which created a website app for schools to share learning.
