Florida peach season is in full swing 

this month and, depending on the season, 

generally lasts until the end of 

May or early June. While some may 

argue that the best way to enjoy a 

perfectly ripe peach is standing over 

the kitchen sink with juice dripping 

down your chin, there are almost endless 

ways to savor one of the Sunshine 

State’s favorite fruits. Slice them on flat 

bread with arugula and goat cheese, 

toss them into salads with grilled 

chicken and avocado, pair them with 

jalapeños in salsa or jam for an addictive 

sweet-and-spicy combination, 

or break out the ice cream maker for 

a good old-fashioned taste of summer. 

Selecting Your Fruit 

Your nose is one of the best tools 

for selecting peaches; that enticing 

floral aroma is one indication of a 

flavorful peach. Avoid peaches with 

a green tint (under-ripe), wrinkled 

skin (over-ripe) or bruises. Next, try 

the touch test. A very hard peach 

likely will never ripen. If it gives to 

gentle pressure, it’s an excellent 

choice for eating soon. 

FOODIE FOR 

How to Store 

For peaches to ripen properly, store 

them on the counter (not the refrigerator) 

until the desired ripeness is 

reached. To speed up the process, 

place peaches in a brown paper bag. 

When peaches reach the desired ripeness, 

they can be stored in the refrigerator 

to make them last longer. Allow 

them to warm up to room temperature 

before eating for full flavor. If you 

are lucky enough to have too many 

peaches to enjoy right away, freeze 

them by cutting them into slices, giving 

them a quick dunk in a lemon-water 

bath to preserve color (1 cup water 

to 1/4 cup of lemon juice), and placing 

them on a cookie sheet. Freeze for 

one to two hours so slices don’t stick 

together, and then transfer to freezer 

bags to be stored for up to one year.

Sweet or Savory 

People tend to think of these luscious 

fruits primarily for baking into pies and 

cobblers, but peaches are delicious 

in savory dishes as well. Try them layered 

with turkey and white cheddar in 

grilled cheese sandwiches or 

diced and added to a chicken 

stir-fry. Grilling peaches 

intensifies their sweetness; 

simply brush peach slices 

with a neutral oil like canola 

or grapeseed and grill on 

medium heat until grill marks 

appear, one to two minutes 

per side. Serve them as a 

side dish to grilled pork or 

top with ice cream or ricotta 

cheese and a drizzle of honey 

for an easy dessert. 

Drink It Up 

The juicy, bold flavor of 

peaches lends itself well 

to refreshing cocktails and 

smoothies. Whirl frozen 

peaches in a blender with 

vanilla yogurt and orange 

juice or coconut milk at 

breakfast time, or top peach 

puree with sparkling water 

and a dash of simple syrup 

for a refreshing afternoon drink. Add 

thin slices of peaches to your favorite 

sangria recipe, or add 1 to 2 ounces 

of peach puree to a champagne flute 

and top with Prosecco and a mint 

sprig for a perfect, sparkling, spring 

cocktail. 

Grilled Peach & 

Mozzarella Salad With 

White Balsamic Glaze 

This beautiful salad is a twist on 

the classic tomato-basil caprese salad. 

Serve on individual plates with 

a glass of sparkling wine for an elegant 

appetizer or make a larger 

version to serve on a platter. 

Ingredients: 

1 peach, cut into five slices 

4 slices fresh mozzarella — 

1/4-inch thick 

1 slice prosciutto, torn into two 

pieces 

1 small handful of microgreens 

or baby lettuces 

1 tablespoon fresh mint, chopped 

For the white balsamic glaze: 

1/3 cup white balsamic vinegar 

1/2 teaspoon Dijon mustard 

1 tablespoon honey 

Fresh peaches can be eaten in a variety of ways, 

including on flat bread with arugula and goat cheese. 

To make the glaze: 

Heat balsamic vinegar and Dijon 

mustard in a small saucepan over 

medium heat for 15 minutes, stirring 

often until thick and syrupy, and 

liquid is reduced by half. Whisk in 

honey. Set aside to cool. 

For the salad: 

Brush grill with oil and heat to 

medium. Grill peach slices 1 1/2 

to 2 minutes per side. Remove from 

grill and arrange peach and mozzarella 

slices in an alternating pattern 

on plate. Lightly season with 

salt and pepper. Top with torn prosciutto 

pieces, baby lettuce and mint. 

Drizzle with white balsamic glaze. 

Serves one. ª


Guardianship Fraud - Elder Abuse Is On The Rise

According to the United 

States Census Bureau, due 

to the large number of baby 

boomers, America’s 65-andover 

population is projected to nearly double over the next three decades, 

exploding from the current 48 million to over 88 million by 2050. And based 

upon the population within each state, Florida has the largest percentage of 

elderly persons. 

Florida is already one of the largest strongholds for elderly abuse in 

the US and because of the exploding elderly population one such abuse, 

guardianship fraud, is on the rise. According to Florida Statutes, prior to 

the appointment of a guardian, the court must find there appears to be an 

“imminent danger” that the physical or mental health or safety of the person 

will be seriously impaired or that the person’s property is in danger of being 

wasted, misappropriated or lost unless immediate action is taken. 

Imminent danger being the foundation of the fraud, is the con artist’s 

or abuser’s tool to gain control over and exploit the elderly victim. So why do 

these abusers do it? They do it for profit, of course. And what are some of 

the signs of imminent danger used by such abusers? 

The abuser, such as a family caregiver, may fabricate a belief that there 

is a relative, a neighbor or even a stranger who is trying to take advantage 

of the victim. Next is to convince the victim to execute a durable power of 

attorney prepared by a lawyer so the caregiver can help the victim protect and 

manage his/her assets. Likewise, the caregiver may convince the victim to 

sign a durable power for health care to make medical decisions or acquire 

prescriptions on behalf of the victim. The caregiver then may begin to 

deplete the victim’s assets while simultaneously providing an overdose of 

prescriptions in order to cause the elder to exhibit a lack of clarity by or 

appear mentally incapacitated. 

At this time, the caregiver may request an emergency temporary 

guardianship which gives complete temporary control over the victim. 

Why? Because the caregiver provided the means to demonstrate that the 

victim exhibits signs of mental incapacity and is unable to make financial 

and medical decisions and therefore manifests an imminent danger. An 

emergency temporary guardianship expires 90 days after the date of 

appointment and may be extended up to an additional 90 days provided 

the caregiver can demonstrate emergency conditions still exist. Just 

enough time to embezzle most if not all, of an elderly person’s assets. 

In the initial stages of guardianship, an alleged incapacitated person 

must be represented by an attorney. While the attorney may have had 

good intentions in representing both the victim and the caregiver, the 

entire legal system as a whole, including attorneys and the courts, is often 

defrauded by an experienced elder law abuser. 

Don’t let this happen to you. Avoid 

elder abuse and guardianship fraud by 

meeting with an estate planning and elder 

law attorney today.

On Feb. 21, the Central Florida 

Hotel & Lodging Association recognized 

Southwest resident and Orange 

County Mayor Teresa Jacobs as the 

association’s 2017 CFHLA Public Servant 

of the Year. This annual honor recognizes 

elected leaders who have championed 

Central Florida’s tourism economy and 

worked to advance hospitality industry 

priorities. 

During the course of her eight years 

leading Orange County, Mayor Jacobs 

has played an integral role in revising 

the Venues Agreement to enhance essential 

tourism and community projects, such 

as Camping World Stadium, Dr. Phillips 

Center for the Performing Arts, and the 

Orange County Convention Center. 

Additionally, Mayor Jacobs recently 

spearheaded the development of both the 

Orange County Tourist Development Tax 

Grant Application Review Committee and 

the Orange County Tourist Development 

Tax Sports Incentive Committee. These 

advisory boards will serve as important 

checks and balances on the future 

expenditure of Orange County Tourism 

Development Tax funds, working to promote 

the Central Florida destination.

Orlando Science School 

students had impressive showings 

at local competitions. The 

Neuroscience Club, consisting of 

Ocoee and Dr. Phillips residents, 

placed third in the Central Florida 

Brain Bee held at the University 

of Central Florida. This was the 

team’s first year at the competition. 

Noah L. also placed in the 

top 10 among all of the competitors. 

Another group of students, 

who reside in MetroWest and 

Windermere, competed in the 

Regional National History Bee held 

at Trinity Preparatory School. Three 

of the competitors will advance to 

represent the school at the National 

History Bee Finals. 

Elementary, middle and high 

school students are invited to explore 

art and be artful during a 

Day of Art at the Mennello Museum 

of American Art. Day of Art for 

elementary students will be June 

4, and for middle and high school 

students, it will be June 11. Both 

sessions take place from 8 a.m.- 

5:30 p.m. Elementary students 

will create large-scale abstract 

sculptures, paint with watercolors 

and oil pastels, and learn how to 

draw the world around them. The 

older kids will be inspired to use 

their environment to create mixed 

media prints, kinetic sculptures 

and acrylic landscapes. They will 

also create poetry and trade artist 

cards with new friends inspired by 

the environment. Both days will be

County public high schools, including

this year’s event. 

Throughout the morning, students 

attended a series of workshops, 

ranging from zoning and code enforcement 

to the electoral process. 

The workshops provided an opportunity 

for students to strengthen 

their leadership skills, learn how 

government functions, and learn 

how to participate in community initiatives. 

They also joined in a Youth 

Issues Forum, an open discussion 

about important topics, led and 

moderated by Mayor Jacobs. The 

top issues included regional infrastructure, 

social services and public 

safety. Following the forum, Mayor 

Jacobs was presented an award by 

Orange County’s Neighborhood 

Preservation & Revitalization Office. 

She was recognized for her leadership 

and for creating the conference 

initiative.

Orange County Public Schools received 

a Certificate of Achievement 

for Excellence in financial reporting 

by the Government Finance Officers
