Florida peach season is in full swing<br />

this month and, depending on the season,<br />

generally lasts until the end of<br />

May or early June. While some may<br />

argue that the best way to enjoy a<br />

perfectly ripe peach is standing over<br />

the kitchen sink with juice dripping<br />

down your chin, there are almost endless<br />

ways to savor one of the Sunshine<br />

State’s favorite fruits. Slice them on flat<br />

bread with arugula and goat cheese,<br />

toss them into salads with grilled<br />

chicken and avocado, pair them with<br />

jalapeños in salsa or jam for an addictive<br />

sweet-and-spicy combination,<br />

or break out the ice cream maker for<br />

a good old-fashioned taste of summer.<br />

Selecting Your Fruit<br />

Your nose is one of the best tools<br />

for selecting peaches; that enticing<br />

floral aroma is one indication of a<br />

flavorful peach. Avoid peaches with<br />

a green tint (under-ripe), wrinkled<br />

skin (over-ripe) or bruises. Next, try<br />

the touch test. A very hard peach<br />

likely will never ripen. If it gives to<br />

gentle pressure, it’s an excellent<br />

choice for eating soon.<br />

FOODIE FOR<br />

How to Store<br />

For peaches to ripen properly, store<br />

them on the counter (not the refrigerator)<br />

until the desired ripeness is<br />

reached. To speed up the process,<br />

place peaches in a brown paper bag.<br />

When peaches reach the desired ripeness,<br />

they can be stored in the refrigerator<br />

to make them last longer. Allow<br />

them to warm up to room temperature<br />

before eating for full flavor. If you<br />

are lucky enough to have too many<br />

peaches to enjoy right away, freeze<br />

them by cutting them into slices, giving<br />

them a quick dunk in a lemon-water<br />

bath to preserve color (1 cup water<br />

to 1/4 cup of lemon juice), and placing<br />

them on a cookie sheet. Freeze for<br />

one to two hours so slices don’t stick<br />

together, and then transfer to freezer<br />

bags to be stored for up to one year.<br />

Sweet or Savory<br />

People tend to think of these luscious<br />

fruits primarily for baking into pies and<br />

cobblers, but peaches are delicious<br />

in savory dishes as well. Try them layered<br />

with turkey and white cheddar in<br />

grilled cheese sandwiches or<br />

diced and added to a chicken<br />

stir-fry. Grilling peaches<br />

intensifies their sweetness;<br />

simply brush peach slices<br />

with a neutral oil like canola<br />

or grapeseed and grill on<br />

medium heat until grill marks<br />

appear, one to two minutes<br />

per side. Serve them as a<br />

side dish to grilled pork or<br />

top with ice cream or ricotta<br />

cheese and a drizzle of honey<br />

for an easy dessert.<br />

Drink It Up<br />

The juicy, bold flavor of<br />

peaches lends itself well<br />

to refreshing cocktails and<br />

smoothies. Whirl frozen<br />

peaches in a blender with<br />

vanilla yogurt and orange<br />

juice or coconut milk at<br />

breakfast time, or top peach<br />

puree with sparkling water<br />

and a dash of simple syrup<br />

for a refreshing afternoon drink. Add<br />

thin slices of peaches to your favorite<br />

sangria recipe, or add 1 to 2 ounces<br />

of peach puree to a champagne flute<br />

and top with Prosecco and a mint<br />

sprig for a perfect, sparkling, spring<br />

cocktail.<br />

Grilled Peach &<br />

Mozzarella Salad With<br />

White Balsamic Glaze<br />

This beautiful salad is a twist on<br />

the classic tomato-basil caprese salad.<br />

Serve on individual plates with<br />

a glass of sparkling wine for an elegant<br />

appetizer or make a larger<br />

version to serve on a platter.<br />

Ingredients:<br />

1 peach, cut into five slices<br />

4 slices fresh mozzarella —<br />

1/4-inch thick<br />

1 slice prosciutto, torn into two<br />

pieces<br />

1 small handful of microgreens<br />

or baby lettuces<br />

1 tablespoon fresh mint, chopped<br />

For the white balsamic glaze:<br />

1/3 cup white balsamic vinegar<br />

1/2 teaspoon Dijon mustard<br />

1 tablespoon honey<br />

Fresh peaches can be eaten in a variety of ways,<br />

including on flat bread with arugula and goat cheese.<br />

To make the glaze:<br />

Heat balsamic vinegar and Dijon<br />

mustard in a small saucepan over<br />

medium heat for 15 minutes, stirring<br />

often until thick and syrupy, and<br />

liquid is reduced by half. Whisk in<br />

honey. Set aside to cool.<br />

For the salad:<br />

Brush grill with oil and heat to<br />

medium. Grill peach slices 1 1/2<br />

to 2 minutes per side. Remove from<br />

grill and arrange peach and mozzarella<br />

slices in an alternating pattern<br />

on plate. Lightly season with<br />

salt and pepper. Top with torn prosciutto<br />

pieces, baby lettuce and mint.<br />

Drizzle with white balsamic glaze.<br />

Serves one. ª

Guardianship Fraud - Elder Abuse Is On The Rise<br />

According to the United<br />

States Census Bureau, due<br />

to the large number of baby<br />

boomers, America’s 65-andover<br />

population is projected to nearly double over the next three decades,<br />

exploding from the current 48 million to over 88 million by 2050. And based<br />

upon the population within each state, Florida has the largest percentage of<br />

elderly persons.<br />

Florida is already one of the largest strongholds for elderly abuse in<br />

the US and because of the exploding elderly population one such abuse,<br />

guardianship fraud, is on the rise. According to Florida Statutes, prior to<br />

the appointment of a guardian, the court must find there appears to be an<br />

“imminent danger” that the physical or mental health or safety of the person<br />

will be seriously impaired or that the person’s property is in danger of being<br />

wasted, misappropriated or lost unless immediate action is taken.<br />

Imminent danger being the foundation of the fraud, is the con artist’s<br />

or abuser’s tool to gain control over and exploit the elderly victim. So why do<br />

these abusers do it? They do it for profit, of course. And what are some of<br />

the signs of imminent danger used by such abusers?<br />

The abuser, such as a family caregiver, may fabricate a belief that there<br />

is a relative, a neighbor or even a stranger who is trying to take advantage<br />

of the victim. Next is to convince the victim to execute a durable power of<br />

attorney prepared by a lawyer so the caregiver can help the victim protect and<br />

manage his/her assets. Likewise, the caregiver may convince the victim to<br />

sign a durable power for health care to make medical decisions or acquire<br />

prescriptions on behalf of the victim. The caregiver then may begin to<br />

deplete the victim’s assets while simultaneously providing an overdose of<br />

prescriptions in order to cause the elder to exhibit a lack of clarity by or<br />

appear mentally incapacitated.<br />

At this time, the caregiver may request an emergency temporary<br />

guardianship which gives complete temporary control over the victim.<br />

Why? Because the caregiver provided the means to demonstrate that the<br />

victim exhibits signs of mental incapacity and is unable to make financial<br />

and medical decisions and therefore manifests an imminent danger. An<br />

emergency temporary guardianship expires 90 days after the date of<br />

appointment and may be extended up to an additional 90 days provided<br />

the caregiver can demonstrate emergency conditions still exist. Just<br />

enough time to embezzle most if not all, of an elderly person’s assets.<br />

In the initial stages of guardianship, an alleged incapacitated person<br />

must be represented by an attorney. While the attorney may have had<br />

good intentions in representing both the victim and the caregiver, the<br />

entire legal system as a whole, including attorneys and the courts, is often<br />

defrauded by an experienced elder law abuser.<br />

Don’t let this happen to you. Avoid<br />

elder abuse and guardianship fraud by<br />

meeting with an estate planning and elder<br />

law attorney today.<br />

On Feb. 21, the Central Florida<br />

Hotel & Lodging Association recognized<br />

Southwest resident and Orange<br />

County Mayor Teresa Jacobs as the<br />

association’s 2017 CFHLA Public Servant<br />

of the Year. This annual honor recognizes<br />

elected leaders who have championed<br />

Central Florida’s tourism economy and<br />

worked to advance hospitality industry<br />

priorities.<br />

During the course of her eight years<br />

leading Orange County, Mayor Jacobs<br />

has played an integral role in revising<br />

the Venues Agreement to enhance essential<br />

tourism and community projects, such<br />

as Camping World Stadium, Dr. Phillips<br />

Center for the Performing Arts, and the<br />

Orange County Convention Center.<br />

Additionally, Mayor Jacobs recently<br />

spearheaded the development of both the<br />

Orange County Tourist Development Tax<br />

Grant Application Review Committee and<br />

the Orange County Tourist Development<br />

Tax Sports Incentive Committee. These<br />

advisory boards will serve as important<br />

checks and balances on the future<br />

expenditure of Orange County Tourism<br />

Development Tax funds, working to promote<br />

the Central Florida destination.<br />

placed third in the Central Florida<br />

Brain Bee held at the University<br />

of Central Florida. This was the<br />

team’s first year at the competition.<br />

Noah L. also placed in the<br />

top 10 among all of the competitors.<br />

Another group of students,<br />

who reside in MetroWest and<br />

Windermere, competed in the<br />

Regional National History Bee held<br />

at Trinity Preparatory School. Three<br />

of the competitors will advance to<br />

represent the school at the National<br />

Day of Art at the Mennello Museum<br />
