TWO gRAnD HOTElS FOR CuzCO<br />
Dos grandes hoteles para el Cusco<br />
Hotel infrastructure in Peru is undergoing a boom. In<br />
recent months, two important international hotel chains<br />
have placed their faith in Cusco. The Hotel Palacio<br />
Nazarenas, from the Orient Express hotel chain, opened<br />
recently and construction is progressing quickly on the J.W.<br />
Marriott, which will open in the first fortnight of July.<br />
El Palacio Nazarenas is the British company's sixth hotel in<br />
Peru and will have 55 suites in an old palace and convent<br />
in Cusco. The Marriott will have 153 rooms and a 300<br />
square meter spa, all in an old colonial-era convent.<br />
La infraestructura hotelera en el Perú está a la orden del día.<br />
Estos últimos meses, dos importantes cadenas mundiales han<br />
apostado por la ciudad del Cusco. Recientemente se inauguró<br />
el Hotel Palacio Nazarenas, de Orient-Express, y se viene<br />
acelerando la construcción del J.W. Marriott, que iniciará<br />
operaciones en la primera quincena de julio.<br />
El Palacio Nazarenas es el sexto hotel de la colección británica<br />
en el Perú y contará con 55 suites dentro de un antiguo palacio<br />

Four Peruvian books were successful in different<br />
categories at the Gourmand World Cookbook<br />
Awards. "El gran libro del postre peruano”, by Sandra<br />
Plevisani won first place in the Latin American<br />
Cookbook category; Peruvian chef Rafael Osterling<br />
took first prize in the Best Chef category for<br />
his book “Rafael. The Chef, the Restaurant, the<br />
Recipes"; "La ruta de la papa", by Sara Beatriz<br />
Guardia took third place in the Best Book 2012<br />
category and “La cocina mágica Ashaninka” won<br />
third prize in the Best Illustrated Book class.<br />

The production of pisco dates back to Colonial times. The grape<br />
brandy is Peru's national drink, its production dating back five<br />
centuries. In 1613 a Peruvian citizen wrote about the production<br />
of 300 flagons of "grape spirit" and mentioned the tools needed<br />

Barranco is a district that retains its romanticism despite the passing of<br />
time and visitors can witness this in its beautiful mansions, art galleries,<br />
cultural centers and touristic attractions. At the turn of the 20th Century<br />
Lima's outskirts reached only what its people refer today as the Historic<br />
Center. Wealthy families gradually moved out of downtown Lima, away<br />
from the bustle and into tranquil areas such as Barranco's seaside cliffs.<br />

the great variety of products that Peruvian<br />
gastronomy has today become one of the<br />
best in the world. And, of course, thanks to<br />
contributions by Chinese, Italians, Spanish,<br />
Arabs and Africans, who settled in this land<br />
bringing the best of their traditions. For<br />
that reason Peruvian food is the result of<br />
mixtures and fusions, and is far from being<br />
wholly indigenous. It is exquisite, of that<br />
there is no doubt. A group of Peruvian<br />
chefs with international reputations, as well<br />
as young people just starting out in the<br />
trade, ensure that our cuisine stays in the<br />
headlines and is a subject of conversation<br />
both in Peru and beyond its borders. For<br />
this and other reasons, Peru has become a<br />
gastronomic paradise.<br />

Recognised as part of the Cultural Heritage of Peru and probably<br />
soon as part of the Intangible Heritage of Humanity, the fame<br />
of Peruvian cooking continues to increase. It has crossed Peru's<br />
borders thanks to the visionaries who have promoted it. Gaston<br />
Acurio is inseparable from this phenomenon and talks to us with the<br />
authority of a master in the subject.<br />

from others?<br />

Why should we call Lima the<br />
gastronomic capital of America?<br />
We are not claiming the title ourselves. The<br />
whole world says so. For us this is more like<br />
a path than a confirmation. But we can say<br />
that it is well founded, we have a great<br />
cuisine, fine produce, great chefs, unique<br />
culinary concepts and top people; our own<br />
understanding, diners who are proud of<br />
their cuisine, cookery schools all over the<br />
city, etc. Nevertheless, we still have a great<br />
deal to do.<br />
What do we have to do keep that title?<br />
Restore the Bay of Lima for artisanal fishing<br />
around its islands, ensure that our rivers and<br />
valleys are sources of life, flavour and beauty;<br />
train young people in the world of service,<br />
helping to banish undernourishment once and<br />
for all. Help to formalise street food sellers in<br />
order to guarantee good hygiene and create<br />
a network of attractive district markets; In<br />
the end this is all part of the process: Lima,<br />
gastronomic capital of America as a brand that<br />
complements the city of Lima as a tourist<br />
destination. That's what we're doing.<br />
What exactly is Mistura? How did the fair<br />
start and how has it evolved since the<br />
first one?<br />
One day, in the workshop with my partner<br />
Irzio Pinasco, we were saying that it<br />
was time to create a fair to celebrate<br />
everything that we who are part of Peruvian<br />
gastronomy were doing: producers, cooks,<br />
consumers, etc. The first was "Perú Mucho<br />
Gusto", which attracted 40,000 people.<br />
Then, with the aid of the Apega team and<br />
the Peruvian <strong>Gastronomy</strong> Society it became<br />
Mistura and now Apega runs Mistura and<br />
attracts 400,000 people. It's a beautiful fair,<br />
the result of collaboration between chefs,<br />
businesses and the authorities; in which<br />
we celebrate biodiversity, cultural diversity<br />
regardless of race, origin or economic status.<br />
What does Mistura offer to foreign<br />
tourists?<br />
An opportunity to discover a magic world of<br />
cooking, nature, history, culture, celebration,<br />
flavours, cooks and products; but above all,<br />
somewhere where everyone is welcome. It's<br />

No lo decimos nosotros. Lo dice el mundo. En<br />
ese sentido, para nosotros, es más un norte que<br />
una afirmación. Pero sí podemos decir que está<br />
sustentado en que tenemos una gran cocina, hermosos<br />
productos, grandes cocineros, conceptos culinarios<br />
únicos y peruanos de gran nivel; un lenguaje propio,<br />
consumidores orgullosos de su cocina, escuelas de<br />
cocina por toda la ciudad, etcétera. Sin embargo, las<br />
tareas son aún enormes.<br />
¿Qué se necesita hacer para mantener ese premio?<br />
Recuperar la bahía de Lima para la pesca artesanal<br />
en sus islas y sus muelles, recuperar nuestros ríos y<br />
nuestros valles de manera que sean fuente de vida,<br />
sabor y belleza; formar jóvenes en el mundo del<br />
servicio, contribuir a la erradicación definitiva de la<br />
desnutrición; ayudar a la formalización del comercio<br />
ambulatorio de comidas con el objetivo de tener<br />
una garantía total sanitaria, generar una red de<br />
hermosísimos mercados distritales, en fin. Todo ello<br />
forma parte del proceso: Lima Capital Gastronómica<br />
de América como marca que apoya a Lima Ciudad<br />
como destino turístico. En esas estamos.<br />
¿Qué es exactamente Mistura? ¿Cómo nació la feria y<br />
cómo ha evolucionado desde su primera edición?<br />
Un día, en el taller con mi socio, Irzio Pinasco, nos<br />
dijimos que había llegado el momento de hacer una<br />
feria que celebrara toda esta unión que se estaba<br />
gestando en quienes formamos parte de la cocina<br />
peruana: productores, cocineros, consumidores,<br />
etcétera. Primero fue Perú Mucho Gusto, con 40<br />
mil personas. Luego, con todo el equipo de Apega,<br />
se convirtió en Mistura, y hoy Apega conduce un<br />
Mistura de 400 mil personas. Es una feria hermosa<br />
que es fruto de la colaboración de cocineros,<br />
empresarios, autoridades, en la cual celebramos<br />
juntos la biodiversidad, la diversidad cultural<br />
sin distinción de razas, orígenes ni condición<br />
económica.<br />
¿Qué atractivo ofrece Mistura a un turista extranjero?<br />
Descubrir un mundo mágico de cocina, naturaleza,<br />
historia, cultura, celebración, sabores, cocineros,<br />
productos; pero sobre todo, un espacio donde todos<br />
son bienvenidos. Es casi como un Woodstock de la<br />
cocina cada año.<br />
¿Qué papel desempeña la comida en una cultura?<br />
La cocina es amor, es recuerdos, es historia, es<br />
cultura, es sentimiento, es economía, es promoción,<br />
es orgullo; en fin, muchas cosas. La cocina es cultura<br />
pura y profunda.<br />

What role does food play in a culture?<br />
Cooking is love, memories, history, culture, it<br />
is feeling, economics, promotion and pride;<br />
many things, in the end. Cuisine is culture,<br />
pure and simple.<br />
Today, your restaurants Astrid & Gastón, La<br />
Mar and Tanta can be found in many large<br />
cities all over the world. How do foreign<br />
palates react to Peruvian cooking? What<br />
do they find that is different? What do<br />
they like most?<br />
In this different world everything appears<br />
to be different. Peruvian cooking has a<br />
repertoire that adapts well to each country.<br />
Cebiche, causa, tiradito, anticuchos are<br />
dishes that cause a great first impression,<br />
as does pisco sour; the rest may need<br />
some reflection in order to understand the<br />
loves and loathings of each country.<br />
What do you think Peru should do to<br />
compete with such omnipresent cuisines<br />
as Chinese and Italian?<br />
Keep building on what we have already<br />
achieved: reliable and connected production<br />
chains and units, promotion of Peruvian<br />
produce in the rest of the world, Peruvian<br />
products that can be sold around the globe,<br />
open small, medium-sized or large and<br />
beautiful Peruvian restaurants throughout<br />
the world; dream that Peruvian chili will be<br />
the sauce of tomorrow.<br />
When Ferrán Adriá left Lima he said to a<br />
local paper that he had various projects in<br />
the pipeline with you. What projects was<br />
he talking about? What new surprises have<br />
you in mind for Peruvians?<br />
We have made a great documentary about<br />
Peruvian cuisine as a social weapon; we've<br />
also prepared a beautiful book, "eden.pe",<br />
which is coming out in a few months.<br />

frente a la cocina peruana? ¿Qué encuentran diferente?<br />
¿Qué cosas les gustan más?<br />
En este mundo distinto se manifiesta todo de manera<br />
distinta. La cocina peruana tiene, para cada país, un<br />
repertorio que se adapta bien. El cebiche, la causa,<br />
el tiradito, los anticuchos son platos que se quieren<br />
desde el primer momento, lo mismo el pisco sour; lo<br />
demás toma una mayor reflexión en comprender odios<br />
y amores de cada país.<br />
¿Qué crees que debe hacer el Perú para competir con<br />
comidas tan presentes globalmente como la china y la<br />
italiana?<br />
Seguir avanzando en lo ya hecho: cadenas productivas<br />
sólidas y unidas, promoción de los productos peruanos<br />
en el mundo, elaboración de productos terminados<br />
de sabor peruano globalizables, hacer pequeños,<br />
medianos o grandes y hermosos restaurantes peruanos<br />
por el mundo; soñar que un ají peruano será la salsa<br />
del mañana.<br />
Cuando Ferrán Adriá dejó Lima comentó a un diario<br />
local que tenía varios proyectos contigo. ¿De qué proyectos<br />
estaba hablando? ¿Qué nuevas sorpresas tienes deparadas<br />
para los peruanos?<br />
Hemos hecho un documental muy hermoso acerca de<br />
la cocina peruana como arma social; hemos hecho<br />
además un hermoso libro, "eden.pe", que estará listo<br />

Fresh fish, lemon, onion sliced long and limo chili, are the<br />
ceviche ingredients. This dish was officially declared part<br />
of Peru's cultural heritage in 2004.<br />

CEVICHE RECIPE / RECETA DEl CEVICHE<br />
Clean the fish and cut into cubes or small pieces (about 2 squared centimeters). Place in a colander and<br />
add the red onions cut finely au julienne after being washed with plenty of water and salt. Season with salt<br />
and yellow chili pepper and mix together. Add the lemon juice. Leave for 5 minutes and serve. It is better to<br />
use white fish such as grouper, sea bass or sole, the latter being the best of all.<br />
Limpiar el pescado y cortar en cubos o trozos pequeños (aproximadamente 2 cm cada lado). Colocar en un<br />
escurridor y agregar la cebolla roja cortada en julianas finas, previamente lavada con abundante agua y sal.<br />

minutos y servir. De preferencia utilizar pescados blancos como el mero, la corvina y el lenguado, siendo este<br />

A tuber with many shapes and colours, the potato<br />
is, together with the chili pepper, another important<br />
ingredient in Peruvian cuisine. Domesticated eight<br />
thousand years ago in the Andes and with more than<br />
3,000 varieties, they are served daily with a wide<br />
variety of ingredients. The potato, which today is the<br />
fourth most important crop in the world, is eaten<br />
boiled, fried or baked and served with the widest<br />
range of sauces that Peruvian chefs can concoct using<br />

The chili pepper is the soul of Peruvian cuisine.<br />
With more than fifty varieties, the chili pepper is<br />
the flavouring for dozens of dishes from the coast,<br />
highlands and rainforest, and has always been the<br />
principal gastronomic ingredient for the different<br />
cultures that have populated Peru. Originating on<br />
the Andean plateau, the chili pepper was rapidly<br />
accepted in the country's different regions and, after<br />
the Spanish conquest it was taken to Central America,<br />
Europe, Asia and Oceania.<br />

Quinua<br />
Quinua grows from sea level up to an altitude of<br />
4,000 metres, this grain was one of the principal<br />
nutrition products of Peru's pre-Hispanic<br />
cultures. Rich in proteins, iron and magnesium<br />
and inexpensive to grow, quinua could be one<br />
of the products that could alleviate a world's<br />
food crisis. The UN has declared 2013 to be the<br />
“International Year of Quinua”.<br />
La quinua, grano que crece desde el nivel del mar hasta<br />
los 4 mil metros de altura, fue uno de los principales<br />
alimentos de las culturas prehispánicas del Perú. Rica<br />

Italian dishes. Nevertheless, tomatoes are native<br />

Tomatoes are also used in local stews and<br />
sauces and are an indispensable companion to<br />
the meat in one of Peru's signature dishes: lomo<br />

With more than 35 varieties, maize is a classic of<br />
Peruvian cuisine. This grain comes in different sizes<br />
and colours, it is eaten all over the country and is a<br />
classic of the daily diet. Purple maize is used to make<br />
chicha morada, a delicious refreshing drink. We eat<br />
the giant sweet corn fromç Cusco with cheese. On<br />
its own, held at the ends and eaten with butter. In<br />
ceviche, it is eaten grain by grain.<br />

How does the Hotel Libertador chain differ<br />
from its competitors?<br />
Libertador Hotels offers a lot os local<br />
knowledge. It has been operating in Peru<br />
for 35 years and in that time has learned<br />
to grow while taking national, provincial<br />
and regional politics in its stride. Once<br />
we started the process of expansion and<br />
particularly in the last five years, this<br />
experience has enabled us to design hotels<br />
"little jewels" I would say, aimed at more<br />
sophisticated clients.<br />

Indeed. We own the first LEED certified<br />
hotel anywhere in Latin America (Westin),<br />

The Larco Museum: Treasures of Ancient Peru is one<br />
of the country's most comprehensive museums, it is<br />
located in the traditional district of Pueblo Libre. The<br />
museum was founded by Rafael Larco Hoyle in 1926<br />
and is in a vice regal-era mansion built on a pre-<br />
Columbian pyramid from the 7th Century. It contains<br />
a very comprehensive collection of pre-Hispanic gold<br />
and silver artefacts and erotic art, one of the major<br />
attractions of Peruvian archaeology. In total the Larco<br />
Museum has more than 45,000 objects on display,<br />
all duly classified, which are mute witnesses to three<br />

On the 18th of January 1535, Francisco<br />
Pizarro, Conquistador of Peru, founded the City<br />
of Kings (Lima). As was the custom at that<br />
time, after every new Spanish city had been<br />
founded the best plots were shared between<br />
the Conquistador and his comrades. This was the<br />
case of Captain Jerónimo de Aliaga, who was<br />
given a plot of land next to that of Pizarro –now<br />
the Presidential Palace– that is still inhabited<br />
by his descendents: a unique case in South<br />
America.<br />

Today Lima is a vibrant metropolis and a Latin<br />
American melting pot. It was a small fertile<br />
valley populated by different cultures since<br />
remote times. Numerous “huacas” or sacred<br />
centers still rise amidst modern buildings and<br />
wide city streets. One of the largest huacas<br />
is just a 30-minute drive south of Miraflores.<br />
Pachacamac the renowned religious center<br />
was the site of the most important coastal<br />
oracle, “the creator of earth and sea, he who<br />
shapes time and makes the land tremble, the<br />
animator”. At the other end of the city, 186<br />
kilometers north of Lima is Caral. Claimed<br />
to be the cradle of American civilization<br />
by reputed scholars, Caral could have been<br />
designed as a greatcalendar where every<br />
public building was related to a deity and<br />
represented a position in the firmament. As<br />
astonishing as it may seem Caral was built at<br />
the same time as the pyramids in Egypt but<br />
developed a unique civilization in isolation<br />
five thousand years ago, here in Lima.<br />
Si bien Lima hoy se presenta como una vibrante<br />
y moderna metrópolis, en el pasado fue un valle<br />
poblado por diferentes culturas. Destacan en el<br />
territorio numerosas huacas (restos arqueológicos<br />
locales) y rezagos de antiguas poblaciones que<br />
vivieron frente al mar.<br />
Uno de los restos arqueológicos más grandes<br />
se encuentra a tan solo 30 minutos al sur: el<br />
centro religioso de Pachacámac, el principal<br />
templo oracular durante el incario. Pachacámac<br />
quiere decir “hacedor, animador, creador de<br />
la tierra y el mar, quien da forma al mundo y<br />
hace temblar la tierra”. Al otro extremo de Lima<br />
(cerca del kilómetro 186 de la Panamericana<br />
Norte) se encuentra Caral; cuna de la civilización<br />
americana. El equipo de investigadores liderados<br />
por Ruth Shady sostiene que la ciudad se concibió<br />
a modo de un gran calendario; cada edificio<br />
público habría estado relacionado con una deidad<br />
y su correspondiente posición astral. Asimismo,<br />
y por más sorprendente que parezca, Caral se<br />
desarrolló en paralelo con las pirámides de Egipto<br />
y Mesopotamia, surgiendo de manera aislada e<br />
independiente hace cinco mil años en Lima.<br />

Pachacamac Full Day<br />
The tour starts in the National Archaeology,<br />
Anthropology and History Museum in the<br />
traditional district of Pueblo Libre. Founded in<br />
1826, it is the oldest State-owned museum<br />
and covers the history of Peru from the<br />
commencement of local civilisation to the<br />
republican era. After that you will travel south<br />
to Pachacamac, an archaeological complex<br />
built in 200 A.D. and considered one of the<br />
most important pre-Inca religious centres on<br />
the Peruvian coast. After a tour of the ruins you<br />

hat is just one of the great features of the Palacio Nazarenas<br />
hotel. The rooms, the architecture, the decoration and the historic<br />
heritage make this the perfect place to stay if you are going to<br />
Cusco.<br />
Palacio Nazarenas was built by the Spanish in the 16th Century<br />
on the site of an Inca building, in a privileged part of Cusco known as the<br />
ceremonial centre. Many of the stones in the walls of the building were<br />
taken from ancient Inca buildings. One example is the Inca doorway –in<br />
the passage linking the old and new blocks– that was discovered during<br />
excavation work, carried out, like the restoration and refurbishing of the<br />
hotel, by professionals from the National Cultural Institute.<br />
To a very high standard, the hotel has two parts: one is the old convent<br />
–which once belonged to the Jesuits- their church, patios and colonial-era<br />
cloisters. The other was used as a kitchen garden and stables during the<br />
colonial period. This is the part that contains the suites.<br />
The suites measure 35 square metres to 130 square metres, but they<br />
seem bigger because of the high ceilings that were typical of the age in<br />
which the hotel was built. The ceilings of some suites are masterpieces<br />
of hand carving and painting, the colours of which have inspired the<br />
decoration of the entire hotel.<br />

El hotel, con un estándar muy alto de hospitalidad, tiene dos partes: una, el<br />
antiguo convento –de un periodo de los jesuitas–, su iglesia y sus patios de<br />
claustros coloniales. Y otra, el ambiente que hizo las veces de huerto, y los<br />
establos para los caballos del periodo colonial. Precisamente es esta la zona<br />
donde se han levantado las suites.<br />
Las suites tienen desde 35 hasta 130 metros cuadrados, las que lucen más<br />
espaciosas gracias a los techos altos, propios de la arquitectura ancestral. Los<br />
techos de algunas suites son obras maestras artesanales, hechos a mano,<br />
tallados en madera y pintados a colores, cuya paleta inspira la decoración de<br />
todo el hotel.<br />

presents Bossa Blues, a fusion of Brazilian<br />
rhythms and contemporary arrangements<br />

group consists of experienced musicians such as Elsa<br />
María Elejalde (vocals), Christian van Lacke (guitar and<br />
vocals), Jairo Zuleta (cajon and harmonica) and Sergio<br />
Flores (double bass).<br />
La Asociación Peruano Británica presenta Bossa Blues, un<br />
concierto acústico donde se fusionarán ritmos brasileños<br />
con arreglos contemporáneos usando en la percusión el<br />
cajón peruano. El grupo está integrado por experimentados<br />

29th of July), a concert in Lima's Main Square and great<br />
feasts throughout the whole country.<br />

aucartambo, 109 kilometres from Cusco, is<br />
a village of white houses with tiled roofs and<br />
turquoise-painted wooden balconies, home<br />
to one of the most picturesque festivities in<br />
the Peruvian Andes. It is a celebration led by twelve<br />
dancers paying homage to “Mamacha Carmen”, in return<br />
for protection and blessings. The fiesta starts with a<br />
rocket blast and a peal of bells heralding three days of<br />

he traditional district of Pacasmayo, in the<br />
northern Peruvian Department of La Libertad,<br />
will host the third Pacasmayo Classic 2012,<br />
one of the most important water sports<br />
competitions in the country. For ten days El Faro<br />
beach will be filled with the best international kitesurf,<br />
longboard, stand up paddle and windsurf practitioners,<br />
who will demonstrate their skills on the longest wave<br />
in the world. Competitors, grouped in three categories,<br />
will vie for the Waterman & Waterwoman Cups and a<br />
prize of three thousand dollars in each category. The<br />
championship will be surrounded by other events such<br />
as concerts, fashion shows, food fairs, a festival of folk<br />
dance and visits to nearby sites of historical interest.<br />

edición del Pacasmayo Classic 2012, una de las competencias<br />
acuáticas más importantes del país. Durante diez días la playa<br />
El Faro reunirá a los mejores deportistas internacionales de<br />
kitesurf, longboard, stand up paddle y windsurf para mostrar<br />
su destreza en la ola navegable más larga del mundo. Los<br />
competidores, agrupados en tres categorías, competirán por<br />
el título Waterman & Waterwoman Cup y un premio de 3<br />
mil dólares en cada una de las modalidades. Asimismo, el<br />
campeonato estará rodeado de otros eventos, como conciertos,<br />
desfiles de modas, ferias gastronómicas, festival de danzas<br />
típicas y visitas a centros arqueológicos.<br />
Paucartambo, a 109 kilómetros de la ciudad del Cusco, es<br />
un pueblo pequeño repleto de casitas blancas con techos de<br />
tejas y balcones de madera color turquesa, donde se lleva a<br />
cabo una de las más pintorescas fiestas de la sierra peruana.<br />
Se trata de una celebración liderada por doce bailarines<br />
que rinden devoción a la Mamacha Carmen a cambio de su<br />
protección y bendición. La fiesta se inicia con el estallido de<br />
un cohete y el repique de campanas para que luego, durante<br />
tres días, desfilen comparsas de diablos y coloridos personajes<br />
en una danza que no parece tener final.<br />

he Lima photography biennial ““ANOTHER PHOTOGRAPHY /<br />
OTHER PHOTOGRAPHS”, is the most important photographic<br />
event in Peru and takes place in the capital over a period of<br />
three months (until July). Organised by the Municipality of Lima<br />
and Centro de la Imagen, the event includes exhibitions by local and<br />
foreign photographers as well as talks and round table discussions.<br />

FOTOGRAFÍAS” es el evento de fotografía más importante del Perú<br />
y se realiza en la ciudad de Lima durante 3 meses. Organizada por la<br />
Municipalidad Metropolitana de Lima y el Centro de la Imagen, el evento<br />
cuenta con exposiciones de fotógrafos locales y extranjeros y realiza<br />
conversatorios y charlas magistrales. El país invitado para esta edición<br />
es España, que participa con dos muestras oficiales: “Arquitectura de<br />

oshiro Konishi came to Peru 37 years ago with a mission to teach<br />
traditional Japanese cooking to Peruvians together with famous chef Nobu<br />
Matsuhisa. Both were hired by a Peruvian “nisei” (second generation<br />
Japanese) who wanted to open the best Japanese restaurant in Latin America.<br />
Toshiro’s first idea was to return to Japan but after the restaurant opened Nobu went<br />
to Argentina and he was left in charge of the kitchen. So he stayed. Toshiro has since<br />
opened two restaurants: Wacó (1986-1990) and Toshiro´s (1991 to date), and has<br />
played a major role in the history of Japanese gastronomy in Peru.<br />

Toshiro Konishi llegó al Perú hace 37 años con la misión de enseñar la ancestral<br />
gastronomía japonesa a los peruanos de la mano de Nobu Matsuhisa, famoso<br />
chef. Ambos vinieron contratados por un “nisei” peruano (hijo de japoneses) que<br />
quiso hacer el mejor restaurante japonés de Latinoamérica. La idea de Toshiro<br />
era irse pero, tras abrir el local, Nobu viajó a Argentina y él se quedó a cargo de<br />
la cocina. Y se quedó. Toshiro desde entonces ha fundado dos restaurantes: Wacó<br />
(1986-1990) y Toshiro´s (1991-actualidad), y ha sido protagonista de la historia<br />
de la gastronomía japonesa en suelo peruano.<br />
What makes Peru special?<br />
Its history, its multiculturalism, the sea<br />
and its varied geography that provides<br />
an enormous variety of ingredients for<br />
the chef. It is also worth pointing out<br />
that Peru is a land of fishermen and<br />
farmers, not of hunters.<br />
In what way are Japanese and<br />
Peruvian food similar?<br />
Both have very good raw materials. In<br />
Japan we use different types of fish,<br />
cucumber, aubergines, etc. And the<br />
good thing about Peru: is one of the<br />
few countries where I have no problem<br />
finding ingredients.<br />
What are your favourite dishes from<br />
each region?<br />
Ceviche on the coast, crayfish chowder<br />
in the highlands and steamed paiche in<br />
the jungle.<br />
How important is the Amazon region<br />
to Peruvian gastronomy?<br />
Very. The jungle provides a lot of<br />
ingredients. Production is still small,<br />
but more cassava, palm hearts and so<br />
on are being grown.<br />
What are Peruvians like?<br />
Friendly, hard working and very<br />
knowledgeable about food.<br />
Do you agree that Lima is the<br />
gastronomic capital of Latin America?<br />
Not just Latin America but the whole<br />
of America. From Canada to Argentina,<br />
Peru has the best food.<br />
¿Qué hace especial al Perú?<br />
Su historia, su multiculturalidad, el mar<br />
y la versátil geografía que brinda una<br />
enorme variedad de materia prima para<br />
la cocina. Además es de resaltar que<br />
el Perú es una tierra de pescadores y<br />
agricultores, no de cazadores.<br />
¿En qué se parecen la comida<br />
japonesa y la peruana?<br />
En que ambas tienen muy buena<br />
materia prima. En Japón se usan<br />
muchos tipos de pescados, pepinos,<br />
berenjenas, etc. Y lo bueno del Perú:<br />
es uno de los pocos países con los que<br />
no tengo problema para encontrar<br />
ingredientes.<br />
¿Cuáles son tus platos favoritos de<br />
cada región?<br />
Ceviche en la costa, el chupe de<br />
camarones en la sierra y paiche al<br />
vapor en la selva.<br />
¿Qué tan importante es la Amazonía<br />
en la gastronomía del Perú?<br />
Mucho. La selva proporciona<br />
muchísimos ingredientes. Todavía la<br />
producción no es muy grande, pero ya se<br />
está cultivando más yuca, palmito, etc.<br />
¿Cómo es el peruano?<br />
Amigable, trabajador y gran crítico de<br />
comida.<br />
¿Está de acuerdo con que Lima es<br />
la capital gastronómica de América<br />
Latina?<br />
No solo de América Latina sino de toda<br />
América. Desde Canadá hasta Argentina,<br />
el Perú tiene la mejor comida.<br />
