El rey de la Sierra<br />

With more than 35 varieties, maize is a classic of<br />

Peruvian cuisine. This grain comes in different sizes<br />

and colours, it is eaten all over the country and is a<br />

classic of the daily diet. Purple maize is used to make<br />

chicha morada, a delicious refreshing drink. We eat<br />

the giant sweet corn fromç Cusco with cheese. On<br />

its own, held at the ends and eaten with butter. In<br />

ceviche, it is eaten grain by grain.<br />

Con más de 35 tipos, el choclo es uno de los engreídos de<br />

la cocina peruana. De diferentes tamaños y colores, este<br />

grano se consume en todo el país y es componente clásico<br />

de la dieta diaria. Del maíz morado hacemos chicha<br />

morada, un delicioso refresco. El choclo gigante del Cusco<br />

lo comemos con queso, solo o con mantequilla, sujetándolo<br />

de los extremos y dándole mordiscos. En el ceviche, lo<br />

saboreamos grano por grano.<br />
