oshiro Konishi came to Peru 37 years ago with a mission to teach<br />
traditional Japanese cooking to Peruvians together with famous chef Nobu<br />
Matsuhisa. Both were hired by a Peruvian “nisei” (second generation<br />
Japanese) who wanted to open the best Japanese restaurant in Latin America.<br />
Toshiro’s first idea was to return to Japan but after the restaurant opened Nobu went<br />
to Argentina and he was left in charge of the kitchen. So he stayed. Toshiro has since<br />
opened two restaurants: Wacó (1986-1990) and Toshiro´s (1991 to date), and has<br />
played a major role in the history of Japanese gastronomy in Peru.<br />

Toshiro Konishi llegó al Perú hace 37 años con la misión de enseñar la ancestral<br />
gastronomía japonesa a los peruanos de la mano de Nobu Matsuhisa, famoso<br />
chef. Ambos vinieron contratados por un “nisei” peruano (hijo de japoneses) que<br />
quiso hacer el mejor restaurante japonés de Latinoamérica. La idea de Toshiro<br />
era irse pero, tras abrir el local, Nobu viajó a Argentina y él se quedó a cargo de<br />
la cocina. Y se quedó. Toshiro desde entonces ha fundado dos restaurantes: Wacó<br />
(1986-1990) y Toshiro´s (1991-actualidad), y ha sido protagonista de la historia<br />
de la gastronomía japonesa en suelo peruano.<br />
What makes Peru special?<br />
Its history, its multiculturalism, the sea<br />
and its varied geography that provides<br />
an enormous variety of ingredients for<br />
the chef. It is also worth pointing out<br />
that Peru is a land of fishermen and<br />
farmers, not of hunters.<br />
In what way are Japanese and<br />
Peruvian food similar?<br />
Both have very good raw materials. In<br />
Japan we use different types of fish,<br />
cucumber, aubergines, etc. And the<br />
good thing about Peru: is one of the<br />
few countries where I have no problem<br />
finding ingredients.<br />
What are your favourite dishes from<br />
each region?<br />
Ceviche on the coast, crayfish chowder<br />
in the highlands and steamed paiche in<br />
the jungle.<br />
How important is the Amazon region<br />
to Peruvian gastronomy?<br />
Very. The jungle provides a lot of<br />
ingredients. Production is still small,<br />
but more cassava, palm hearts and so<br />
on are being grown.<br />
What are Peruvians like?<br />
Friendly, hard working and very<br />
knowledgeable about food.<br />
Do you agree that Lima is the<br />
gastronomic capital of Latin America?<br />
Not just Latin America but the whole<br />
of America. From Canada to Argentina,<br />
Peru has the best food.<br />
¿Qué hace especial al Perú?<br />
Su historia, su multiculturalidad, el mar<br />
y la versátil geografía que brinda una<br />
enorme variedad de materia prima para<br />
la cocina. Además es de resaltar que<br />
el Perú es una tierra de pescadores y<br />
agricultores, no de cazadores.<br />
¿En qué se parecen la comida<br />
japonesa y la peruana?<br />
En que ambas tienen muy buena<br />
materia prima. En Japón se usan<br />
muchos tipos de pescados, pepinos,<br />
berenjenas, etc. Y lo bueno del Perú:<br />
es uno de los pocos países con los que<br />
no tengo problema para encontrar<br />
ingredientes.<br />
¿Cuáles son tus platos favoritos de<br />
cada región?<br />
Ceviche en la costa, el chupe de<br />
camarones en la sierra y paiche al<br />
vapor en la selva.<br />
¿Qué tan importante es la Amazonía<br />
en la gastronomía del Perú?<br />
Mucho. La selva proporciona<br />
muchísimos ingredientes. Todavía la<br />
producción no es muy grande, pero ya se<br />
está cultivando más yuca, palmito, etc.<br />
¿Cómo es el peruano?<br />
Amigable, trabajador y gran crítico de<br />
comida.<br />
¿Está de acuerdo con que Lima es<br />
la capital gastronómica de América<br />
Latina?<br />
No solo de América Latina sino de toda<br />
América. Desde Canadá hasta Argentina,<br />
el Perú tiene la mejor comida.<br />
