The finely tapered edge that can bend<br />

when coming in contact with a bone or a<br />

hard cutting surface is straightened with<br />

a sharpening steel. The knife is carefully<br />

placed on the steel and pulled across on<br />

alternating sides with light pressure and<br />

with the spine first (important!). This<br />

straightens the bent edge and refreshes<br />

the knife’s cutting power.<br />

The steel should not be confused with<br />

its similar half-brother, the rod sharpener.<br />

Though they look very similar, the<br />

difference is that the rod sharpener is<br />

made with abrasive materials, such as<br />

ceramic, synthetic ruby or diamondcoated<br />

steel. Since these rods are used<br />

for sharpening, they are also handled<br />

differently.<br />

Perfect for quick touch-up sharpening,<br />

the sharpener is used by pulling the<br />

knife along the rod, edge first, until the<br />

desired level of sharpness is reached.<br />

Unlike the steel, the rod sharpener does<br />

take material off the edge; this is a true<br />

sharpening process. You need to know<br />

that neither of the two tools is suitable<br />

for replacing the function of the other.<br />

ARKANSAS OIL STONES – The oil stones by RH Preyda<br />

are hand-hewn in Hot Springs in the Ouachita Mountains<br />

in Arkansas, the world’s only deposit of these stones.<br />

The unique micro-crystalline structure makes Arkansas oil<br />

stones extremely durable. Unlike other whetstones, the<br />

oil stones never need to be trued or planed. The stones<br />

consist of Novaculite, based on 99.9% pure silicon that<br />

possesses its unmatched sharpening properties only in<br />

this particular configuration. Depending on the quality of<br />

the stone, the sharpening properties range from coarse<br />

to ultra-fine, which should satisfy even the most sophisticated<br />

users. The sharpening oil is completely non-toxic<br />

and food-safe (USDA approved), so that the stones can be<br />

used even for knives used in food preparation. Arkansas<br />

oil stones are not classified by grit but by density; the<br />

denser the stone, the finer the edge.<br />

1 – 5 B<strong>EN</strong>CH STONES – The classic bench stones<br />

are available in all 5 grades in two different sizes, to<br />

satisfy all sorts of knife and tool sharpening needs. The<br />

smaller sized stones are 6” x 2” x ½” , while the larger<br />

stones are 10” x 2” x ½”, and thus offer significantly<br />

more work space, especially for larger knives. Available<br />
