SHARPENING (CONTINUED)
The finely tapered edge that can bend
when coming in contact with a bone or a
hard cutting surface is straightened with
a sharpening steel. The knife is carefully
placed on the steel and pulled across on
alternating sides with light pressure and
with the spine first (important!). This
straightens the bent edge and refreshes
the knife’s cutting power.
The steel should not be confused with
its similar half-brother, the rod sharpener.
Though they look very similar, the
difference is that the rod sharpener is
made with abrasive materials, such as
ceramic, synthetic ruby or diamondcoated
steel. Since these rods are used
for sharpening, they are also handled
differently.
Perfect for quick touch-up sharpening,
the sharpener is used by pulling the
knife along the rod, edge first, until the
desired level of sharpness is reached.
Unlike the steel, the rod sharpener does
take material off the edge; this is a true
sharpening process. You need to know
that neither of the two tools is suitable
for replacing the function of the other.

ARKANSAS OIL STONES – The oil stones by RH Preyda
are hand-hewn in Hot Springs in the Ouachita Mountains
in Arkansas, the world’s only deposit of these stones.
The unique micro-crystalline structure makes Arkansas oil
stones extremely durable. Unlike other whetstones, the
oil stones never need to be trued or planed. The stones
consist of Novaculite, based on 99.9% pure silicon that
possesses its unmatched sharpening properties only in
this particular configuration. Depending on the quality of
the stone, the sharpening properties range from coarse
to ultra-fine, which should satisfy even the most sophisticated
users. The sharpening oil is completely non-toxic
and food-safe (USDA approved), so that the stones can be
used even for knives used in food preparation. Arkansas
oil stones are not classified by grit but by density; the
denser the stone, the finer the edge.
1 – 5 BENCH STONES – The classic bench stones
are available in all 5 grades in two different sizes, to
satisfy all sorts of knife and tool sharpening needs. The
smaller sized stones are 6” x 2” x ½” , while the larger
stones are 10” x 2” x ½”, and thus offer significantly
more work space, especially for larger knives. Available
