Double Boiled Herbal Black Chicken Soup<br />

1-2 Servings<br />

Using The Philips All-In-One Cooker Slow Cooker<br />

Preparation Time: 10 minutes<br />

Cooking Time: 4-6 Hours<br />

Conventional Cooking: 3 Hours<br />

INGREDIENTS<br />

• 1 small (350g) black chicken, cleaned<br />

with head and feet removed, then blanched<br />

• 4 pieces (1g) angelica root (dang gui)<br />

• 1 piece (1g) licorice root (gan cao)<br />

• 4 pieces (1g) Sichuan lovage root (chuan xiong)<br />

• 2 pieces (2g) Codonopsis pilosula (dang shen)<br />

• 2 pieces (4g) Chinese yam (huai shan)<br />

• 3 pieces (6g) Solomon’s seal rhizome (yu zhu)<br />

• ½ tbsp goji berries (gou zi)<br />

• 2 cups hot water<br />

• Salt to taste<br />

ADDITIONAL UTENSILS<br />

• 1-litre ceramic double boiler<br />

CONVENTIONAL METHOD<br />

1. Add the chicken, herbs and hot water into the double<br />

boiler. Cover with the cap.<br />

2. Place the double boiler on a steam tray in alrge pot.<br />

3. Pour in enough water until the level is half of the<br />

double boiler.<br />

4. Cover the pot and bring to a boil. Then, turn the heat<br />

down to low and simmer for 3 hours.<br />

5. When done, carefully remove the double boiler from<br />

the pot.<br />

6. Season the soup with salt. Serve hot.<br />

Sara's Tip<br />

For convenience, find a herbalist at a Chinese herbal shop<br />

to pack the herbs for you. You can also buy prepacked<br />

herbs from the supermarket.<br />

Black chicken is thought to be especially potent. Along with<br />

Chinese herbs, it is double-boiled in a Chinese ceramic<br />

double boiler. This way, nutrients are believed to be slowly<br />

released into the soup while retaining its essence. This<br />

traditional herbal preparation helps relieve tiredness.<br />
