ACT I: SCOUT COFFEE<br />

Owners Jon and Sarah Peterson have set up a coffee cupping<br />

(aka tasting) for me, and the mood is serious. Jon shows me a<br />

chart on his iPhone that represents roasting heats for coffee<br />

beans at Scout’s proprietary roastery, HoneyCo. He seems<br />

very excited.<br />

Sarah looks at me and smiles. “Jon is all about gizmos<br />

and gadgets.”<br />

Though they work hard to keep Scout approachable, the<br />

Petersons admit they are giant coffee geeks; Sarah was once<br />

a finalist at the U.S. Barista Championship, and Jon has<br />

traveled worldwide to farms that supply his beans. (Sarah is<br />

also a legit baker, responsible for the popularity of Scout’s<br />

pastry selection.)<br />

Like so many modern coffee drinkers, the Petersons favor<br />

a light roast with nuanced aromas and flavors. To that end,<br />

Scout offers pour-over coffee to protect the integrity of the<br />

bean and the roast. Though quality doesn’t come cheap, Jon<br />

puts it all in perspective.<br />
