Death by chocolate
Salted caramel dark chocolate
fondant
Smooth, salted caramel sauce oozing from a
rich dark chocolatey dome? Oh yes, please!
This is the most indulgent, beautiful chocolate
fondant ever. To save time, you can buy the
salted caramel sauce, but if you are so inclined,
feel free to make homemade. Either way, this
treat will hit the spot.
Ingredients
• 150g unsalted butter
• 1 heaped tbs cocoa
• 175g 70% dark chocolate
• 3 large eggs, plus 2 yolks
• 150g caster sugar
• 150g plain flour, sifted
• 6 heaped tsp salted caramel sauce.
Directions
1. Brush 6 175ml metal pudding ramekins
with melted butter.
2. Add 2 teaspoons of the
cocoa to one of the basins,
and turn to coat the
inside. Tip the cocoa into the next ramekin
and repeat until all are evenly coated.
3. Melt the chocolate and butter in a bowl
placed over a pan of simmering water. Ensure
no water gets into the bowl or the chocolate,
as it will seize. Set aside to cool.
4. Meanwhile, whisk the eggs, yolks and sugar
for about 5 to 10 minutes.
5. Whisk in the cooled chocolate and butter
mixture.
6. Fold in the flour and sea salt. Divide 1/3 of
the mixture among the ramekins.
7. Add 1 teaspoon of salted caramel to the
centre of each. Top with the remaining
chocolate mixture.
8. Preheat the oven to 200°C (180°C fan)
9. Place the bowls on a baking tray and bake
for around 10 minutes, until firm around the
edges and squishy in the centre.
10. Turn the puddings out onto plates,
dust with icing sugar, scatter a few
caramelised almonds over the top and
serve warm with delicious
vanilla ice cream and
a drizzle of extra
caramel sauce.
