uitruil van idees rondom kuns, kultuur,<br />

en die samelewing deur verbintenisse<br />

met ander nasionale en internasionale<br />

kreatiewe gemeenskappe. Die<br />

Vrystaat Kunstefees se omvangryke<br />

artistieke aanbod vir vanjaar sluit<br />

van vlagskipproduksies in Afrikaans,<br />

Engels en Sotho in, tot musiek,<br />

eksperimentele dans, visuele kuns,<br />

lewende kuns, klankkuns en kunsvlyt<br />

The kitchen is Bianka’s holy ground. It’s<br />

behind the stove where she lives out<br />

her passion, finds her inner creative<br />

force and creates meals that’ll both<br />

surprise and satisfy your taste buds.<br />

Bianka recently launched her own<br />

catering company, Butter & Glaze<br />

Catering, located at Memories 4 Ever<br />

function venue. As the youngest of<br />

three children and raised by only<br />

her father, Bianka has always had<br />

wonderful examples of how to work<br />

hard and follow her dreams. Bianka’s<br />

mom passed away due to cancer<br />

when she was only 5 months old,<br />

and she’s heard about the tales of<br />

her mom’s amazing cooking and<br />

love for food. She studied Hospitality<br />

Management at the CUT’s Hotel<br />

School, and obtained her diploma in<br />

2017. She worked at the Conrad Pezula<br />

Resort Hotel and Spa in Knysna, where<br />

she learnt many wonderful things.<br />

“This was a great learning experience<br />

for me and also where I came to the<br />

realisation that I want to be a business<br />

owner. I subsequently enrolled for<br />

the BTech Hospitality Management<br />

Degree. The degree was conferred<br />

upon me in 2018.”<br />

Long story short… Bianka was<br />

afforded the opportunity to enter<br />

into a partnership with the owner<br />

of the beautiful venue Memories 4<br />

Ever, Henrihet Human. “While I was<br />

studying, I catered for her a few times,<br />

therefor she knew my passion lies in<br />

food. She offered me a wonderful deal:<br />

I would work from the venue, running<br />

my own company, but the functions<br />

at Memories 4 Ever would have first<br />

priority.<br />

“I always said to my friends that one<br />

day I would like to have my own<br />

coffee shop and catering business. My<br />

dream came true a lot earlier than I<br />

had expected. We are still working on<br />

starting a coffee shop. Being so young,<br />

these opportunities do not come<br />

often. I am very excited to grow with<br />

Memories 4 Ever in the business side<br />

and also to have Henrihet since she is<br />

so inspirational and a mentor for me.<br />

We work very well together.”<br />

The idea Bianka has for Butter & Glaze<br />

is to be different, but in a manner that<br />

is refreshing and that will still sit well<br />

with people’s palettes. She happily<br />

trades traditional “pampoenkoekies” for<br />

a delicious pumpkin cheesecake, and<br />

she doesn’t sacrifice freshness for taste.<br />

“I always start prepping as close to<br />

the function day as possible to always<br />

serve the freshest food.”<br />

Her interest in the culinary world<br />

has been with her since she can<br />

remember. “Since I grew up without<br />

a mother, my dad always made the<br />

easiest dishes for us. From Bovril<br />

sandwiches to macaroni with soup<br />

powder, but for us it was heaven. We<br />

were invited to dinner parties often<br />

and it was so amazing to taste the<br />

food made by other people. I learned<br />

that there are so many flavours out<br />

there to experience.” She remembers<br />

baking cakes with her grandmother on<br />

their farm, and regularly dreamt about<br />

different flavour combinations, which<br />

she would test the next morning.<br />

“I was told so many stories about my<br />

mother and how much she loved to<br />

cook, her recipe book collection also<br />

gave it away. She also wanted to own<br />

her own coffee shop and part of Butter<br />

& Glaze is to honour her.”<br />

For Bianka, creating beautiful, delicious<br />

food is art. “I like to think of a plate as a<br />

blank canvas and using the food items<br />

that I make to colour in the plate. It is<br />

calming and knowing that I can think<br />

outside the box is very satisfying to<br />

me.”<br />

She focuses on French cuisine, mainly<br />

because of her love for… butter! “The<br />

French use clarified butter in their<br />

cooking and since I studied French<br />

cuisine, my love for it grew. I think<br />

of French cuisine as a romantic style<br />

of cooking, using a lot of different<br />

flavours.”<br />

In her quest to start her own business<br />

at such a young age, Bianka has learnt<br />

to be strong. “My kitchen assistant,<br />

Willa Greyling, and I, sometimes work<br />

till midnight to get all our dishes done.<br />

This is still fun but can take a toll on<br />

your body. We encourage each other<br />

to be strong and to keep going.”<br />

Bianka’s signature dishes include:<br />

Her melktert cake, “It’s a perfect<br />

combination between classic milk<br />

tart, cinnamon and vanilla cake.” Her<br />

chocolate carrot cake, “It’s a carrot<br />

cake base that has more carrots in the<br />

dough than flour… with a chocolate<br />

cheesecake filling.” And her cheesecake,<br />

in any way, shape or form, “Whether it<br />

be savoury or sweet, there are so many<br />

flavours to experiment with.”<br />

Her knowledge of fitness nutrition<br />

stemmed from her mother’s path with<br />

cancer (she had cancer while pregnant<br />

with Bianka), and Bianka’s subsequent<br />

diagnosis of Irritable Bowl Syndrome.<br />

“Diet and lifestyle are very important<br />

in this regard as I get very sick when<br />

I don’t eat according to my lifestyle.<br />

Preparing food in a healthy way is<br />

delicious. Since my options are limited<br />

to certain food items, I really enjoy<br />

‘n Plaaslike avonturier, Kobus Robbertze, het die tog van sy lewe aangedurf – in die lugruim<br />

al om Suid-Afrika se kuslyn.<br />

Daar is min avonture wat buite bereik is vir iemand so waaghalsig en groothartig<br />

soos Kobus (46). Alles wat hy aanpak vir liefdadigheid is gevaarlik, buitengewoon<br />

en net eenvoudig vreesaanjaend. ‘n Paar jaar gelede het hy stoksielalleen<br />

met sy rugsak en tent op sy rug ‘n fietstoer rondom Lesotho aangedurf ter<br />

fondsinsameling en bewusmaking van Kindersorg.<br />

Hierdie keer het Kobus besluit om vir sowat 2 500 km langs die land se kuslyn<br />

te vlieg met ‘n paramotor. ‘n Paramotor is amper soos ‘n paraglider, net met ‘n<br />

petrolaangedrewe motor. Sy tog van Alexanderbaai tot by Kosibaai het ‘n maand<br />

geduur. Hy het dit saam met ‘n goeie vriend, Joe Pelser, aangepak. “Vlieg is iets wat<br />

ek nog altyd wou doen. Ek het onmiddellik na my Lesotho-fietstoer geweet dat ek<br />

volgende ‘n vliegavontuur gaan aanpak.”<br />

Kobus het ‘n kursus voltooi om sy paramotor-vlieglisensie te bekom. Met bittermin<br />

ervaring en vliegtyd agter die blad, het Kobus en Joe die avontuur van ‘n leeftyd<br />

aangepak. “Die grootste uitdaging van ‘n vliegtog soos hierdie, is dat jy geheel en al<br />

uitgelewer is aan die elemente. Daar is só baie goed waaroor jy nie beheer het nie,<br />

soos sterk wind, reën, motorprobleme… Jy kan hoog in<br />

die lug vlieg bo-oor ‘n gebied waar jy nie kan land nie<br />

en ‘n ‘motor-out’ beleef. Wat maak jy dan? Waar land jy?”<br />

En so wrintie – dit het tweemaal met Kobus gebeur. Sy<br />

motor het bo in die lug gestol, en hy moes noodlandings<br />

uitvoer. Gelukkig was dit op gebiede waar hy kon land,<br />

maar die wete in sy agterkop dat hy konstant uitgelewer<br />

was aan genade, het soms aan sy senuwees geknaag.<br />

Om met ‘n paramotor op jou rug op te styg, is geen<br />

maklike taak nie. “Jy moet voluit hardloop en die motor<br />

met jou hand aan ‘n beheerpunt beheer. Wanneer jy<br />

genoeg weerstand onder die valskerm het, kan jy opstyg.<br />

Dis nie grappies om so vinnig met ‘n 30 kg-motor op jou<br />

rug te hardloop nie…”<br />

Die skoonheid wat Kobus vanuit die lug ervaar het, is<br />

vir hom moeilik om in woorde om te sit. “’n Mens het<br />

‘n 270° onbelemmerde uitsig vanuit die lug. Die gevoel<br />

is onbeskryflik. ‘n Mens voel vry, gelukkig en vol vrede<br />

bo in die lug.” Een van die mooiste vlugte wat Kobus<br />

beleef het, was toe hy oor Knysna en Muisbosskerm<br />

aan die Weskus kon afkyk en die skoonheid van die<br />

natuur ervaar. Oral waar hulle geland het, het hulle eeten<br />

slaapplek gesoek – en gekry. “Dit is seker iets wat my die meeste verbaas het…<br />

mense se absolute vriendelikheid en gasvryheid. In die Weskus is ons veral met<br />

ope arms en harte ontvang. Ons het by vreemde mense in hul huise oornag en<br />

blywende vriendskappe gesmee.”<br />

Om ‘n toer van hierdie aard te voltooi, was vir Kobus baie meer geestelik uitputtend<br />

as sy Lesotho-fietstoer. “Dit was minder hard op my liggaam, maar my kop moes<br />

sterk wees. ‘n Mens vrees mos maklik dat iets kan skeefloop – daar is tye wat jy weet<br />

as jy hier val, gaan jy dit nie maak nie.” Na aanleiding van Fly for a Dream het Kobus<br />

saam met vliegvriende die Bloemfontein Paramotor Club gestig, waar daar gereeld<br />

gevlieg en gekuier word.<br />

Winter means lots of sniffles, coughs and warm chicken soup. Read here for MomDoc Dr<br />

Chantelle van der Bijl’s insights into kids’ coughs, and look on the next page on the best places to<br />

seek medical help.<br />

Coughing is a healthy and important<br />

reflex, as it removes mucous and lets air<br />

flow more easily into the lungs.<br />

A cough can often get worse when<br />

a child is lying down, because the<br />

mucous can collect at the back of<br />

the throat. They tend to swallow the<br />

mucous, rather than spit it out as an<br />

adult would, which can cause an upset<br />

stomach or nausea.<br />

There are four types of cough: dry,<br />

wet, croup, and whooping cough. It is<br />

important to know what type of cough<br />

your child has, so as to know how to<br />

treat it or when to seek medical help.<br />

Dry Cough<br />

A dry cough is often caused by a viral<br />

or bacterial infection of the upper<br />

respiratory tract (nose and throat). It<br />

may also be an early sign of a lower<br />

respiratory tract infection, like bronchitis<br />

or pneumonia. Another cause might be<br />

asthma. It first appears as a dry nighttime<br />

cough, and wheezing (whistling)<br />

may be heard with breathing. Avoid<br />

irritants, allow the child to breathe cold<br />

air and avoid exercise.<br />

Wet Cough<br />

A wet cough is caused by mucous<br />

found in the lower respiratory tract.<br />

Common causes include viral or<br />

bacterial infections and asthma. The<br />

cough removes fluid from the lower<br />

respiratory tract and opens airways.<br />

Croup Cough<br />

Croup is a viral infection that causes a<br />

harsh, barking, dry cough. Croup causes<br />

a swollen upper trachea (windpipe),<br />

beneath the vocal cords, causing the<br />

barking cough. Often a child with<br />

croup may make a high-pitched sound<br />

when breathing in or out, called stridor.<br />

This is treatable with oral steroids and<br />

adrenalin nebulisation administered by<br />

your doctor.<br />

Whooping Cough (Pertussis)<br />

A child with Pertussis will have<br />

symptoms of the common cold, but<br />

gradually the cough worsens, with<br />

severe coughing fits in rapid succession,<br />

especially at night. After coughing, the<br />

child takes a deep breath, causing a<br />

“whooping” sound. This causes difficulty<br />

breathing and cyanosis (blue lips and/<br />

or fingers), because of a shortage of<br />

oxygen, and can prove fatal. Pertussis<br />

can be prevented by vaccination.<br />

Beat the cough<br />

General recommendations for coughing<br />

include: drinking plenty of fluids, as<br />

this will prevent the mucous from<br />

thickening, and putting a humidifier in<br />

their room as it reduces coughing.<br />

Cough medicines have not been<br />

proven to be that effective. There<br />

are two types of cough medicines:<br />

Expectorants, which help loosen<br />

mucous and is good for a wet cough;<br />

and cough-suppressants, which inhibit<br />

the cough reflex for a dry cough,<br />

especially during sleep. Do not give it<br />

for a wet cough as the mucous needs to<br />

be expelled. They shouldn’t be given to<br />

children under 1 year of age.<br />

Tiny garden tricks<br />

If your garden is on the small side, or you only have a patio to work with, fear not! Read on for<br />

the perfect patio and small garden plants and inspiration<br />

We’re planting…<br />

Petunia ‘Lightning Sky’ the latest in novelty petunias that is very hard to ignore.<br />

The speckled and starred yellow and red-velvet petals sparkle like a firework display.<br />

Each bloom is different, and the cooler days and nights bring out the markings.<br />

Like the other novelty petunias, the flowers are single, with compact, neat growth<br />

that suits smaller gardens, and spill out of containers and hanging baskets. Plants<br />

can double-up as in indoor flower arrangement for a day or two before being<br />

planted outdoors. They like full winter sun, well-drained soil, regular watering and<br />

fertiliser once a month to ensure an endless supply of flowers. The other showy<br />

petunias in the novelty range are the blue shaded ‘Night Sky’, and ‘Ink Splash’ with<br />

‘Baby Doll’ being pink and white.<br />

Maritsa en Maradine Whitehorn kook saam, lag saam en lééf saam.<br />

Dié dinamiese paar het onlangs ‘n enig-in-sy-soort restaurant, wat<br />

oorloop van vreugde en heerlike kos, oopgemaak.<br />

‘n Kuier in die Whitehorns se kombuis is besig, lawaaierig en pret. Daar word<br />

pasta gemaak, koffie gedrink en geklets. Maritsa en Maradine was een van die<br />

gunstelingpare op die M-Net realiteitsreeks My Kitchen Rules in 2017. Hulle is al vir<br />

vyf jaar getroud en kook saam vandat hulle mekaar ken.<br />

Hul kosse is ‘n mengsel van oudtydse boerekos (Maritsa se gunsteling) en<br />

kontemporêre, unieke smake en teksture (Maradine se afdeling). “Ons sal<br />

byvoorbeeld ‘n skaapboud maak soos van ouds, maar dit dan voorsit met ‘n<br />

verrassing-sous en die elemente uniek rangskik. ‘n Mens eet met jou oë voordat jy<br />

dit proe,” sê Maradine.<br />

Saam-saam kook Maritsa en Maradine al vir jare lank, sommer so by die huis, en<br />

ook amptelik onder #MSquareCooking. Hulle het gereeld spyseniering vir privaat<br />

partytjies gedoen – sommiges by hul eie huis en ander kere by die kliënt se huis.<br />

Maar wat byna beter is as die heerlike kos wat hulle bedien, is om dié twee duifies<br />

in aksie in die kombuis te beleef. Hulle gesels, proe, lag, stry en lag nog ‘n bietjie.<br />

Dit is hierdie bestanddele wat die kos ekstra lekker laat proe.<br />

Met hulle uiteenlopende kookstyle, vul hulle mekaar perfek aan. “Maritsa het die<br />

wêreld se geduld as dit kom by kos. Sy hou daarvan om vleis vir ure lank te kook<br />

totdat dit sag en perfek is,” sê Maradine. Maritsa voeg by: “En Maradine bring die<br />

teatrale element na die tafel. Die ‘wow factor’. Sy volg trends en probeer konstant<br />

nuwe idees om smake te kombineer en die kos voor te sit.”<br />

Hul nuwe restaurant, wat in Dan Pienaar in die plek van die ou Marmeladerestaurant<br />

en Tony Peng se zAR lab is, is vars en nuut in Bloemfontein. Die<br />

naam, Seisoen, is gebaseer op die idee dat hulle seisoenaal kook, met vars<br />

bestanddele wat in seisoen is. Hul spyskaart gaan elke drie maande verander om<br />

by hierdie gier in te pas. Dit dui ook op die nuwe seisoen in hul lewe, waaroor<br />

hulle opgewonde is. Maritsa het kort voor die opening van die restaurant haar<br />

werk as bedryfsbestuurder by die iStore bedank. Hulle gaan saam-saam die<br />

restaurant bedryf en self alle disse konsepsualiseer en maak. Elke druppel verf,<br />

teël, muurbehangsel en koppie is ook noukeurig deur hulle uitgesoek om aan<br />

die restaurant ‘n kontemporêre, dog huislike gevoel te gee. “Dit gaan lang ure<br />

en harde werk wees, en ons gaan soms hare op ons tande moet hê. Maar ons<br />

het nog altyd vir mekaar gesê: die oomblik wanneer kosmaak nie meer vir<br />

ons lekker is nie, moet ons dit los. Dis in ons wese, in ons harte… dis wie ons<br />

beesstert te maak, gaan ons dit teen die muur skryf sodat ons gaste weet wat<br />

is die dis van die dag.” Uit die aard van hulle persoonlikhede, gaan dié twee ook<br />

vir seker nie agter toe kombuisdeure wees nie. “Ons is lief vir mense, en ons wil<br />

graag hulle terugvoer hê oor ons kos. Ons kan net daarop verbeter. En dit moet<br />

voel asof hulle by hul familie kom kuier as hulle by ons kom eet! Ons hóú van<br />

gesels,” sê Maradine.<br />

‘n Ry plante, groente en kruie aan die voorkant van die restaurant is ook daar<br />

om gebruik te word in die kombuis. “Ons glo in volhoubaarheid en ‘top to<br />

tail cooking’, wat beteken dat ons niks wil mors nie. Alles moet gebruik word,”<br />

verduidelik Maritsa.<br />

Maritsa en Maradine is albei plaasmeisies. Maritsa het op ‘n plaas by Dordrecht in<br />

die Oos-Kaap grootgeword, en Maradine net buite Bloemfontein. Daar het hulle<br />

‘n liefde vir kosmaak ontwikkel, en ook ‘n groot begrip van die boerderyproses.<br />

“Ons wil ou gunstelinge met ‘n nuwe aanslag na Bloemfontein bring. Ons kos<br />

val onder geen genre nie – ons maak waarvan ons hou en hoop ander sal ook<br />

daarvan hou,” sê Maradine.<br />

Gaan loer aanlyn<br />

roomkaasvulsel en<br />

tamatiesousresep.<br />

Ons het dit geproe - dit<br />

is watertand!<br />

tuisgemaakte pasta:<br />

1 koppie meel; 1 eier; knippie sout; 15 ml water, plus ekstra indien nodig.<br />

Gooi koppie meel in ‘n hopie op kombuistafel. Maak met jou vinger ‘n holte in die<br />

middel. Gooi ‘n knippie sout daarin. Kraak die eier oop en plaas in die holte van<br />

meel. Gebruik ‘n vurk om die eier liggies deur die meel te roer.<br />

Meng verder alles met jou hande en voeg water by. Dit sal ‘n deeg vorm. As daar<br />

nog water nodig is, gooi druppel vir druppel by totdat dit ‘n stewige deeg vorm.<br />

Knie vir 5 minute. Die deeg moet elasties en ferm wees. Bedek met kleefplastiek en<br />

laat rus in yskas vir 20 min.<br />

Deel dan die deeg in twee. Strooi ‘n bietjie meel oor die oppervlak van die tafel en<br />

rol die deeg plat met ‘n koekroller. Rol dan die deeg deur ‘n pastamasjien tot die<br />

dunste moontlike vel. Plaas op tafel en strooi meel bo-oor. Vat die tweede bol deeg<br />

en doen dieselfde.<br />

Sny die pasta in repies deur die masjien en meng met ‘n bietjie meel sodat dit nie<br />

aan mekaar plak nie.<br />

Kook pasta in soutwater op die stoof tot gaar.<br />

Sampioene:<br />

400 g sampioene; 4 eetlepels botter; 15 ml olyfolie; Halwe teelepel vars tiemie;<br />

halwe teelepel vars roosmaryn; sout en pepper.<br />

Gooi olyfolie in pan. Braai die sampioene, roosmaryn en tiemie daarin. Gooi sout en<br />

peper by na smaak. Roer die botter by. Voeg die gaar pasta by en meng.<br />

The avocado is without a doubt one of nature’s most luxurious<br />

foods: rich and creamy and subtly-flavoured. Plus side: it’s also<br />

super healthy. Here are eight reasons why we’re loving avo.<br />

Try this:<br />

Warm winter avo salad<br />

With… Tenderstem broccoli, avocado<br />

and bacon dressed with warm anchovy<br />

butter<br />

150 g streaky bacon<br />

230 g tenderstem broccoli, blanched<br />

1 – 2 avocados, pitted and peeled<br />

A handful baby spinach, for serving<br />

A handful microgreens, for serving<br />

8 anchovy fillets, finely chopped<br />

100 g butter<br />

4 garlic cloves, finely grated<br />

1 lemon, juiced<br />

Preheat the oven to 200°C. Bake streaky<br />

bacon until crisp. Arrange on a plate<br />

with blanched Tenderstem broccoli,<br />

the flesh of avocados, baby spinach<br />

and a few microgreens. Finely chop<br />

anchovy fillets, then melt in a pan with<br />

butter and finely grated garlic cloves<br />

over a low heat. When all the butter has<br />

melted, add the juice of 1 lemon and<br />

whisk. Spoon liberally over the salad<br />

while still warm.<br />

Published in The American Journal of Clinical Nutrition 1, a 2018 study found<br />

that those who eat avocados (compared to those who follow an avo-free<br />

diet) had higher levels of good HDL cholesterol. This is likely due to the high<br />

amount of heart-healthy monounsaturated fat found in avos. Avos are also<br />

naturally cholesterol-free, an added bonus in heart health.<br />

For Healthy Blood Pressure<br />

It’s a double-win for blood pressure when eating avos. Firstly, avocados<br />

contain potassium, a mineral that, when included as part of healthy diet,<br />

contributes to normal blood pressure. In addition, avocados are also<br />

naturally free from sodium, which we know, may increase the risk of high<br />

blood pressure if consumed in excess.<br />

For the Eyes<br />

Published in the scientific journal Nutrients 2 in 2017, researchers in America<br />

found that people who ate one avocado a day over six months had higher<br />

levels of lutein in the blood. Avos are a source of lutein, a phytochemical<br />

that accumulates in the eye. Lutein, along with another phytochemical<br />

called zeaxanthin, has been found to be protective against a common eye<br />

disorder in the elderly called age-related macular degeneration.<br />

In the same study mentioned above, people who ate an avo daily also<br />

had significant improvement in their memory, cognition and problemsolving<br />

abilities. The lutein in avos, along with monounsaturated fats,<br />

fibre and other bioactive compounds, make this creamy fruit particularly<br />

attractive for a healthy brain.<br />

During Pregnancy<br />

A mother’s diet during pregnancy plays a crucial role in influencing the<br />

growth of her baby and a healthy birth. Avos are a nutrient-dense food<br />

consisting of a unique combination of dietary fibre, healthy fats and<br />

vitamins and minerals such as potassium, magnesium, vitamin E, vitamin<br />

K and folate, all important as part of a healthy diet for both mom and<br />

growing baby.<br />

For the Gut<br />

The fibre in avos is a unique combination of ¾ insoluble fibre and<br />

¼ soluble fibre. Our gut needs different types of fibres to keep it<br />

healthy, each of which has different jobs in the gut. Soluble fibre<br />

acts like a mop and helps absorb fluid in the gut, forming a soft,<br />

gel-like substance that helps the stool to easily pass through the<br />

gut. Insoluble fibre acts like a broom, roughly sweeping through the<br />

length of the gut to remove waste. But fibre does far more than just<br />

keeping us regular and may play a role in preventing colon cancer,<br />

lowering cholesterol, and even helping with weight loss.<br />

Avos can be helpful as part of a successful energy-controlled diet for<br />

weight loss. Researchers have found that the monounsaturated fats<br />

Of all of the variety of things you can choose from to start your<br />

gardening career, herbs are by far one of the simplest, yet most<br />

rewarding plants to try your hand at.<br />

Getting started<br />

When growing herbs you need to decide how you are going to start, whether<br />

you want to grow your herbs in small, individual pots or whether you want to<br />

grow your own herb garden. Some people find when they start growing herbs, it<br />

is easier to stay on track if they begin with small pots with a single plant in each.<br />

Growing herbs in pots for beginners is a great option! Many times this method is<br />

started with a small pot that contains a small dried tablet of soil with the herb seeds<br />

already contained within it. These small pots are an easy way to begin because all<br />

they require is a little water and sunlight to begin since the soil already contains<br />

much of the nutrition that the herbs need to grow.


Fertilize<br />

Fertilizer is what helps to ensure that<br />

your soil is providing the nutrients<br />

your plants will need in order to grow,<br />

which is why it is important to apply the<br />

appropriate type of fertilizer to ensure<br />

that a plant does not receive too much<br />

Choosing herbs<br />

Many people ask which types of herbs<br />

Basil<br />

Basil is a pleasantly fragranced herb that<br />

around 30 to 60 days to mature.<br />

Chamomile<br />

they are so commonly utilised in<br />

everyday cooking. Chive leaves make a<br />

great quick addition to soups and bring<br />

a lot of flavour to basic salads. This herb<br />

requires full sunlight to grow and takes<br />

around 80 to 90 days to mature.<br />

Lavender<br />

Lavender is a beautiful addition to any<br />

herb garden because of its gorgeous<br />

lilac colour as well as its pungent scent.<br />

Often used in cooking and in tea,<br />

lavender has a long-lasting fragrance<br />

and a number of health benefits,<br />

including stress reduction! To meet their<br />

full potential, lavender plants should be<br />

placed in full sunlight.<br />

oh, lamb!<br />

Balsamic leg of lamb with garlic and figs<br />

Serves 6<br />

1 large leg of lamb* (about 3 kg), 45 ml olive oil, salt and pepper, 3 sprigs rosemary,<br />

woody stems removed, chopped, 2 whole heads of garlic, horizontally sliced in half<br />

¾cup (180 ml) balsamic vinegar, 1 cup (250 ml) port wine, 1 cup (250 ml) dry white<br />

wine, about 8 large ripe black figs, some halved, some whole<br />

*note: Ask your butcher to bend the long end of the leg bone by cutting almost<br />

through it but not all the way. This way it will fit snugly into a large roasting tray<br />

without hanging over the side.<br />

Preheat the oven to 160°C. Place the leg of lamb inside a large deep roasting tray, fatty<br />

side down. Drizzle it all over with oil and season it generously with salt, pepper, and<br />

chopped rosemary on both sides. Arrange the garlic head halves around it, then pour<br />

the vinegar, port and white wine into the bottom. Cover with a lid or foil, then roast for<br />

3 hours. Remove from the oven, then use tongs to turn the leg over with the fatty side<br />

to the top. Cover and roast for another 2 hours. Remove the tray from the oven and<br />

turn the heat up to 200°C. Return the leg to the oven for 20 minutes, then add the figs<br />

around the meat and roast for another 10 minutes - the figs should be just warm and<br />

soft, not falling apart.<br />

Serve warm in the tray as a festive centrepiece, with a side of rice or potatoes or roast<br />

vegetables and salad.<br />

Saucy…<br />

This roast makes a hearty yet thin sauce - remove some of the fat from the top by<br />

skimming it off with a spoon at the end of the cooking process. If you prefer a thicker<br />

gravy, pour the skimmed sauce into a small saucepan, bring to a boil, and thicken<br />

slightly by reducing it by ¼or by adding 2-3 teaspoons of corn flour (mix it to a slurry<br />

consistency with a few teaspoons of water before adding it). Stir well until thickened.<br />

Coastal escape<br />

Plett ... still (and always will be) the perfect<br />

destination for a mid-year coastal break<br />

With its plush boutiques and<br />

smart complexes, Plettenberg Bay<br />

is hardly a sleepy seaside village<br />

getaway. But, in spite of the dramatic<br />

development that has taken place<br />

in recent decades, the town remains<br />

a shrine to nature’s bounty. And<br />

there’s nowhere better to enjoy the<br />

view than at the Sky Villa Boutique<br />

Hotel, part of the Cape Summer Villas<br />

Collection.<br />

‘Plettenberg Bay always has<br />

the most wonderful sunrises,’ my<br />

mother tells me, reminding me of<br />

how we used to sit, hands wrapped<br />

round steaming mugs of coffee,<br />

watching a small red ball slowly<br />

climbing the horizon. That was back<br />

in the nineties, when Plett was our<br />

family holiday spot. And, although<br />

much has changed since then, the<br />

grandeur of the sunrise certainly<br />

hasn’t. That’s what I’m thinking as I<br />

watch that same red ball from my<br />

balcony, its rays refracted in a golden<br />

splash on the surface of the lagoon.<br />

Just beyond this gilded spectacle,<br />

the beach beckons…<br />

It’s no wonder that Plett’s<br />

legendary scenery draws legions<br />

of holidaymakers, local and<br />

international alike. But the same<br />

craggy beauty which makes it a<br />

joy for the eyes also makes for<br />

outstanding exploring. While it’s<br />

tempting to sit and take in that<br />

balcony view, I know there are even<br />

greater splendours beyond the hotel.<br />

There’s the famed Robberg hike,<br />

for instance – a favourite way for<br />

locals to spend the weekend. The<br />

walk takes you from rocky dunes<br />

(watch out for the views of seals at<br />

play) to wave-splattered beach. Then<br />

there’s cruising down the Keurbooms<br />

River, where shadow plays on<br />

fynbos-festooned mountains and<br />

amber-coloured water laps at private<br />

beaches. If ever there was a place<br />

that called you to spread out your<br />

towel and turn off your phone, this<br />

would be it – but, then again, that<br />

would be a wasted opportunity.<br />

The smooth, calm waters also make<br />

this an ideal spot for trying out your<br />

stand-up paddling skills. But if that<br />

idea doesn’t grab you, perhaps the<br />

thought of cruising slowly down the<br />

river, bubbles in hand, will.<br />

Plett’s beaches are also a favourite<br />

party spot for whales and dolphins.<br />

We played tag with them out on the<br />

ocean, and although the dolphins<br />

proved somewhat shy and elusive,<br />

nothing could beat the exhilarating<br />

sensation of streaming over azure<br />

blue waves.<br />

Then there are those boutiques<br />

and bakeries. Those who love<br />

browsing through interesting stores<br />

will find time flies as they meander<br />

down Plett’s high street, refuelling<br />

occasionally with a flat white and<br />

slice of buttery cake.<br />

As much as all these activities<br />

are food for the soul, there’s just<br />

as much fulfilment to be found at<br />

the hotel itself. It’s as though every<br />

angle and corner of Sky Villa has<br />

been carefully designed to make you<br />

stop and stare – inside the hotel, a<br />

luxe palette of metallics is offset by<br />

moody wallpapers and floral fabrics.<br />

Clearly, this establishment hasn’t<br />

been created merely as a place to<br />

relax; it’s also intended as a treat for<br />

the senses.<br />

The hotel’s gardens are even more<br />

pleasing. Flurries of fynbos make for<br />

a smudgy pastel landscape, while<br />

the vista rolls all the way down to<br />

that sapphire sea. You<br />

can’t blame a girl for<br />

wanting to take it all in<br />

– which is why I spend<br />

much of my stay at<br />

the heated pool on<br />

the rooftop bar. The<br />

espresso martini I’m<br />

sipping certainly<br />

doesn’t hurt,<br />

either.<br />

The<br />

panorama from<br />

the restaurant<br />

is similarly<br />

spectacular. That might be the<br />

reason the hotel is fast gaining a<br />

reputation as a favourite breakfast<br />

destination, although it’s the dinners<br />

that really get my mouth watering.<br />

The menu draws on Mediterranean<br />

influences, so expect plenty of<br />

fresh, bold flavours that pair<br />

perfectly with your coastal<br />

location. My all-time hero dish<br />

is Live By Chocolate, a chocolate<br />

experience so densely delicious it<br />

will take care of all cravings for the<br />

next week: think a duo of mousse,<br />

lashed with butterscotch sauce<br />

and finished off with a dollop of<br />

home-made ice cream. Of course,<br />

life isn’t just about dessert<br />

(would that it could be).<br />

I also loved the avocado<br />

and salmon tartare, with<br />

a liberal drizzle of sesame<br />

oil complementing the Asian<br />

complexity of the dish, while<br />

the pork belly received lavish<br />

praise from my companions. A<br />

word of advice – go hungry! Sky<br />

Villa’s portions are generous, to<br />

say the least, and you’ll definitely<br />

want to do them justice.<br />

After just one weekend here, I feel<br />

cosseted and cocooned – and more<br />

than ready to tackle life below<br />

the clouds.<br />

There’s nothing like the colder months to make your bed a cosy haven. Add loads of layers ... think throws<br />

in faux fur or velvet, blankets in flannel or knit or (oh ... winter bliss) the ever-popular Sherpa. You can add<br />

a quilt too ... no longer just for granny’s room, they’re making a huge comeback – and the reversible quilts<br />

with coordinating prints are fab – ring the changes, depending on your mood. Slipping between crisp cotton<br />

sheets is always wonderful, but if you really suffer from the cold, consider brushed cotton sheets – the fabric is<br />
