Selwyn Times Wednesday October 14 2020 38 FOOD Latest Canterbury news at starnews.co.nz Have a lot of fun with filo pastry FILO PASTRY is easy to use and you will end up with a lovely light, crisp pastry if you follow these rules. Work fairly quickly and if you are called away while you are rolling the parcels, cover the unbuttered stack with a tea towel to prevent it drying out. If the pastry is very cold, it will be more fragile and tend to crumble, so give it 20min to come to room temperature before you open the packet. Three Cheese and Chicken Filos Ingredients 500gm chicken tenderloins (you need 10) 50gm cream cheese 120gm feta cheese 25gm parmesan cheese pepper 2 sundried tomatoes in oil 100gm butter 10 sheets filo pastry Directions Remove the filo pastry from the fridge and let it come to come to room temperature. Begin by cutting out the sinewy strip from the tenderloins. Place the tenderloins into a large frying pan on a high heat and fry for a minute or so on each side so that they are half cooked. You may need a little oil in the pan to prevent them sticking. Place the cream cheese into a bowl and crumble over the feta. Grate in the parmesan and mix this all together thoroughly with a fork. Season with pepper. Dry the tomatoes on kitchen paper and slice finely. Melt the butter. Have all of this ready before you open the packet of filo pastry. On a large clean dry work surface, lay out the filo. Remove a sheet and brush lightly with melted butter. Lay another sheet over the top and brush this as well. Place two of the cooked tenderloins at the edge closest to you and add a fifth of the cheese mixture and a few of the chopped tomatoes. Place on another tenderloin and begin to roll them up in the filo. Fold in the sides and finish rolling so that you end up with a tidy parcel. Brush lightly but thoroughly with butter and lay on a baking sheet. Continue in this way until all the chicken and filling has been used. You should have five parcels. At this stage, you can cover them and store them in the fridge for up to 24 hours. They can also be frozen for later cooking. Be sure to cover them well and as the pastry is quite fragile when frozen. It is a good idea to place them in a solid container. Bake in a 200 deg C oven for 10-12min. Keep an eye on them as they will burst if they are left in too long. Mushroom strudel Ingredients 25gm butter 1 small onion 250gm mushrooms 150gm cream cheese 100gm sour cream salt and pepper to taste 75gm butter filo pastry Directions Finely chop the onion and put it in a frying pan with the first measure of butter. Cook over a medium heat until the onion is soft but not coloured. Rinse and trim the mushrooms and slice finely. Add to the onion and turn up the heat. Cook for around 5min until the mushrooms are starting to brown up. Remove from the heat and add the cream cheese. Let it sit in the hot pan to melt a little before stirring through. Stir in the sour cream and a little salt and pepper. Don’t mix it too much or you will end up with a very unattractive grey mixture. Melt the second measure of butter. Lay out the filo pastry on a clean, dry work surface. Take a sheet off the top and brush with melted butter. Lay a second sheet over the top and brush this one as well. Fold your pastry into a rectangle and brush again. Lightly mark the rectangle into thirds, lengthways. Place a large tablespoonful of the mushroom filling just above the centre line in the first third of your pastry, then fold to form a triangle. Keep folding in triangles, tucking it quite tight so there are no gaps at the corners. Fold the end under neatly. Continue in this way until all the filling has been used. Brush the tops of the triangles with butter and place on an oven tray. As with the previous recipe, they can now be refrigerated for a day or frozen for later use. Bake at 200 deg C for 8min, being careful not to over cook them or the filling will burst out.
