Make some marvellous muffins<br />

A QUICK AND tasty snack,<br />

muffins are popular with just<br />

about everyone and these sweet,<br />

moist date and bran muffins have<br />

the advantage of being high in<br />

fibre as well as delicious.<br />

<strong>The</strong> date mixture has to be cool<br />

before you add it so make it in<br />

advance. You can speed up the<br />

cooling time by placing the pot of<br />

hot dates in a sink of cold water.<br />

And, of course we all know<br />

that, when it comes to muffins,<br />

the less mixing of the batter that<br />

you can get away with, the better.<br />

Bran and Date Muffins<br />

Ingredients<br />

1 cup dates<br />

¾ cup boiling water<br />

½ cup brown sugar<br />

1¼ cup plain flour<br />

1 cup bran flakes<br />

½ cup brown sugar<br />

½ tsp salt<br />

2 tsp baking powder<br />

1 egg<br />

1/3 cup melted butter<br />

1 cup milk<br />

Directions<br />

Begin by making the date mixture.<br />

Rinse the dates well to get<br />

rid of any dust or dirt and chop<br />

finely. Place them, along with the<br />

boiling water and the first measure<br />

of brown sugar into a small<br />

saucepan.<br />

Bring to the boil and simmer<br />

for about 10min. Give them the<br />

odd stir so that they don’t stick to<br />

the bottom. <strong>The</strong>y should be nice<br />

and thick by then. Leave to cool<br />

before adding to the rest of the<br />

ingredients.<br />

Preheat your oven to 200 deg<br />

C.<br />

In a large mixing bowl, mix<br />

together the flour, bran, salt, baking<br />

powder and second measure<br />

of brown sugar.<br />

Lightly beat the egg and add to<br />

the milk and melted butter. Into<br />

this, stir the cooled, cooked dates.<br />

Add the wet ingredients to the<br />

dry mixture and stir until only<br />

just combined. <strong>The</strong> mixture will<br />

be quite wet.<br />

Line a 12-hole muffin pan with<br />

paper cups and spoon in the<br />

muffin mix. Cook for 15-20min<br />

or until the muffins are just firm<br />

when lightly pressed.<br />

Feta and Tomato Muffins<br />

Ingredients<br />

2 cups plain flour<br />

3 tsp baking powder<br />

¼ tsp salt<br />

2 eggs<br />

1/3 cup butter<br />

1 cup milk<br />

1 cup grated tasty cheese<br />

4-5 dried tomatoes in oil<br />

100g feta cheese<br />

a small handful of parsley or<br />

basil leaves<br />

Directions<br />

and tasy. Try<br />

the feta and<br />

tomato or<br />

cheese and<br />

onion muffins<br />

next time.<br />

Line a 12-hole muffin pan with<br />

paper cases and preheat your<br />

oven to 190 deg C.<br />

Place the flour, baking powder<br />

and salt into a large bowl.<br />

Add the grated cheese and mix<br />

through so that it is well dispersed.<br />

Melt the butter and mix it with<br />

the lightly beaten eggs and milk.<br />

Break the feta into smallish<br />

pieces and gently stir it through<br />

the egg mix along with the finely<br />

chopped tomatoes, basil or parsley.<br />

Add this wet mix to the dry<br />

ingredients and stir lightly so that<br />

it is only just mixed through.<br />

Spoon into the muffin cups and<br />

bake for 10-15min.<br />

<strong>The</strong>re are a number of<br />

variations that work well with<br />

this recipe. You can add a little<br />

chopped ham, salami or cooked<br />

bacon if you wish or cut out the<br />

feta and add your own favourite<br />

cheese.<br />

Cheese and Onion<br />

Muffins<br />

Just leave out the feta and<br />

tomatoes from the previous<br />

recipe and replace them with<br />

a couple of finely sliced onions<br />

that have been cooked in the<br />

microwave or a pan, with a little<br />

butter until very soft. <strong>The</strong> onion<br />

becomes lovely and sweet and<br />

makes the muffins moist as well.<br />

Add about half a cup extra of<br />

grated cheese.<br />
