CURRY DE LENTEJAS/

LENTIL CURRY

1 bote de lentejas cocidas en conserva, 1 diente de

ajo, 1 cebolla,1/5 coliflor, 1 patata grande,1 dl de

salsa de tomate frito,1 dl de caldo de verduras, 1 dl

de leche de coco, cilantro, 1 pimiento rojo, 1 pimiento

verde, 200 g de calabaza, curry en polvo, aceite de

oliva, 1 guindilla y sal.

1 pot of canned cooked lentils, 1 clove of garlic, 1

onion, 1/5 cauliflower, 1 large potato, 1 dl of fried

tomato sauce, 1 dl of vegetable broth, 1 dl of coconut

milk, cilantro, 1 red pepper, 1 green pepper, 200 g of

pumpkin, curry powder, olive oil, 1 chilli and salt.

Paso a paso

Pela y corta en trozos grandes la patata.

Pela y pica el ajo y la cebolla. Limpia y

pica los pimientos. Corta la guindilla en

aros. Pela y corta en dados la calabaza.

Desgrana la coliflor en ramilletes.

Pon una cazuela al fuego con un buen

chorro de aceite y toda la verdura

cortada, incluidas las patatas. Rehoga

hasta que se poche.

Sala y añade una cucharada de curry,

el caldo de verduras y la salsa de

tomate. Incorpora las lentejas lavadas y

escurridas. Deja al fuego cinco minutos

y añade la leche de coco a las lentejas.

Sirve con un poco de cilantro fresco

(opcional).

Step by Step

Peel and coarsely chop the potato. Peel

and mince the garlic and onion. Clean

and chop the peppers. Cut the chilli

into rings. Peel and dice the pumpkin.

Shelling the cauliflower into florets.

Put a saucepan on the fire with a good

jet of oil and all the cut vegetables,

including the potatoes. Sauté unl

poached.

Salt and add a tablespoon of curry, the

vegetable broth, and the tomato sauce.

Add the washed and drained lenls.

Leave on the fire for five minutes and

add the coconut milk to the lenls. Serve

with some fresh cilantro (oponal).
