Hundreds of Exhibitors from all over the state and all ages enter items in the Open Class Exhibits every year. Printed copies are available at most banks throughout Dodge County, the Fair Office, Beaver Dam Piggly Wiggly and Rechek’s Food Pride. DAIRY PRODUCTS

Judging to take place prior to dates of fair. Judging by Representative of Dept. of

Grading and Inspection Service. Any of the following shall constitute an exhibit:

(a) Not less than one cheese or more than 3 with a minimum of not less than

5 lbs. each entry. Try to maintain the minimum entry weight of 5 lbs. each entry.

(EXHIBITOR MAY NOT ENTER MORE THAN ONE ITEM IN EACH CATEGORY.)

(b) Cheese shall be judged on a standard scale as identified by WDATCP by

cheese type (as it fits into a category for the small scale County Fair)

(c) All cheese shall be stamped showing date made by month and year.

(d) Cheese previously tested with a trier shall not be considered as an exhibit for a

premium. Such cheese shall be entitled to a complimentary score only, except for

Swiss cheese which may have one plug hole.

CLASS 24 - CHEESE

1. Cheddar, any style, colored or white, made before February 1, of current year.

2. See paragraph (a).

2. Colby and/or Monterey Jack. See paragraph (a).

3. Brick. See paragraph (a).

4. Muenster. See paragraph (a).

5. Flavored Natural Cheese, such as Cheddar with bacon etc., Smoked and

2. Colby/Jack combinations mixed. See paragraph (a).

6. Italian cheese, Pasta Filata types, such as Mozzarella and Provolone.

7. Italian cheese, Grana types such as Romano, Parmesan, Asiago etc.

8. Bleu and Gorgonzola cheese. See paragraph (a).

9. All other types and varieties of natural cheese not otherwise listed in this

premium list. See paragraph (a).
