Duxton Pubs Group acquired the property in March 20<strong>21</strong> and traded for a month before closing the main bar and dining room for renovations, which are now complete. “We identified the hotel as having huge potential to return a food-focussed venue back to the community, whilst continuing the tradition of being an iconic suburban drinking destination,” said Joshua Hillary, Group General Manager. DESIGN The recent refurbishment was headed by Sarah Matthews and Kara Walsh (interior), working with Carlo Panozzo of Folland Panozzo Architects. Minimal structural changes were made to The Cremorne—the main work was installing a wall and doorway from the central area of the hotel through to the sports bar and gaming room. “This was intended to create a point of difference between these areas and the main hotel operation,” said Joshua. “It gives patrons the ability to have a space unique to the experience they are setting out to have, be it watching sport or punting, or dining with family or friends, or enjoying a drink and some live music in the sunny courtyard.” Those familiar with The Cremorne may notice the ceilings in the main bar have been lifted, and lighter tones have been incorporated in the fixtures and furniture, resulting in a “much brighter and open” style. Local company Agostino and Brown supplied all of the bar stools, booths and tables in the dining, bar and lounge areas.
