Christmas Country Fair has grown into a beautiful showcase of South African<br />
creatives, designers, makers, bakers, crafters, producers and foodies … and it’s<br />

Dreaming big<br />
Despite challenges that life has dealt her, ambitious<br />
and determined Mount Edgecombe Miss India SA<br />
finalist, Michaiah Naidoo, is driven by a desire to<br />
become an ambassador for goodwill and showcase<br />
the diversity of her culture.<br />
Radio presenter and producer, student<br />
and avid animal-lover, Michaiah dreams<br />
of one day becoming a successful<br />
television journalist and actress. Right<br />
now though, her focus is set on being<br />
crowned the ZEE TV Miss India SA 20<strong>22</strong><br />
winner in December this year. She is<br />
currently one of the top 25 finalists and<br />
is working hard to achieve her goal. We<br />
found out more about this ambitious<br />
young woman.<br />
1. Tell us a bit about your<br />
background and childhood.<br />
I was born and bred in beautiful<br />
Durban and have lived in Pinetown<br />
and Hillcrest. I lived in close proximity<br />
to polo pony horse stables (which<br />
instilled my love for animals and<br />
equestrianism). We relocated to Mount<br />
Edgecombe in 2013, and I began my<br />
high school career at Crawford College<br />
La Lucia. Attending Crawford was an<br />
exquisite experience and it was during<br />
this time that my love for theatre and<br />
performance grew. I excelled in drama,<br />
played piano and became proficient<br />
in French. I also played soccer and<br />
hockey and painted. Growing up in a<br />
slightly dysfunctional home (I witnessed<br />
many feuds, outbreaks of domestic<br />
violence and verbal abuse between my<br />
parents), caused me struggling to speak<br />
coherently and stuttering when I was<br />
younger. I later discovered that children<br />
often stutter as a result of childhood<br />
trauma. I'm proud to say, though, that I<br />
no longer stutter and am not a victim of<br />
my circumstance, but rather a warrior. I<br />
believe those battles helped make me<br />
the person and woman of strength that<br />
I am today.<br />
2. Tell us about your career and<br />
studies.<br />
I’m a radio presenter and producer on<br />
103.3FM. I started my broadcasting<br />
career at the age of 20 and, as of<br />
October, I will join local Bollywood<br />
station Hindvani, which I’m extremely<br />
excited about. I’m currently completing<br />
my degree in media studies and<br />
communications with the hope of<br />
becoming a television journalist. I’ve<br />
been trained under the guidance of<br />
renowned SABC TV news anchor and<br />
journalist, Mahendra Raghunath and<br />
dream of following in his footsteps.<br />
3. What has your Miss India SA<br />
journey been like, thus far?<br />
I entered Miss India SA in June. It’s<br />
always been my dream to participate in<br />
this pageant and this year I took<br />

the leap of faith and entered. I want to be an ambassador<br />
for goodwill and showcase the diversity of my culture, as<br />
well as hopefully use my platform as a finalist to positively<br />
impact the community through philanthropic deeds. Thus<br />
far, I have completed two charitable campaigns, a Mandela<br />
Day SPCA food drive and a Women’s Day campaign for<br />
an old age home. It has been an amazing journey thus<br />
far and I’m grateful to have met such dynamic and caring<br />
individuals. The sisterhood formed between contestants is<br />
an unbreakable bond and I’m blessed to be surrounded by<br />
beautiful, intelligent women who share similar core values<br />
as me. I'm also grateful for my photographer, Yashveer<br />
Boodhoo, for his exceptional work and attention to detail.<br />
4. What is your goal, should you be crowned ZEE TV Miss<br />
India SA?<br />
I want to continue hosting charity events and grow the<br />
brand by mentoring future contestants. I'd like to use the<br />
title to uplift others, lead and direct the youth towards<br />
developing themselves as individuals and utilising their<br />
talents to create an income stream to lessen the current<br />
unemployment crisis in our country. I'd love to represent the<br />
Miss India SA brand internationally and, hopefully, achieve<br />
my dream of becoming a Bollywood actress.<br />
5. Who do you look up to and why?<br />
Two special ladies who I admire are Preetha and Kamisha<br />
Nanhoo (pageant organisers) for their constant support and<br />
guidance. They've made my Miss India SA journey thus far a<br />
memorable one and without them none of this would have<br />
been possible. I want to thank them for creating a platform<br />
that empowers, inspires and uplifts women of all races and<br />
cultural backgrounds. I’d also like to thank Tracy Maharaj and<br />
Kimberly Govender, both of whom work with the pageant.<br />

Keeping them safe<br />
After the second round of devastating flooding in KZN, <strong>Ballito</strong> student, eco-activist<br />
and animal lover Milan Comley reached out on social media in an attempt to help<br />
two litters of puppies who were at risk of drowning. That was the beginning of SAFE<br />
– a dog fostering, adoption and education non-profit organisation (NPO).<br />
“We can no longer 'adopt' the problem<br />
away. There are far too many puppies<br />
and dogs needing homes. Rescue<br />
centres are full and funding and support<br />
have dwindled.”<br />
It was this realisation, says Milan,<br />
that she and SAFE co-founders Claire<br />
Augustyn and Kerry Janke came to<br />
when they were in the process of<br />
founding the NPO. “We sat down and<br />
looked at the overwhelming statistics<br />
and the reality of the unprecedented<br />
numbers of unwanted, abandoned and<br />
abused puppies and dogs in KZN at<br />
present.”<br />
They identified three key challenges:<br />
lack of sterilisation, education about<br />
the care, treatment and medical<br />
requirements of animal ownership,<br />
and poverty and job security. “We<br />
then looked at how we could take<br />
responsibility for these areas to bring<br />
change.”<br />
Milan, a <strong>22</strong>-year-old Masters student<br />
in sustainability, is currently interning<br />
at a local clothing factory in the<br />
sustainability department. Having<br />
always been an eco-activist and animal<br />
lover, she says she is continually trying<br />
to create value for humans, animals and<br />
the environment wherever she sees a<br />
gap.<br />
“All three of us, though, have stories<br />
going back to our childhoods,<br />
illustrating our natural instinct to help<br />
those in distress. Taking responsibility to<br />
see a life changed comes naturally to all<br />
three of us, it seems,” she says.<br />
The overriding philosophy at SAFE is<br />
that people need to take responsibility<br />
for the change that they want to see.<br />
And, it seems, that is exactly what<br />
its directors, members, fosters and<br />
volunteers are hard at work doing.<br />
So, what exactly do they do?<br />
There are three pillars to the SAFE<br />

network. Pillar one is the 'on the<br />
ground' programmes – including a<br />
'betterment programme' (improving<br />
a dog's life where it currently is) and<br />
mass sterilisation and vaccinations<br />
programmes. Pillars two and three<br />
are 'off-shoots' of this programme<br />
and include a foster programme and<br />
an adoption programme. “The foster<br />
network comprises a group of ordinary<br />
households who, for various reasons,<br />
opt to open their hearts and homes<br />
to puppies and dogs that need to be<br />
uplifted and placed in a loving home<br />
environment while a permanent solution<br />
is found for them. This type of fostering<br />
is a temporary bridge between a dog’s<br />
horrendous past and a beautiful future,”<br />
says Milan.<br />
They also have a wonderful 'companion<br />
programme', which offers a permanent<br />
foster solution, providing older dogs<br />
that have been identified and trained for<br />
senior members of the community.<br />
The final pillar is the adoption<br />
programme. “The obvious conclusion in<br />
the chain is to find the correct homes to<br />
match the dogs and pups being cared<br />
for through our SAFE foster network. This<br />
is done with strict criteria.”<br />
How can you help?<br />
“We believe that everybody has<br />
something to offer, be it a skill, a secondhand<br />
item, their time or a financial<br />
resource. Not everybody is passionate<br />
about or suited to directly work with an<br />
animal, but they can be a vital part of the<br />
chain of change,” says Milan. SAFE has<br />
various lists available for those interested<br />
in becoming involved, including a needs<br />
list, a partner and volunteer list, foster<br />
and adoption and banking and donation<br />

Much more than just a pottery class, Clay Connection day retreats invite you<br />
to find your zen and bring your mind, body and soul into a place of peace<br />
and tranquillity. They are also loads of fun and absolutely no previous creative<br />
experience (or skill!) is required.<br />

When last did you take a moment to<br />
be truly present in the moment and<br />
allow yourself to tap into your inner<br />
creativity? Hosted at the exquisite<br />
Umdloti home of potter Di Smith, Clay<br />
Connection workshops encourage<br />
you to do exactly this.<br />
Each day-long retreat begins with<br />
a beautiful tea ceremony on arrival,<br />
where participants are invited to<br />
choose a handmade clay teacup and<br />
a symbol that resonates with them,<br />
before being served ayervedic tea<br />
while seated in a circle on the grass.<br />
“This is the first of many mindfulness<br />
practices we do throughout the day,”<br />
says Di, who started the workshops<br />
because, she says, we need more<br />
mindfulness and creativity in the<br />
world.<br />
Having lived in Umdloti for more than<br />
30 years, Di's journey with pottery has<br />
been an interesting one. “I took up<br />
pottery classes many years ago, and<br />
immediately fell in love with it. I kept<br />
challenging the 'norm' of what could<br />
be done with pottery. I decided to open<br />
my own studio about 15 years ago.”<br />
Di converted a room in her home into<br />
a studio and started supplying pottery<br />
to local decor shops and doing<br />
commissions for interior decorators. “It<br />
became quite stressful though, and I<br />
found my creativity starting to wane.”<br />
When she and her husband moved<br />
into their new home, Di decided<br />
it was time for a complete career<br />
change. She began selling high-end<br />
real estate in Umdloti 10 years ago.<br />
Like so many people, when<br />
lockdown hit Di found herself with<br />
an opportunity to slow down and<br />
once again tap into her creative<br />
side. “I hadn't touched clay for many<br />
years and when I got my hands on<br />
a piece, I started making a sculpture<br />
for one of my daughters who was<br />
stuck overseas and going through a<br />
very difficult patch in her life. It was<br />
incredibly therapeutic for me, but it<br />
also stimulated my creativity again.”<br />
While she has many interests and<br />
hobbies, Di says she came up with<br />
the Clay Connection concept after a<br />
friend introduced her to the Japanese<br />
concept of 'ikigai', which means 'your<br />
reason for being'.<br />
“It's about discovering what brings you<br />
joy and inspires you, what is good and<br />
needed in the world and what you can<br />
make a living from. I believe the world<br />
needs more time to slow down, and<br />
more opportunities to be creative.”<br />
With her home as her sanctuary, Di<br />
decided to run her pottery retreats<br />
from there. “I had to get my husband,<br />
who is a very private person, on<br />
board, so I decided to do a mock<br />
workshop with him – including all the<br />
elements, from the tea ceremony to<br />
the meditation and pottery. After he<br />
saw how passionate I was about it, it<br />
was decided.” Since then, Di's retreats<br />
have taken off and she is already fully<br />
booked until next year!<br />
While the goal is for each person to<br />
go home with a beautiful piece of<br />
pottery that they love, Di's workshops<br />
are about the experience and the<br />
journey you go on throughout the<br />
day more than about the pieces<br />
that you make. “The clay teaches<br />
us lessons and we take moments<br />
throughout the day to find stillness<br />
and connection.” Each class has a<br />
different theme, such as 'Finding Your<br />
Inner Zen Through the Art of Clay'<br />
and 'Finding Your Divine Femininity<br />
Through the Art of Clay'. She also runs<br />
a couple's retreat.<br />
You don't need to have any<br />
experience or be 'arty' to do one<br />
of these and, Di says, the process<br />
throughout the day encourages you<br />
to tap into your intuition and find that<br />
innate creativity we all possess. “It's<br />
incredible to see people letting go<br />
and letting their imaginations go wild.<br />
I've seen some incredible creations<br />
come out of our workshops and some<br />
people have really struggled. There<br />
are often lots of emotions that come<br />
out, as well.”<br />
Di practices yoga daily and has<br />
completed an online mindfulness<br />
course. “I surround myself with lots<br />
of 'gurus' and I hope that through<br />
my retreats, I can share some of the<br />
wisdom I have been lucky enough to<br />
get from them, along with my pottery<br />
experience, with others.<br />
Clay Connection retreats are ideal for<br />
groups of friends, bridal showers and<br />
book clubs. They are run on a Saturday<br />
from morning to late afternoon and<br />
all the pottery is handmade. The cost<br />
is R1200 per person, which includes<br />
tea, coffee, mimosas and lunch – as<br />
well as your pieces made on the day.<br />
She can host a maximum of seven<br />
people at a time.<br />

the ultimate state of being. You are<br />
present, immersed, energised and<br />
happy. You are ‘in the zone'.<br />
FLOW The Studio founder, Candice<br />
Jenkinson, has for many years dreamt<br />
of creating a space where people can<br />
find their way to this state of being.<br />
Now her dream has become a reality.<br />
The studio opened just a few months<br />
ago and is based at The Maker's Yard<br />
in <strong>Umhl</strong>ali.<br />
Essentially, it is a co-working space<br />
where various teachers, instructors<br />
and healers can grow their practices<br />
without the usual concerns (like big<br />
overheads) that come with starting<br />
and running a small business.<br />
It is a wonderful space for people<br />
to experiment with and experience<br />
various types of mindful exercises and<br />
movement and create meaningful<br />
connections.<br />
Candice, together with her husband<br />
Jeff, a software developer, came up<br />
with an app-based system that allows<br />
you (through one membership) to<br />
choose how many and which classes<br />
you'd like to go to. You can do pilates,<br />
yoga or dance in group or private<br />
classes. It's all up to you.<br />
Formerly in advertising and marketing,<br />
Candice (a mom of two boys) made<br />
the decision to leave the corporate<br />
world and follow her bliss after doing<br />
her yoga teacher training online<br />
course during the Covid lockdown.<br />
She first discovered yoga, she says,<br />
on a beach in Tanzania when she was<br />
just 15 years old. It resonated with<br />
her straight away. “It was magical. The<br />
instructor was from India and we were<br />
in this beautiful, serene place. I felt the<br />
gravity of it immediately and knew I<br />
needed more of this in my life.”<br />
After working in the corporate space<br />
in both Johannesburg and KZN,<br />
Candice says she started realising<br />
that she wanted to share both her<br />
business and management skills and<br />
her passion for yoga, but wasn't quite<br />
sure how. “I didn't want to buy or<br />
open a typical yoga studio. I wanted<br />
to find a way to carry my knowledge<br />
forward, while at the same time<br />
growing others and giving back to the<br />
community.”<br />
Jeff, a natural entrepreneur and 'maker<br />
of things', has always pushed Candice<br />
to think outside of the box.<br />
“When I came up with this concept<br />
and showed him the space at The<br />
Maker's Yard, he said yes immediately.”<br />
While Candice does teach yoga<br />
classes herself, her range of instructors<br />
and teachers offer various forms of<br />
yoga, pilates and dance classes within<br />
their specialised fields.<br />
“I decided that I would take on the<br />
financial risk and overheads and find<br />
a way to empower and allow teachers<br />
the opportunity to do what they do<br />
best - and compensate them fairly<br />
- while they are still busy building<br />
their businesses and learning about<br />
what that takes. Teachers and healers<br />
often don't reach their full potential<br />
because they are desperately trying to<br />
cover costs and don't have someone<br />
backing them.”<br />

Holidays, fun …<br />
& diabetes?<br />
The festive season is about being with family and celebrating life! But excessive overindulging can have<br />
serious consequences. It’s Diabetes Awareness Month and we asked North Coast specialist endocrinologist<br />
Dr Tanya van der Made to share a bit about managing our weight while still enjoying the season.<br />
1. Don’t ignore the signs or put off a medical check-up if<br />
you feel unwell.<br />
2. Your weight matters, but don’t beat yourself up about<br />
it. Discuss weight issues with your doctor. Body mass index<br />
(BMI) is a quick guide to indicate if you are overweight but<br />
we also look at your muscle mass versus fat mass. We can’t<br />
rely on BMI alone and certain types of fat (and where it is<br />
deposited in your body) is more telling.<br />
We can help with appetite control,<br />
which often is a biological drive from<br />
the hypothalamus (part of your brain)<br />
and not your fault.<br />
3. Diabetes does not happen<br />
overnight. Type 2 diabetes runs in<br />
families and if anyone in your family<br />
has type 2 diabetes, you are at risk. It<br />
happens slowly over time and is usually<br />
with associated weight gain. Type 1<br />
diabetes is very different. As an autoimmune disease it can<br />
happen very quickly with weight loss and lead to a diabetic<br />
ketoacidosis (DKA).<br />
Go for a walk on<br />
the beach with your<br />
family!<br />
4. Stop drinking sugary, fizzy drinks. They do not hydrate<br />
you. In fact, they can dehydrate you through a process of<br />
osmotic diuresis and make you feel thirstier. If you want a<br />
fizzy drink, opt for the sugar-free or diet version, but water or<br />
flavoured water is still best.<br />
5. Diets and exercise. Seeing a good dietician is important<br />
as everything relies on what is going in. Dieticians should<br />
not give the same diet to every<br />
patient, as every person is different.<br />
The consensus, though, is that the<br />
Mediterranean diet is best and people<br />
who exercise three times a week have<br />
better outcomes. Go for a walk on the<br />
beach with the family - you don’t need<br />
a gym! Enjoy Greek take-out instead<br />
of burgers for a change. Learn to read<br />
food labels!<br />
6. Your doctor matters. You should<br />
have an ongoing relationship with your doctor when it<br />
comes to diabetes and pre-diabetes because it is a chronic<br />
condition. However, medicine and research are not static, so<br />

you should not be on the same medication<br />
for years and years. If you have diabetes,<br />
we need to monitor outcomes from your<br />
glucose diary to clinical signs of target organ<br />
damage in the eyes, kidneys and heart, all<br />
the way to your feet.<br />
7. Life is short. Don’t use this as an excuse<br />
to smoke and live unhealthily! Value every<br />
day by doing your best, one day at a time.<br />
Love your family and respect the pain they<br />
would feel if you were to get sick.<br />

A specialist endocrinologist who graduated<br />
from Stellenbosch University and Tygerberg<br />
Hospital in the Western Cape. Currently<br />
working in private practice for the last<br />

Padel up!<br />
The latest (and some would say greatest) sporting trend to hit the North Coast is a<br />
family-friendly racquet game called padel. We caught up with Marcus Rivera,<br />
co-owner of the newly-opened North Coast court, Padel Station, situated at Sugar<br />
Village in <strong>Umhl</strong>ali.<br />

While it might be new to most of us, the game of padel has<br />
been around for a while.<br />
Having started in Mexico in the 1960s, it is basically a<br />
fun combination of tennis and squash, usually played in<br />
doubles. Having grown steadily in popularity around the<br />
world and South Africa (various padel courts have sprouted<br />
up in the Cape and Gauteng), padel is now set to be an<br />
Olympic sport in 2024.<br />
Thanks to Marcus and his business partners Guy Bower and<br />
Andre Jooste, we now have our very own public courts<br />
right here on the North Coast (the first in KZN), and they are<br />
already very popular!<br />
“Our membership numbers doubled after the first month,<br />
and we have more than 600 members and are growing<br />
daily,” says Marcus, who also manages the Sugar Village<br />
property.<br />
Played in 75 countries around the world, Marcus says<br />
padel basically combines the best elements of tennis and<br />
squash into one game. What makes it so popular, it seems,<br />
is its simplicity and the fact that it's easy to learn and<br />
uncomplicated to play.<br />
“It's great because you can have longer rallies and the ball<br />
is softer and easier off the bat. You don't have to smash the<br />
ball and you don't have the 'downer' of it flying past you. It's<br />
such a great game to play as a family.”<br />
While it might be easy to play, padel still offers a really great<br />
workout and there are technical elements involved too,<br />
which means you can improve on your skill the more you<br />
practice. A padel racquet is smaller in size than a tennis<br />
racquet and there are different shapes for different types of<br />
players. The court (there are two at Padel Station) is about<br />
thirty per cent smaller than a tennis court and the ball is<br />
also slightly different. It looks like a tennis ball, but is a few<br />
centimetres smaller and has a higher pressure, which means<br />
it bounces differently.<br />
Marcus (who is currently doing a coaching accreditation<br />
course), says he and his partners have really enjoyed setting<br />
up Padel Station in <strong>Umhl</strong>ali, and the response from the<br />
community has been fantastic.<br />
The on-site pro shop is fully stocked with racquets which<br />
are available for hire and balls (which you buy and keep),<br />
and there are plans in place to add to the existing facilities,<br />
which include a restaurant and jungle gym, water feature for<br />
the kids and possibly other sport facilities as well.<br />
“We are available for venue hire for private functions and<br />
parties and can accommodate around 50 to 60 people. This<br />
is a great option for year-end functions or get-togethers<br />
with friends and family. We really want this to be a familyfriendly<br />
sports venue where people spend time outdoors,<br />
being active and socialising.”<br />
The cost of hiring a court for non-members is R400 during<br />
peak times and R320 off-peak. Members receive a 50% fee<br />
discount and memberships (which can be bought online)<br />
begin from R1 950 per year for a single to R3 950 for a family<br />
of four. Hiring a racquet costs R50 and a can of balls R140<br />
(which can be re-pressurised when needed).<br />
Former professional tennis player and Salt Rock<br />
businessman, Matt Conningham, is one of the many North<br />
Coasters who now find themselves spending a significant<br />
amount of time on the padel courts in <strong>Umhl</strong>ali. “It really is<br />
so much fun. I honestly think anyone can do it. If you can<br />
play 'beach bat' you can play padel! You work up a great<br />
sweat and because it's doubles, it's really fun and social. If<br />
you find players of a similar 'calibre' as you it gets even more<br />
interesting, as there are technical elements and you do get<br />
better with time.”<br />

LINE FISH CEVICHE<br />
With citrus, litchi and elderflower flavours<br />
culminating in a crisp finish, the Spier Good<br />
Natured Organic Sauvignon Blanc is the perfect<br />
match for the ceviche’s beguiling layers of<br />
acidity.<br />
(Serves 4 as a starter)<br />
You'll need: 500g fresh, sustainably caught line<br />
fish fillets, pin-boned (we used sea bass); Juice<br />
of 2 limes; Juice of 1 lemon; Salt to taste; 1 to<br />
2 ripe grapefruit, sliced into fine segments;<br />
About a third of a cup cucumber, finely diced;<br />
15ml to 30ml extra virgin olive oil; Handful fresh<br />
coriander, roughly chopped; Salt and pepper.<br />
For the avocado puree: 1 ripe avocado; Juice of a<br />
medium lemon; Salt and pepper.<br />
For the citrus pickled red onion: Juice of 1 lime;<br />
Juice of 1 lemon; Juice of 1 grapefruit; 15ml<br />
sugar 1 red onion, finely sliced.<br />
To make: Use a long-bladed, very sharp knife to<br />
slice the fish into thin slivers, arranging them in<br />
a wide bowl. Pour the lime and lemon juice all<br />
over, season lightly with salt, cover and leave to<br />
cure for 15 to 20 minutes or until the flesh has<br />
just turned white. Pour off excess juice. Set aside<br />
(covered, refrigerated) while you get the other<br />
elements ready for plating.<br />
While the fish is curing, make the avo puree: In<br />
a blender add the avocado (discard skin and<br />
stone), lemon juice and season lightly with salt<br />
and pepper. Blend to a smooth puree, then<br />
transfer to a piping bag. Set aside until ready to<br />
plate. (If you’d rather serve sliced avo instead of a<br />
puree, feel free to do so.)<br />
For the citrus pickled red onion: Place all the<br />
ingredients in a glass jar and shake gently to mix.<br />
Refrigerate until ready to serve, at least 2 hours<br />
or overnight.<br />
To serve: Arrange the slices of ceviche on<br />
a serving platter, then top with grapefruit<br />
segments and diced cucumber. Pipe the<br />
avocado all over, then top with some pickled<br />
red onion, coriander leaves and a sprinkle of salt<br />
and pepper. Drizzle with extra virgin olive oil and<br />
serve at once.

Rakmacka prawn and salad cups<br />
with a dill and lemon mayo<br />
This easy dish makes a delicious lunch for four<br />
Serve it with a glass of Allesverloren Tinta Rosé.<br />
You’ll need: For the prawns ... 32 large prawns<br />
(deveined and shelled, but you can leave the<br />
tail intact), 2 Tbsp olive oil, 2 Tbsp butter,<br />
2 cloves garlic (finely crushed), juice of half a<br />
lemon, salt and freshly milled pepper<br />
For the sauce ... 1 to 2 Tbsp lemon juice (to<br />
taste), half a cup good quality mayonnaise,<br />
2 Tbsp chopped fresh dill, 2tsp freshly grated<br />
lemon rind (chopped superfine), salt and<br />
freshly milled pepper<br />
For the melba toast ... 2 mini-French loaves or<br />
1 small ciabatta. 2 Tbsp olive oil, sea salt flakes<br />
For serving ... 2 to3 heads romaine lettuce<br />
hearts, leaves carefully broken apart and rinsed,<br />
fresh lemon wedges<br />
To make: Preheat the oven to 180C. To make<br />
the melba toast, slice the bread as thin as you<br />
can without it crumbling (older bread generally<br />
works better). Spread out in a single layer on a<br />
baking tray. Brush each slice with olive oil. Bake<br />
for 10 minutes, or until they start to go golden<br />
around the edges.<br />
To cook the prawns, heat the butter and oil<br />
until bubbling and then add the prawns.<br />
Avoid crowding the pan by cooking the<br />
prawns in two batches. Add the garlic and<br />
cook for about 5 minutes until the prawns<br />
start going pink. Prawns cook very fast –<br />
remove them from the heat as soon as they<br />
go pink. Season well with salt, pepper, and a<br />
generous squeeze of lemon juice.<br />
To make the sauce, mix all the ingredients<br />
together well. Place two prawns into the<br />
hollow of each salad leaf, serve with a dollop of<br />
the sauce, and melba toast.<br />

What are some of the current landscaping trends on the<br />
North Coast?<br />
After Covid, the biggest trend that has emerged seems to be<br />
people wanting to 'ground' or connect to real elements within<br />
their landscape. It's all about germinating seeds, growing<br />
plants and producing food. People have felt the urge to get off<br />
the grid, harvest water and become more sustainable. There is<br />
a definite shift towards going totally natural.<br />
What about colours, shapes and plants?<br />
You have two totally different trends and schools of thought<br />
at the moment - those who support 'over-regulated'<br />
environmental control in some estates without trend or<br />
movement, and those who want to brighten up their lives with<br />
flowering orchids and large monstera plant leaves and textures.<br />
In terms of colour, it's mostly green. Vertical herb gardens and<br />
the use of special LED lighting are also very popular.<br />
What are your top three tips for first-time home builders<br />
with regards to landscaping?<br />
* Resolve your earthworks, terraces and stormwater<br />
management;<br />
* Spend money on durable hardscape - paving and vertical<br />
walls;<br />
* Plant the correct tree frame/screen planting to have a longterm<br />
privacy solution.<br />
Advice for gardening in the summer months?<br />
It's not too late to prune trees and cut shrubs back if<br />
overgrown. Carry on mulching to keep moisture in during<br />
hot summer days and stimulate micro-organisms - after some<br />
years your garden will smell like a wet forest floor! Make sure<br />
your stormwater management is sorted (even for a 1:200-year<br />
flood). Control garden bugs in the friendliest possible manner<br />
and remember to service your irrigation system to prevent<br />
water loss and align spray heads.<br />

North Coast’s very first Muddy Princess 5km<br />
obstacle race this month.<br />

So, what can you expect? Each event comprises of<br />
approximately 16 to 18 obstacles and up to 4 000<br />
participants. There are water stations, professional<br />
photographers and showers to clean off at the end.<br />
Everyone gets a medal (yay!) and there is an 'event village'<br />
where you (and your family and support team) can buy food<br />
and drinks, merchandise and treats.<br />
The event is open to all women (there is even a 'little<br />
princess' ticket for girls between 6 and 13 years).<br />
Muddy Princess Dolphin Coast takes place on Sunday, 20<br />
<strong>Nov</strong>ember, from 8am to 4pm at Oaklands Equestrian Estate.<br />
The event area opens at 7am, but the first wave will go off<br />
at 8am and continue every 20 minutes until the last wave in<br />
the afternoon.<br />

There are so many reasons why we love Paternoster ... the<br />
quintessential fisherman’s village on the Cape West Coast.<br />
But we admit, right up at the top of the list of loves is the<br />
utterly sensational Strandloper Ocean Boutique Hotel.<br />
Sitting on the edge of the long, white, shell-strewn beach and<br />
the somewhat chilly, wild sea, this laid-back luxurious, romantic<br />
boutique hotel is all wide open spaces and huge skies and<br />
views forever.<br />
And when we say luxurious, we mean in the very best sense of<br />
the word. So there’s no glitz - rather all calm hues, with furniture<br />
and fittings made locally out of stone, wood and fine organic<br />
linen. No pretentiousness - just secluded comfy nooks and top<br />
notch, warm, personal service. For heaven’s sake ... there’s even<br />
a no shoes suggestion ... you’re encouraged to leave them at<br />
the door and relax.<br />
It’s all serenity and natural and private and secluded ... the<br />
hotel boasts a philosophy of being in harmony with nature<br />
and blending in with the delicate beauty of the surroundings.<br />
And we can think of nowhere we’d rather be at the end of this<br />
rather stressful year.<br />
The rooms and suites - a little over a dozen - have been<br />
designed to blur the lines between indoors and out and<br />
are a clever fusion of beach style and contemporary luxury.<br />
Deceptively simple ... but so much thought has gone into<br />
making them as comfortable as possible.
So you can expect sink-in-me sofas<br />
and private courtyards and terraces,<br />
fireplaces in some of the rooms,<br />
outdoor showers in others. It’s all<br />
natural bath salts alongside state-ofthe-art<br />
Bang & Olufsen audio systems,<br />
home-made fudge by the beds at<br />
night rubbing sweet shoulders with<br />
top notch coffee machines.<br />
The attention to detail is phenomenal.<br />
Request oat milk with your afterdinner<br />
coffee and by the time you<br />
return to your room, there’s oat milk<br />
in your mini fridge for the rest of your<br />
stay. Ask for fresh lemon squeezed<br />
into hot water for breakfast ... the next<br />
morning there’s a pot of boiling water<br />
and half a lemon waiting on the table.<br />
Talking breakfast and dinner ... The<br />
Strandloper is home to Leeto, what<br />
we rate one of the best restaurants in<br />
the country. With a strong emphasis<br />
on local, seasonal products, the<br />
restaurant, which overlooks the beach<br />
and sea, is simply but exquisitely<br />
furnished and is run by Chef Garth<br />
Almazan, a Capetonian who grew up<br />
in a fisherman’s family and ensures<br />
the food is fuss-free and simple, but<br />
with a local West Coast twist. Expect<br />
dishes like West Coast oysters with<br />
lime and tabasco, Malay spiced<br />
mussel soup and seafood linguini.<br />
There’s a spring risotto loaded with<br />
baby spinach, broccoli, baby marrow,<br />
snap peas, portobello mushrooms,<br />
goat’s feta, white truffle oil, parmesan<br />
and ciabatta crumbs that we’ll order<br />
again and again and again, should<br />
we be fortunate enough to return,<br />
and a chickpea, lentil and spinach<br />
curry served with potato samoosa<br />
... swoon. Oh. And marmalade icecream.<br />
Be still my beating heart! The<br />
food is subtly sophisticated, Garth<br />
says, which is a reflection of the<br />
entire Strandloper experience.<br />
While it would be easy - and massively<br />
enjoyable - to sit on the terrace and<br />
admire the fynbos and the sea for<br />
hours, leaving just to stroll down<br />
to dinner, there’s loads to make a<br />
holiday in the area hugely enjoyable.<br />
For the hedonistic, the hotel has an<br />
exceptional spa, but for the more<br />
energetic the hotel concierge can<br />
arrange cycling, guided bush hikes<br />
(a lovely way to explore the area),<br />
guided horseback riding along the<br />
beach, boat bird safaris up the river,<br />
as well as bird photographic safaris,<br />
kayaking and beach buddy dunes<br />
tours - which are fabulous fun.<br />
All well organised and thoroughly<br />
enjoyable. But we’re on the same<br />
page as the hotel team ... who say,<br />
first and foremost, they want guests<br />
to experience the ultimate luxury –<br />
the art of doing nothing. To ground<br />
themselves again and to take the time<br />
to simply be. To be reminded about<br />
what is really important in life. For<br />
them to be immersed in a feeling of<br />
tranquillity. To really take time to drink<br />
in the breathtaking, raw beauty of<br />
this piece of West Coast paradise and<br />
to enjoy it as much as they do. And it<br />
didn’t take much to convince us to<br />
do just that!<br />

It’s just not going to be a talked-about affair<br />
without a couple of bottles of Hotel Starlino. With<br />
bottles Inspired by the Art Nouveau architecture of<br />
the distillery - Torino Distillati - located just outside<br />
of Turin - the birthplace of Aperitivo, there are three<br />
flavours and they’re equally appealing. Starlino<br />
Arancione Aperitivo is made with Italian orange<br />
peel, lemon peel and herbs and spices. Starlino<br />
Rosa is a zesty and complex citrus-forward blend of<br />
Italian pink grapefruit, lemon and orange and is an<br />
intriguing bittersweet botanical Aperitivo. Starlino<br />
Rosso Vermouth is a traditional red Vermouth di<br />
Torino - aged in Kentucky bourbon barrels for a rich,<br />
warm, spicy aroma and flavour. One part Aperitivo,<br />
three parts prosecco or soda, garnished with an<br />
orange or grapefruit slice and plenty of ice.<br />
Add a bottle or two of Monte Stambecco. A rich<br />
golden, bold Italian Amaro liqueur, named after the<br />
ibex - a long-horned mountain goat which roams<br />
the Italian Alps. Bittersweet - it was originally<br />
created to aid digestion, it’s all citrus, cinnamon,<br />
cardamom and cherry. Drink it neat as a premium<br />
shooter, over ice or in a variety of Amaro cocktails.<br />
Then make sure there are half a dozen or so bottles<br />
of Prosecco Rosé DOC Mionetto ... an Italian<br />
Prosecco from the small village of Valdobbiadene.<br />
Extra dry, pale pink, with honey and bread crust<br />
aromas, it’s a glass of bubbly heaven.<br />
Finally, based on the premise that if three-quarters<br />
of your cocktail is the mixer, mix with the best!<br />
