Cheers to the New Year! Welcome aboard<br />
<strong>Bangkok</strong> <strong>Airways</strong>.<br />
For the year <strong>2024</strong>, <strong>Bangkok</strong> <strong>Airways</strong> remains<br />
committed to its excellent service and ensuring<br />
that all passengers arrive at their destination<br />
safely and with a positive experience. We prioritise<br />
not only our passengers’ happiness but also<br />
environmental sustainability, community well-being,<br />
and responsible governance. Our goal this year<br />
is to conduct business with a focus on sustainable<br />
practices, which means caring for the environment<br />
as well as for the community and other stakeholders,<br />
so that everyone can support one another and<br />
live together happily.<br />
As a testament to this commitment, our<br />
company was recently added to the Stock<br />
Exchange <strong>of</strong> <strong>Thai</strong>land’s list <strong>of</strong> 193 companies<br />
with a “SET ESG Rating 2023”. <strong>Bangkok</strong> <strong>Airways</strong><br />
received a BBB rating. We also received a score <strong>of</strong><br />
5 stars (“Excellent”) in the corporate governance<br />
assessment <strong>of</strong> the <strong>Thai</strong> Institute <strong>of</strong> Directors<br />
Association, which falls under the jurisdiction <strong>of</strong><br />
the Stock Exchange <strong>of</strong> <strong>Thai</strong>land.<br />
The airline plans to organise various activities<br />
and projects throughout <strong>2024</strong>. Among them are<br />
the <strong>Bangkok</strong> <strong>Airways</strong> Boutique Series marathon<br />
running programmes, the “Clean and Alternative<br />
Energy Project” for airports under our management,<br />
and the Aviation Operations Department’s<br />
efficient use <strong>of</strong> jet fuel, which is already operating.<br />
We are determined to help reduce greenhouse<br />
gas emissions in the tourism sector and achieve<br />
our mission goal to “Fly Net Zero Carbon<br />
by 2050”.<br />

Festival & Workshops in Siem Reap have<br />
served as a breeding ground for emerging<br />
Asian photographers. Shutterbugs from<br />

to share their work, ideas, and techniques.<br />

Design Week <strong>2024</strong> (BKKDW <strong>2024</strong>) unleashes<br />
the city’s creative side in a quest to find<br />
cures for chronic ailments like traffic jams,<br />
air pollution, limited public spaces, and the<br />
impacts <strong>of</strong> climate change.<br />
The capital’s main hives <strong>of</strong> creativity<br />
– Charoen Krung-Talad Noi, Samyan-Siam,<br />

NEW HAVEN FOR ART<br />
MMAD (MunMun Art Destination)<br />
is inviting <strong>Bangkok</strong>ians and visitors<br />
to take a deep dive into their<br />
imaginations. Situated on the second<br />
and third floors <strong>of</strong> Seacon Square on Srinakarin<br />
Road, MMAD’s mission is to establish a thriving<br />
art community in eastern <strong>Bangkok</strong>. The space is<br />
designed as playground to unlock creativity in<br />
visitors <strong>of</strong> all ages and make art accessible to all.<br />
MMAD <strong>of</strong>fers a range <strong>of</strong> art experiences<br />
catering to all tastes, including art exhibitions,<br />
art markets, and craft workshops. Current<br />
exhibitions include “CHILDHOOD: a solo<br />

The “Rose <strong>of</strong> the North” bursts into bloom<br />
during the annual Chiang Mai Flower Festival.<br />
For three days, the city becomes a kaleidoscope<br />

The Chinese New Year, also known as the<br />
Spring Festival, is the grandest celebration<br />
in China, marked by seven or eight days<br />
<strong>of</strong> holiday. But the colourful and dynamic<br />
festivities usually last up to two weeks, with<br />
the crescendo coming on Lunar New Year’s<br />
Eve as family dinners bring joyous reunions.<br />
Iconic red lanterns illuminate streets<br />
and homes, fireworks paint the skies, lavish<br />
banquets are shared, while dragon dances<br />
and parades fill the streets with energy. The<br />
exuberant celebrations extend far beyond<br />
China to destinations across the globe.<br />
Preparations for Chinese New Year<br />
commence well in advance, with people<br />
cleaning their homes to “sweep out bad<br />
luck” – though brooms are hidden on New<br />
Year’s Day to prevent the “sweeping away <strong>of</strong><br />
good luck”. New clothes are worn on this day<br />
and substantial supplies <strong>of</strong> food for the New<br />
Year’s Eve dinner are secured in advance,<br />
meaning shopping centres become very busy<br />

Makha Bucha Day is marked on the full moon<br />

festival honours the original teachings <strong>of</strong> the<br />
Buddha, imparted to over 1,250 monks.<br />
On this day, Buddhists make merit in the<br />

Devotees join candle-lit processions encircling<br />

The legend became entangled<br />
with King Narai <strong>of</strong> Ayutthaya, who was<br />
considered to be an incarnation <strong>of</strong> Rama<br />
(Vishnu). In 1665, King Narai built his<br />
second palace in Lop Buri, the “City <strong>of</strong><br />
Hanuman”, to distance himself from<br />
the political intrigues and cold-blooded<br />
murders <strong>of</strong> the Ayutthaya court.<br />
King Narai’s 17th-century palace is<br />
an architectural marvel blending <strong>Thai</strong>,<br />
Khmer, and European styles. Though<br />
it fell to ruins after the king’s demise,<br />
it remains a compelling destination,<br />
inviting exploration <strong>of</strong> its opulent halls,<br />
meticulously landscaped gardens, and<br />
ancient artefacts.<br />
Close by, the King Narai National<br />
Museum traces the town’s history,<br />
art and local lifestyles, starting with<br />

extraordinary Buddha sculptures dating<br />
back to the 7th century.<br />
King Narai’s reign transformed the<br />
tranquil “monkey town” into a fashionable<br />
destination for elites, including French<br />
diplomats during the 17th century.<br />
Constantine Phaulkon, a Greek<br />
adventurer-turned-minister, forged an<br />
unbreakable bond with King Narai from<br />
Wichayen House, his residence just 400<br />
metres north <strong>of</strong> the palace. Here, you<br />
are immersed in the captivating tale <strong>of</strong><br />
how fate led Phaulkon to the Siamese<br />
court and Lop Buri after his shipwreck in<br />
the 1760s. With his adept trading skills<br />
and pr<strong>of</strong>iciency in foreign languages, he<br />
ascended to the position <strong>of</strong> trade and<br />
foreign minister, becoming King Narai’s<br />
most favoured and influential <strong>of</strong>ficer.<br />
His grand European-style residence on<br />
Wichayen Road features a church and, <strong>of</strong><br />
course, a wine cellar to host envoys from<br />
King Louis XIV <strong>of</strong> France.<br />
As you explore the ruins <strong>of</strong> Wichayen<br />
House and wonder where the Burgundy<br />
was stored, you’ll discover that life dealt<br />
Phaulkon an abundance <strong>of</strong> twists and<br />
turns. A shipwrecked Greek commoner,<br />
he managed to earn favour from the<br />
illustrious king <strong>of</strong> Siam and wed Maria<br />
Guyomar de Pinha, renowned as a great<br />
cook and also one <strong>of</strong> the most beautiful<br />
women in Ayutthaya. Phaulkon’s story<br />
took a tragic turn when he attempted to<br />
seize the throne and was executed for<br />
treason by Narai’s successor.<br />

That Divides<br />
The world’s love-hate relationship with <strong>Thai</strong>land’s infamous ‘stink beans’<br />
Delicious or disgusting? Diners are <strong>of</strong>ten<br />
divided by <strong>Thai</strong>land’s famous “stink beans”.<br />
However, along with their pungent fragrance,<br />
they come packed with a healthy cocktail<br />
<strong>of</strong> protein, calcium, phosphorus, iron<br />
and vitamins B1, B2, B3 and C. Regular<br />
consumption <strong>of</strong> these beans is believed to<br />
nourish the eyes, blood, reduce flatulence<br />
and help clear the tummy.<br />
As for the “stink”, getting rid <strong>of</strong> it is<br />
simple – just put the beans on a rolling boil<br />
and then wash them. Or opt for the oldschool<br />
method <strong>of</strong> roasting the pods over<br />
a charcoal fire for a minute or two. These<br />
beans can also leave a strong odour in the<br />
mouth, but this can easily be fixed by eating<br />
a couple <strong>of</strong> raw <strong>Thai</strong> eggplants.<br />
Bitter beans, as they are <strong>of</strong>ficially<br />
known, can be found in Indonesia,<br />
Malaysia, Myanmar, Laos and <strong>Thai</strong>land,<br />
especially in the South, where they are<br />
consumed either fresh or grilled with chilli<br />
paste or just added to curries.<br />
The most popular dish that features<br />
these smelly delicacies is Phad Sataw<br />
Goong or stir-fried prawns with bitter<br />
beans. The recipe is easy: Pound together<br />
garlic, bird’s-eye chillies and shallots and<br />
stir-fry them until you get a nice aroma.<br />
Then add shrimp paste and palm sugar.<br />
Once everything is nicely mixed, add the<br />
prawns and bitter beans. Season with fish<br />
sauce and a splash <strong>of</strong> lime juice and serve<br />

It’s no surprise to me that Phanaeng is<br />
considered the best curry in the world. This<br />
is not because I’ve always been a fan <strong>of</strong> <strong>Thai</strong><br />
cuisine but because this creamy, orange curry<br />
has a uniquely sweet and slightly spicy flavour<br />
that enchants diners across the world. Those<br />
flavours come from authentic ingredients,<br />
most <strong>of</strong> which can actually be found in our<br />
own backyard. I recommend serving the curry<br />
with steamed Jasmine rice to enhance the<br />
flavour, adding joy to the experience as you sit<br />
down to eat with your loved ones.<br />
Trust me when I say that making a<br />
delicious Phanaeng Gai (chicken) is not<br />
difficult. You don’t need to spend long hours<br />
in a cooking class to perfect this dish. In fact,<br />
simply ensure all the ingredients are authentic<br />
since rich coconut milk and a bold curry paste<br />
are the cornerstone <strong>of</strong> a perfect Phanaeng.<br />
The final step is easy – eating the chicken<br />
bathed in rich curry sauce delivers a burst<br />
<strong>of</strong> sweet, savoury and slightly sour flavours.<br />
Don’t forget to top your serving with a<br />
sprinkle <strong>of</strong> oil and kaffir lime zest for a<br />
refreshing touch.<br />

• 2 cups diluted coconut cream<br />
• 5g sliced capsicum (bell pepper)<br />

Phanaeng curry paste ingredients<br />
• 10 red capsicums<br />
• 1 tbsp coriander root<br />
• 2 sticks lemongrass<br />
• 1 tsp white pepper<br />
• 7 shallots<br />
• 2 tbsp ground coriander seeds<br />
• ½ cup garlic<br />
• 2 tsp ground cumin<br />
• ½ thinly sliced galangal<br />
• 4 tbsp crushed peanuts<br />
• 1 tsp kaffir lime peel<br />
• 1 tbsp shrimp paste<br />
Method<br />
Prepare Phanaeng curry paste by pounding all ingredients in a mortar<br />
Slice the chicken into bite-size pieces (pork or fatty beef is perfect too)<br />
Simmer the coconut cream<br />
Stir-fry the curry paste with the coconut cream until the mix releases a fragrant<br />
aroma. Add the chicken and stir-fry until cooked and well-mixed with<br />
the curry paste<br />
Add the chicken to the simmered coconut cream. Increase the heat until it<br />
starts boiling, then lower. Season the mix with fish sauce, sugar, and a bit <strong>of</strong><br />
kaffir lime juice. Add stir-fried crushed peanuts and simmer until the curry<br />
thickens and the oil separates<br />
Taste the curry. The perfect Phanaeng should be slightly spicy, sweet, rich<br />
thanks to the coconut cream and savoury with a touch <strong>of</strong> sour. Dress it with<br />
basil leaves and sliced red capsicums. Now it’s time to serve!<br />

rose apple is native to most <strong>of</strong> Southeast Asia,<br />
especially Malaysia and Indonesia.<br />
Humans have known about this healthy<br />
snack since prehistoric times, when it was<br />
consumed by the Austronesian people. Now, the<br />
Malay rose apple is available in practically every<br />
corner <strong>of</strong> the tropics.<br />
Normally deep red in colour, the fruit can<br />
also be found with a blush <strong>of</strong> pink or white.<br />
When cut, the crunchy white flesh is succulent<br />
with a sweet but slightly sour flavour. The rose<br />
apple is generally consumed fresh, but can also<br />
be found in the form <strong>of</strong> juice, jam and even wine.<br />
The Malay rose apple’s gorgeous fuchsia<br />
pink pom-pom-like flowers are also edible, as<br />

First created in the 1700s, <strong>Thai</strong>land’s very own version <strong>of</strong><br />
traditional custard, Khanom Mo Kaeng, has stood the test <strong>of</strong><br />
changing times and tastes<br />
The traditional <strong>Thai</strong> dessert<br />
Khanom Mo Kaeng may<br />
look like a western custard,<br />
but don’t be fooled. Unlike<br />
its sweet cousin, the <strong>Thai</strong><br />
treat is slightly savoury<br />
thanks to a topping <strong>of</strong><br />
deep-fried shallots.<br />
This unusual pudding<br />
has a long history. Maria<br />
Guyomar de Pinha,<br />
known as the queen <strong>of</strong><br />
<strong>Thai</strong> desserts, served<br />
this creation in a brass<br />
pot to King Narai and<br />
his daughter Princess<br />
Sudawadi. Hence, its<br />
original name, Kumphamat,<br />
or “golden pot”.<br />
Pinha, whom <strong>Thai</strong>s<br />
know as Thao Thong<br />
Kip Ma, was a Siamese<br />
woman <strong>of</strong> mixed Japanese-<br />
Portuguese-Bengali<br />
ancestry who was born<br />
in Ayutthaya in the 17th<br />
century. She is the creator<br />
<strong>of</strong> several <strong>Thai</strong> desserts<br />
influenced by Portuguese<br />
cuisine, including Foi Thong,<br />
Sangkhaya Fakthong<br />
and Sangkhaya.<br />
Nowadays, Khanom<br />
Mo Kaeng is usually sold<br />
in a square tin and comes<br />
in a variety <strong>of</strong> flavours,<br />
including taro, beans,<br />
eggs and lotus seed. The<br />
ingredients <strong>of</strong> this custard<br />
are fairly simple – steamed<br />
taro or bean paste, duck<br />
eggs, palm sugar, coconut<br />
cream, and pandan leaf for<br />
aroma. The custard can<br />
either be cooked over a<br />
very low fire, steamed or<br />
baked and finished <strong>of</strong>f with<br />
a sprinkling <strong>of</strong> fried shallots.<br />
Phetchaburi Reset<br />
Khanom Mo Kaeng made a comeback in 1986 when<br />
Phetchaburi province launched a campaign to promote its<br />
Phra Nakhon Khiri Historical Park as a tourist attraction.<br />
Local communities jumped on the bandwagon and began<br />
selling the historied custard, which has now become<br />

amazes visitors with some <strong>of</strong> the region’s<br />
biggest cultural showcases. For its latest<br />
extravaganza, the island is treating<br />
aesthetes to a weeklong tour <strong>of</strong> the<br />
buzzing art scene in Southeast Asia<br />

The 12th edition <strong>of</strong> Singapore Art<br />
Week (SAW), the region’s longestrunning<br />
arts event, will engulf the city<br />
in a wave <strong>of</strong> creativity from <strong>Jan</strong>uary 19<br />
to 28.<br />
SAW <strong>2024</strong> will welcome local and<br />
international artists, art aficionados,<br />
collectors, and curators with a vibrant<br />
programme <strong>of</strong> events and exhibitions<br />
covering indoor and outdoor spaces<br />
across the city. Expect the colourful<br />
atmosphere to open new wellsprings <strong>of</strong><br />

Highlights to look out for include “Light to Night Singapore <strong>2024</strong>”,<br />

As well as presenting traditional<br />
Lanna ways via everyday woven<br />
items, Raya Heritage evokes daily<br />
life <strong>of</strong> Doi Tao villagers through<br />
the Satu brand <strong>of</strong> clothing available<br />
at its boutique shop. Satu was<br />
founded by Doi Tao native Saksaran<br />
Duang-in, who wanted to create<br />
sustainable livelihoods for his<br />
family and community while<br />
reducing environmental impact.<br />
An agriculture graduate who<br />
worked for non-governmental<br />
organisations, Saksaran returned<br />
to his home village and joined his<br />
mother, a dressmaker, to produce<br />
unique clothing made from s<strong>of</strong>t<br />
hemp and naturally dyed cotton. He<br />

travels 125 kilometres from Doi Tao<br />
to sell his unusual clothing at Jing<br />
Jai Market in downtown Chiang Mai<br />
every Saturday and Sunday.<br />
“The Satu brand sells not just<br />
clothing but the story around<br />
it. Fashions come and go, but<br />
our products are designed to<br />
remind people to live their lives<br />
mindfully. For example, one shirt<br />
is embroidered with the word ‘Sati’<br />
[consciousness] upside-down so<br />
the wearer can read this word and<br />
be aware that death can happen<br />
anytime,” says Saksaran.<br />

“The seniors in my village earn a<br />
daily income <strong>of</strong> 300-400 baht each,”<br />
he explains.<br />
“The happiest among them<br />
is my mother, who is also my<br />
business partner. At first, she was<br />
very worried when I quit my job<br />
and returned home, because she<br />
had no idea what I would do next.<br />

create sustainable livelihoods in the<br />

A two-hour drive through the<br />
mountains from downtown Chiang<br />
Mai, the small Phrao district lies<br />
<strong>of</strong>f the tourist map despite its<br />
tranquil and beautiful surroundings.<br />
However, visitors who do make the<br />
long trip are rewarded with Siri<br />
Mueang Phrao, a cosy sanctuary<br />
containing a delightful library, art<br />
gallery, organic farm, café, and<br />
souvenir shop.<br />
Four years ago, the multitalented<br />
Karaket Sriparinyasin – a writer,<br />
former editor <strong>of</strong> Praphansarn<br />
Publishing House and astrologer<br />
at www.kapook.com – persuaded<br />
her siblings to return to their<br />
hometown and create a new local<br />
landmark. As well as tightening the<br />
family bond, Siri Mueang Phrao also<br />
provides jobs and other benefits for<br />
people in the community.<br />
“Sure, we admit what we do is<br />
very ideological. Starting a business<br />
during a pandemic? Like pouring<br />
money down the drain,” she says.<br />
“But the risk is worth it when we<br />
can spark inspiration in visitors. If a<br />
book from our library can inspire a<br />
child’s journey through life, then our<br />
efforts have been worthwhile.”<br />

dream for the Sriparinyasin family,<br />
and now each member has helped<br />
make it come true.<br />

Inspired, he came up with the<br />
workshop “Colours for a Balanced<br />
Happiness”, using nature’s palette to<br />
explore the importance <strong>of</strong> watershed<br />
forests, natural resources, and<br />
the environment.<br />
“I want to take environmental<br />
issues out <strong>of</strong> the box <strong>of</strong> academic<br />
approach,” says Chanoknan. The<br />
art workshop is a practical and<br />
enjoyable way to gain appreciation<br />
for nature while becoming a more<br />
responsible traveller. Children and<br />
tourists alike are invited to extract<br />
colours from stones and soil<br />
collected from four communities<br />
in Chiang Dao and one in the<br />
southern province <strong>of</strong> Trang. They<br />
then use the natural paints to<br />
create artworks that tell unique<br />
stories <strong>of</strong> each locale.<br />

How does the traditional Lanna dance<br />
help preserve Chiang Mai’s cultural<br />
richness? Saowakhon Sriboonruang, a<br />
coordinator for Rak Chiang Mai Urban<br />
Community Network and owner <strong>of</strong><br />
Chiang Mai Heart souvenir shop,<br />
points to the importance <strong>of</strong> intangible<br />
cultural heritage.<br />
“Over the past decade, our<br />
community network has pushed<br />
Chiang Mai as a world living<br />
heritage city,” says Saowakhon.<br />
“The term ‘world heritage site’<br />
serves as a shield, safeguarding<br />
Chiang Mai’s exquisite and distinctive<br />
traditional cultures against practices<br />
that threaten the city’s identity.”<br />
To keep the traditional dance<br />
alive, Rak Chiang Mai Urban<br />
Community Network holds<br />
regular training classes taught by<br />
masters, ensuring that the cultural<br />
heritage is passed down through<br />
generations. The network boasts<br />
over 900 dancers, ranging from five<br />
years old to 80, who participate in<br />
major events such as the annual<br />
Yi Peng lantern festival in November<br />
and Chiang Mai’s founding ceremony<br />
on April 12.<br />
The network <strong>of</strong>fers an innovative<br />
twist during the Yi Peng festival.<br />
“We run a campaign to light<br />
phang [small clay-cup candles]<br />
instead <strong>of</strong> releasing sky lanterns,”<br />
Saowakhon explains. “This not<br />
only prevents potential damage to<br />
aircraft, public property and homes<br />
but also supports local potters.”<br />
Over the years, the campaign has<br />
grown from 25,000 candles to over<br />
100,000 candles in its 10th year.<br />
“We also promote the display <strong>of</strong><br />
tung [Lanna-style flags] around the<br />
city during Yi Peng,” she adds. This<br />
not only supports tung artisans but<br />
also adds a burst <strong>of</strong> colour to streets<br />
during the festival.<br />
Working passionately to preserve<br />
their hometown’s essence, the “little<br />
people” <strong>of</strong> Chiang Mai are showing<br />
how a city can evolve sustainably<br />
