When it comes to living with passion and
zest, I truly see it in chef Daniel Varrone.
He boils over with enthusiasm for his chosen
path and the desire to increase his
knowledge through life’s experiences.
Not that he knew he chose his path at first. Maybe it
chose him. And who better? Whenever we meet in his
environment, I get “the tour,” which always includes specially
prepared food along with explanations of the ingredients
used — the who, what, when, where, why and
how — the history and the family connections.

Our first meeting was during a tour of the kitchen of
Sublime, the only vegetarian restaurant in Ft. Lauderdale
at the time. After dinning there with another yacht chef
friend, we got invited to see the kitchen and meet Daniel.
Having been a vegetarian myself for years, I was thrilled,
but not as thrilled as Daniel was to show us his kingdom.
That excitement is part of his everyday life, and remains
the same even with his busy yachting schedule as chef
on board M/Y Mad Summer.
