and dramatic, this is arguably one of the best Cab<br />

Franc (Sierra Foothills). Still quite young,<br />

this 100% Cabernet Franc shows great promise with<br />

do, with smoky overtones amid layers of green olive, cedar<br />

and pepper. The finish has a bite of minty cocoa.<br />

in smoky new oak. This feels dramatic and important,<br />

but nowhere near ready. Give it eight years in the cellar.<br />

Sauvignon (Knights Valley). Tastes big,<br />

thick and full-bodied, with ripe fruit and new oak dominating.<br />

the wine barely drinkable now. Cellar it until 2015, at<br />

Sauvignon (Knights Valley). This is a big,<br />

rich, dramatic Cabernet, marked with flavors of ripe<br />

blackberry and black currant. It’s clearly a pedigreed<br />

wine, yet it’s young and aggressive in tannins, making it<br />

astringent. Cellar it for a good eight years, to see what it<br />

Signature Cabernet from Chappellet. This has primary<br />

blackberry and cherry-jam flavors, with an additional<br />

note of toasty oak. The tannins and acids are excellent,<br />

lending structure to the richness. The result is a<br />

wonderfully-complex Napa Cabernet that should develop<br />

rich in fruit, this Cabernet shows its California origins in<br />

the incredibly ripe blackberry, cherry and chocolate flavors.<br />

It’s sweet, almost like pie filling, except the finish is<br />

thoroughly dry. Thick mountain tannins make for astringency,<br />

suggesting ageworthiness. The window of drinkability<br />
