The aromatic plantshave a space that has come growing standing out therefore the pepper, the mint,the oregano, cedrón, the celery and the tea. Nevertheless its main consumption isin fresh failing to take advantage of opportunities of commercialization at nationaland international level, for want of studies of industrialization of these plants. Theraised general mission is to generate the necessary knowledge for the analysisand investigation of the aromatic plants, taking advantage of its properties with thepurpose of to improve some nutritional products. This objective this based onspecific objectives that have come being developed throughout the research workbasically initiating to characterize the species in study to establish their potential inthe food industry, being determined the characteristics, properties and applicationsof some aromatic plants like the Cedrón, the Oregano and the Mint. On the otherhand the conditions of dehydration and milling for the flour obtaining of thearomatic grass in study settled down, for the later formulation of cakes with apercentage of flour of cedrón. Finally for the determination of the secondarymetabolites in this plant I am used the technique of extraction byespectrofotometria UV/VIS. Later some partial results as far as the elaboration ofcakes of cedrón were obtained where the best relation between the flour of theleaves of the aromatic plant and the flour of wheat for the obtaining of cakes wasestablished: (9: 1).
