CHINESE NOODLES<br />

Break into short lengths 1 bunch (one-half pound) Chinese noodles.<br />

Boil in plenty of hot water till soft. Strain through colander, and wash<br />

starch out with cold water. Put into good, rich pork, chicken, or beef<br />

soup, containing finely cut pieces of pork, or chicken, or mushrooms,<br />

together with chopped green onion. Add salt and either Chinese or<br />

tomato sauce. Bring to boil.<br />
