“<strong>Haitian</strong> Lemonade”<br />

Lime and lemon are found everywhere in Haiti; therefore, lemonade is very common.<br />

Ingredients:<br />

Limes - One lime per 8 oz. of water<br />

Sugar<br />

Different kinds of extracts such as vanilla extract<br />

Water<br />

Preparation:<br />

Cut and squeeze the limes into the jar of water. Add two drops of vanilla extract and sugar to taste.<br />

Add some ice, and drink cold.<br />

Papaya Juice<br />

Papaya is a tropical fruit found on many Caribbean islands and found everywhere in Haiti. Most<br />

<strong>Haitian</strong> people have a papaya tree in their backyard. This fruit is sweet and juicy. Papaya is eaten<br />

in many different ways. It is used as a vegetable; it is also prepared with meat. When ripe, papaya<br />

is peeled and eaten like a fruit. Furthermore, it is used in juices, such as mixed fruit juice. Papaya<br />

is also used to make jam or jelly.<br />

Ingredients:<br />

1 big ripened papaya<br />

2 cans evaporated milk (16 oz.)<br />

6 ice cubes or 1 c. water<br />

1 tsp. vanilla extract<br />

2 tbsp. sugar (optional)<br />

Preparation:<br />

Peel and cut the ripened papaya. Blend papaya, milk, vanilla, ice cubes (or water), and sugar<br />

together. Serve immediately and very cold. This recipe makes four, one-cup servings. The juice<br />

should look like a milk shake. This juice is served fresh. It gets slightly bitter if it sits for a day or<br />

two.<br />

Cremasse or Kremas<br />

Cremasse is a national and traditional Creole drink that originated in Haiti during slavery. It is<br />

served during holidays and on special occasions.<br />

Ingredients:<br />

1 can condensed milk<br />

1 can coconut milk<br />

1 can evaporated milk<br />

1 pinch nutmeg powder and cinnamon powder<br />

1 pinch grated lime skin<br />

1 tsp. vanilla extract (or other kind)<br />

1 c. sugar or to taste<br />

Preparation:<br />

Mix condensed coconut, and evaporated milk in a big bowl. Add sugar, nutmeg powder, lime, and<br />

vanilla extract. Using a big spoon, mix until thick. At this point, the Cremasse is put in a bottle and<br />

ready to be served. This drink may last for months outside the refrigerator.<br />
