Because the Central Valley floor<br />
is flat, the groves can be planted<br />
in straight rows. The olive plants<br />
are trained along trellises, much<br />
like wine vines. The plants first<br />
grow directly upwards, then their<br />
branches drape over and down<br />
allowing the olives to be harvested<br />
100% mechanically and very<br />
rapidly.<br />
This incredibly efficient means of<br />
harvesting allows the olives to<br />
be crushed and processed <strong>with</strong>in<br />
hours of being picked.<br />
