Peppadews are sweet Piquante<br />

Peppers . Piquante peppers are<br />

native of Central America.<br />

The plant has a thick, upright,<br />

woody stem and the chile itself<br />

is narrow, curved and bright red<br />

in color. Believed to be closely<br />

related to the pequin, the De Arbol<br />

is thin fleshed, <strong>with</strong> a tannic flavor<br />

and searing heat<br />

Kardoula or Little Heart peppers from<br />

Greece. These have a mildly spicy flavor<br />

This dried chili is actually<br />

a dried, smoked jalepeño. It<br />

has a wrinkled, dark brown<br />

skin & a smokey, sweet<br />

flavor. They are generally<br />

added to stews & sauces.<br />

Rich-flavored, medium- hot<br />

pasilla, is a blackish-brown<br />

color. Exceptional in sauces.<br />
