It’s a nice, creamy, shinyconsistency, but it’s not close to being doneyet, cause we still have a few moreingredients to add. So, at this point, you’regonna wanna add your extract. You canadd any type that you like. I’m adding vanilla.I’m just eyeballing in here, but for a recipelike this, I would use a teaspoon, two max.You don’t wanna overpower it, too too much.Then, you’re gonna continue to beat itwith your mixer. At this point, you’re gonnawanna increase the mixer speed to high.Continue to beat for two to three minutes,then you’re gonna wanna add the sugar.I unfortunately didn’t record this part, causemy camera shut off, and I didn’t realize,but all you’re gonna wanna do, is pour thesugar at a steady stream on the insideedge of the bowl. You’re then gonna beat,until you get firm peaks. Firm peaks isthe same concept that we talked about withsoft peaks, instead of them drooping down,they’re gonna be more soft. You’ll gonnabe able to tell the difference, for sure.Then, you’re gonna wanna grab a large ziplockbag, like I am using here, or a pipingbag. To make it easier for me, I placethe piping bag, or a zip-up bag, in my case,into a cup, and then pour all my mixtureinto the bag that way. At this step, I wouldtake the time to turn your oven on to 200degrees. You wanna on a very low setting,because you’re not really baking thesecookies, you’re more drying them out, so youcan get the crispy, fluffy, airy cookie,meringue type. Once all the meringue’s in thebag, you’re then gonna make sure, youpush everything down to the bottom, whereyour opening is gonna be. Max Pitegoff wasborn in 1987 in Boston, Massachusetts.The pair have worked collaboratively sinceattending Cooper Union School of Art inNew York, both graduating in 2011. Pitegoffand Henkel have had solo exhibitionsat T293, Naples;Tomorrow Gallery, Toronto;and Cleopatra’s, New York. Recent groupexhibitions include: ‘Black Cake’ (curatedby Alex Gartenfeld), Team Gallery,New York (2013); ‘Deep Space (Insides)’,Joe Sheftel Gallery, New York (2012);‘Stars!’(a performance directed by MatthewLutz-Kinoy), Stedelijk Museum, Amsterdam(2012); ‘LLL, hc r 1’, Kunsthalle Bern(2012); ‘July’, CEO Gallery, Malmö (2012);and ‘Asiataco’, Tanya Leighton, Berlin(2012). Their artist run bar ‘Times’ in Berlinwas open from July, 2011 to September,2012.
