“Fabulous <strong>Fruits</strong> <strong>and</strong> Vital <strong>Vegetables</strong>” by Georgina Cundall Page 87 of 101¼ cup seasoned bread crumbs1 teaspoon saltA pinch of ground nutmeg <strong>and</strong> pepperTwo teaspoons flourTwo tablespoons melted butterFour eggs, separated1 tablespoon butterFour teaspoons grated cheese¾ pound sliced mushrooms,2 teaspoons grated fresh Parmesan cheese2 teaspoons chopped parsley½ teaspoon salt¼ teaspoon pepper¾ cup whipping creamMethodCook <strong>and</strong> drain spinach.Butter a 15 x 10-inch cookie sheet <strong>and</strong> line with wax paper.Butter paper <strong>and</strong> sprinkle bread crumbs.Squeeze excess water from spinach <strong>and</strong> place in a bowl.Add salt, pepper <strong>and</strong> nutmeg with two tablespoons melted butter.Separate eggs <strong>and</strong> beat in the egg yolks.Beat egg whites until stiff <strong>and</strong> fold into spinach mixture.Spoon <strong>and</strong> smooth evenly into prepared pan.Copyright © 2008 ~ All Rights Reserved 87.
