Layered Potato Casserole<br />

serves 4, takes 45 minutes<br />

1 kg potatoes<br />

5 eggs, hard -boiled<br />

150 g Hungarian dried smoked sausage,<br />

sliced<br />

2 1/2 cup sour cream<br />

50 g smoked bacon, diced<br />

salt to taste<br />

Cook unpeeled potatoes in salt water until tender then peel and<br />

slice. Peel the hard-boiled eggs and slice them.<br />

Fry the Hungarian sausage and bacon for 3 minutes.<br />

Now make layers with the ingredients in a greased pan or a<br />

deep casserole. Start with a layer of potatoes, salt the layer and<br />

sprinkle with the lard of the fried sausage and bacon. Add a few<br />

pieces of sausage and bacon and slices of eggs, put some sour<br />

cream on top and cover with a layer of potatoes. Add salt and<br />

some lard. Repeat the egg and sausage/bacon layer and cover<br />

with potatoes.<br />

Spread 1-2 tablespoon sour cream over top.<br />

Bake in a medium heat oven for 35-40 minutes.<br />

Serve with beetroot or any other pickles.<br />
