Potato Pancakes<br />
serves 6, takes 40 minutes<br />
½ kg potatoes<br />
200 g flour<br />
½ tsp salt<br />
300 g plum jam<br />
5 tbsp melted lard<br />
Chocolate decoration<br />
Mint leaves<br />
Peel and cut up potatoes finely and boil in salted water, then<br />
mash with a potato masher.<br />
Add as much flour as mixture can take up.<br />
Roll into cylinder shape and cut into finger-thick slices, then roll<br />
out thin.<br />
In a little lard fry both sides one by one in a pancake pan, then<br />
spread with preheated lard and serve filled with plum jam and<br />
folded in four.<br />
Can be decorated with chocolate and mint leaves.<br />
