A little bit of Italy comes to <strong>Bamford</strong><br />

<strong>Bamford</strong> Tennis club has decided to bring a little bit of Italy to <strong>Bamford</strong>. In reality it is more than a little bit and is<br />

in fact 10 tonnes which is the quantity of Italian clay they have imported and laid on their courts.<br />

The clay that has been imported is exactly the same as that laid on the courts which are used in the major International Tennis<br />

Federation tournaments at Monte Carlo and Rome.<br />

Clay courts have a reputation for being the best surface to learn and play tennis on. They provide a slow high bounce and are less<br />

stressful on the joints than other harder surfaces. Andy Murray had to travel all the way to Spain to practice on clay so just think if<br />

he was starting out today he could come to <strong>Bamford</strong>!<br />

The <strong>May</strong>or of Rochdale has kindly agreed to open the new courts at 2pm on the 29th <strong>May</strong> <strong>2017</strong> and anybody is welcome to<br />

attend and try out the courts for free on that day if they wish. If you can’t make that day, the same free offer is available every<br />

Saturday afternoon. Beginners are also welcome<br />

In an initiative to get more people playing tennis, <strong>Bamford</strong> Tennis club are introducing a number of offers to the public:-<br />

1) The first is entitled ‘Tennis for Kids’. Each course is held on a Tuesday night from 5.30 until 6.30 pm, lasts six<br />

weeks and is completely free. These courses are for five to eight year old children who have never played tennis<br />

before and at the end of each course every child receives a free racket. This is in addition to our junior tennis<br />

programmes which are held every Monday for older children and every Tuesday for younger children. Contact Peter<br />

2) The second is a reduction in senior yearly membership to £35 for the first year and £60 for the second year.<br />

3) The third is free junior membership for all children of an adult member!<br />

The Syke Walk and Talk Group meet every<br />

Monday at 1.00 pm and Friday 10.00am at<br />

socialising after the walks. There are 2 levels<br />

on the walk on Monday, a high quick walk<br />

and a slower one. There are also three levels<br />

on a Friday. A high fast walk, an<br />

intermediate walk and a slower one if<br />

needed. So there is something to suit<br />

everyone and all abilities. The Syke Walk<br />

and Talk group also meet on Tuesday at<br />

10am from outside the Doctors Surgery at<br />

The Queens Park Walk and Talk Group meet<br />

every Thursday at 10am outside the Queens<br />

each week. This is suitable for people<br />

wishing to increase their activity level, meet<br />

socially and make new friends. The walks<br />

The Friends of <strong>Norden</strong> Jubilee Park will be<br />

situated behind the bus terminus in <strong>Norden</strong><br />

(next to the Bridge Inn Chippy). Special<br />

The <strong>Norden</strong> Riviera<br />

As the decade of the 1930’s opened, boom times must have seemed to be well and truly a thing of a past and by<br />

1932 the number of registered unemployed in the North was as high as 70% in some areas of the North of England.Not<br />

until the mid-1930’s did things began to improve in cotton manufacture, the building trade and allied industries and<br />

against this backdrop a new consumerist society was starting to emerge delivering automatic washing machines,<br />

radios, vacuum cleaners and cars for a new working class needing ‘playgrounds’ in which to spend its time, whether<br />

these were in the form of cinemas, parks or swimming pools.<br />

This ‘leisure industry’ was apparent in Rochdale too where there were twelve cinemas,two theatres and dance halls such as the<br />

Carlton Ballroom. Health was also an established concern at that time and it was this mix of health and exercise that opened the<br />

way for lidos to be built nationally, supported by government funding with more than £2.5 million made available for local authorities.<br />

The <strong>Norden</strong> Riviera was part of this, but was a lido with an industrial past. Tenterhouse Dyeing and Bleaching Company in <strong>Norden</strong><br />

had been founded by Mr J T Taylor but included in his ownership was an area around Tenterhill to the north of Edenfield Road as<br />

well as the hillside immediately above the works which, until the 1920s, had been the site of anabandoned seminary. When Higher<br />

Tenterhouseand the nearby works were demolished in the early 1930’s, they abandoned land that had been made into a bowling<br />

green, tennis courts and badminton courts for the workers, and it was at this point that the directors of Old Manor (Pastimes) Ltd<br />

took a lease from Bleachers Association Ltd to convert the old bowling green into a swimming pool and the tennis courts and old<br />

pavilion into a tea room and café. The lease agreed, work commenced in 1934 on making this vision a reality.<br />

A meeting in November of 1935 decided that the venture was to be called<br />

‘The Riviera’although Rochdale people called it the Riviera from that time<br />

onward. Naming it as such was part of a trend at the time for all things<br />

continental. The plan put forward was that it would include not only a<br />

swimming ‘bath’ and a children’s paddling pool, but also gardens, a<br />

dance hall and tea room, badminton (in the main hall) and tennis courts,<br />

a nine-hole miniature golf course, indoor recreations and facilities for<br />

horse riding.<br />

The official opening of the <strong>Norden</strong> Riviera was on April 27th 1936 and<br />

included a Carnival Dance and a high diving display (2/6d admission).<br />

Dances, in the early days of the Riviera were popular and held every<br />

Saturday throughout July and August with a 3-piece band also engaged for Tuesday<br />

night sessions. Catering was supplied by Rochdale’s Bob Bon café until 1954 after which visitors could buy only tea and biscuits,<br />

minerals and ice cream.In the evening you could dance or be waited on at pool-side by page boys wearing white uniforms (with gilt<br />

buttons !).<br />

Things never last though. By 1942, parts of the Riviera buildings and diving boards were in serious need of repair and at the end<br />

of the war arrangements were made for re-painting throughout and re-laying the café floor whilst other parts of the estate were<br />

patched up. By 1957 the condition of the pool and gardens was ‘very<br />

bad’and this coincided with a national decline of the lido in the face<br />

of leisure alternatives, television in particular. When overseas travel<br />

became popular, local attractions such as the <strong>Norden</strong> Riviera became<br />

less popular again.<br />

Attendance through the 1950’s and 1960’s had been sporadic, but<br />

on good days the place would be packed, the Rochdale Observer<br />

reporting that ‘In 1961 there were over 3000 paying visitors to the<br />

site,’ the Riviera taking £200 on one Sunday alone. This, however,<br />

was an exception.<br />

Due to poor weather, changes in social culture and the rising cost<br />

of the lease, the Riviera closed as an operation in 1966, the Observer suggesting that Rochdale summers<br />

had never been hot enough to make it a money spinner and that although it had always just about ‘paid its way’ it had only<br />

returned a dividend to shareholders once or twice in its history and that was in the early years.<br />

Not with standing its position nestling within the windswept Pennine hills, the <strong>Norden</strong> Riviera would have provided great days out<br />

for many people in and around Rochdale eager to swim, dance or relax, and there must have been real sadness at its closure.<br />

Friends of Ashworth Valley<br />

Have Been Keeping Busy<br />

TFoAV have been buzy bees this last month, with the<br />

novel idea of installing a bee library in Ashworth.<br />

There will be a wonderful splash of colour and beautiful display<br />

of flowers at Higher Clough, Carr Wood this summer, as<br />

perennial wildflowers and herbs are to be sown around and<br />

beneath our bee library book nests.<br />

These will provide an additional source of pollen for the solitary<br />

bees.<br />

These book nests are designed to create dwellings for solitary<br />

bees which are excellent pollinators and sadly in decline.<br />

We would like to thank RBC, Enforcement Team and our 3<br />

Ward Councillors, for securing funding for the installation of the<br />

high fencing, plus additional signage warning against fly<br />

tipping.<br />

We have been running a campaign against dog fouling in<br />

Ashworth Valley, placing flags where serial offenders allow<br />

their dogs to foul. It is still an offence and carries a £75 fine,<br />

even on the grass verges and country lanes.<br />

Did you know, there is a serious risk of Toxocariasis which can<br />

cause serious illness, and can even lead to blindness, especially<br />

in children.<br />

Belt Action Group<br />

Hundreds of People Turned out for Green Belt Rally<br />

Action Committee members of 'Save <strong>Bamford</strong> Green Belt' joined<br />

with 1,500 fellow protesters from across Greater Manchester, in<br />

Albert Square on Saturday 1st April, to oppose the Greater<br />

Manchester Spatial Framework which plans to build on Green<br />

Belt across Greater Manchester.<br />

The controversial plans revealed last year proposes to build<br />

225,000 new homes over the next 20 years, with<br />

approximately 750 planned to be built on <strong>Bamford</strong>'s beautiful<br />

Green Belt land, plus the 11 football pitches that are used by<br />

700 children per week at Bridge Football Club. Anne Shorrock<br />

(Founding Member of the <strong>Bamford</strong> Green Belt Action Group)<br />

said: "We are not against houses being built but they must be<br />

affordable houses and in the right places, not on Green Belt<br />

land. Once this land is gone it is gone forever, and we have to<br />

think of the generations that will follow".<br />

A number of speakers addressed the passionate crowds at the<br />

Rally including the Chair of Save Greater Manchester Green Belt,<br />

Steven Longden, who did a fantastic job of rallying the<br />

supporters and spoke with great conviction, James Mason from<br />

Bury Green Belt Group who delivered a passionate speech, a<br />

member of Community Voice on Planning, a member of Save<br />

Chadderton Green Belt, and Jacquie Copley from the Campaign<br />

to Protect Rural England.<br />

“Hopefully council leaders are going to sit up and<br />

take notice. They need to have a long hard look at<br />

the responses that have come in and to investigate<br />

the potential for brownfield sites to be used instead<br />

of green belt.<br />

The council had suggested that only 70% of these<br />

will be on brownfield sites, the question is why are<br />

their aspirations so low?<br />

So far the council has received 27,000 responses<br />

opposing their plans.<br />

The proposed development does not just impact<br />

<strong>Bamford</strong> but sites across Greater Manchester including<br />

land in Cowlishaw in Oldham, New Carrington in<br />

Trafford, land south of the M62 in Bury and Rochdale,<br />

Walshaw in Bury, Sidebottom Fold in Tameside, High<br />

Lane in Stockport, land around Flixton Station in<br />

Trafford, Western Cadishead and Irlam in Salford, Little<br />

Moss and Ashton Moss in Tameside, the Robert Fletchers<br />

site in Oldham and land off Junction 26 of the M6 in<br />

Wigan.<br />

Over the coming weeks and months <strong>Bamford</strong> will be holding a<br />

number of events starting with a Coffee & Cake Morning at<br />

<strong>Bamford</strong> Chapel on Saturday 8th of April at 10:00am and a Wine<br />

Tasting <strong>May</strong>. Events like this are key to raising campaign funds<br />

that may be critical for continued campaigning and potentially<br />

future legal fees. More than anything this is a great opportunity for<br />

the community to come along and hear the latest updates. The<br />

Save <strong>Bamford</strong> Green Belt Action Committee have asked that people<br />

please keep following the communications and posts on the 'Save<br />

<strong>Bamford</strong> Greenbelt' Facebook page, and continue to support the<br />

local and wider group events; as a community we absolutely need<br />

the support of all residents if we are to beat this.<br />

Right half way up a short sharp hill, along the Bridleway that leads to<br />

“Paperhouse Mill” footbridge,( start of the 3 laps) continuepast the<br />

“Paperhouse footbridge” following the footpath that leads to a small<br />

footbridge over a stream, climb up through the trees exiting into a field<br />

that runs adjacent with a small river and ravine on your right, until it<br />

exits some 50 metres in front of the “Millcroft Tea Gardens”. Take a<br />

sharp right along a snicket that leads down to a steam,and then climb up<br />

to what was the Edgerton Arms. Run between the old Edgerton Arms and<br />

St James Ashworth Church which leads onto a footpath that crosses<br />

2fields with 4 stiles on them ,then exit Left onto School Lane, follow<br />

School Lane for approx. 120 metres before turning left again along the<br />

Bridleway that leads back down to Paperhouse footbridge. After 3 laps<br />

of reaching the “Paperhouse footbridge”turn right and go over the<br />

bridge and straight up a narrow footpath that comes out next to what<br />

was once the “Three Owls Bird Sanctuary” on Hutchinson Road follow<br />

the road through the Park past the play area and finishing onwhat is<br />

now named Jubilee Park above The Bridge chippy.<br />

above Higher Naden. Descend into Higher Naden Reservoir via the steps, thenfollow the path around reservoir in an anticlockwise<br />

direction until you reach the bridgeat top end of Higher Naden, cross the bridge and take the fence Stile immediately<br />

onyour right and start to ascend of “Birchen Holes” followed by the climb up “Bone Holes” from beneath thewaterfall, making<br />

your own way to the top of”Knowl Hill”. Descend off Knowl Hill in an easterly direction on a well-defined route over open<br />

moorlandto “Dixon Brow” keeping left at Dixon Brow style<br />

and then descend into Middle Naden reservoir via the side<br />

“Lady Lees” woodland area. Run across Higher Naden<br />

Reservoir Dam wall and then re- climb the steps out of<br />

reservoir and head towards “ Naden Dean “ settlement by<br />

the well-defined path .At Naden Dean bear left and follow<br />

flags up to a wall stile,then follow the flags over open<br />

moorland“flagged” route until you final descend to the car<br />

park above Greenbooth . Follow the skyline path from the<br />

car park above Greenbooth all the way down to “Doctor<br />

Dam” on Greenbooth Road with 400metres to the<br />

finish.(The course has “flags” nearly all the way around<br />

along with Marshall’s at relevent points).<br />

Six of the burglaries reported throughout March stated that the offenders had<br />

gained access to the rear garden and forced entry via the rear door and three<br />

reported that the offenders had used ladders or other climbing aids to gain<br />

access through an upstairs window.<br />

Your local Officers and PCSOs are treating burglary as a priority in this area<br />

and are actively working to reduce crime. Here are some tips to help keep your<br />

property more difficult for opportunist thieves:<br />

Only leave windows and doors open in rooms that you are in.<br />

Use light timers when out for the evening or leaving the house<br />

for an extended period of time.<br />

Always lock doors even when inside your home, or out of the<br />

house for a short time.<br />

Set an alarm when leaving the house.<br />

Keep your valuables out of view.<br />

Register your valuables on www.immobilise.com so property<br />

can be returned to its rightful owner if stolen.<br />

Never leave a spare key outside your house; burglars know all<br />

the usual hiding spots.<br />

Keep bins away from windows when they’re not being used as<br />

they can be used as a climbing aid for burglars.<br />

Don’t leave ladders in a spot that can be easily accessed as<br />

they can be used to aid criminals gain access.<br />

Consider putting up security lights, high trees and hedges<br />

provide you with privacy but they also provide a burglar with<br />

shelter when they are attempting to gain access.<br />

Some criminals won’t go to the trouble of breaking into your home if they can<br />

just knock and be invited in. They either distract the resident while they steal<br />

items or trick the person into paying too much for a simple job.<br />

Always look to see who is at the door before you open it -<br />

if you do not have glass in your front door, fitting a spy-hole<br />

door viewer will help.<br />

Install an outside light over your door to help you see any<br />

callers.<br />

Bogus callers come in many shapes and sizes. They could be<br />

children, women, and men in all types of clothing - from<br />

overalls to suits.<br />

Consider signing up to a Nominated Neighbour scheme.<br />

Arrange with a trusted neighbour or a member of your family<br />

who lives nearby to be your “Nominated Neighbour”. They will<br />

help confirm the identity of any person who calls at your door<br />

and accompany them into your home while they<br />

speak to you.<br />

PENALTIES DOUBLED FOR USING A MOBILE WHILE DRIVING<br />

From 1st March <strong>2017</strong> drivers face six points on their licence and a £200 fine<br />

if they are caught using their mobile phone at the wheel.<br />

The new legislation also means newly qualified drivers may have their licence<br />

revoked on the first offence under the New Driver Act.<br />

lives of fellow road users.<br />

GMFRS Head of Prevention Paul Etches, said: “All too often our fire-fighters<br />

Good News<br />

Two people have been arrested on suspicion of Robbery in which a taxi driver<br />

was assaulted and a mobile phone was stolen, the suspects are currently on<br />

conditional bail until 24/04/17.<br />

Crime Figures for the Past Month<br />

In the past month there have been thirteen cases of domestic burglary.<br />

There have also been eight burglaries other than those relating to dwellings<br />

and one robbery.<br />

There have recently been nineteen incidents of vehicle crime. This also<br />

includes criminal damage to vehicles.<br />

There have been six cases of theft from a vehicle and one incident of theft of a<br />

motor vehicle. There have also been twelve cases of criminal damage.<br />

In Bloom Effort For <strong>2017</strong> Rooted<br />

In Our Village<br />

Yet again <strong>Norden</strong> is the starting point for Rochdale`s entry in RHS Britain In Bloom. Judging<br />

Day will once again start with a visit to the Jubilee Park. The Park gave a brilliant start to the 2016<br />

Route, scoring a Level 5 "Outstanding” in it’s category. Improvements have continued in the area for <strong>2017</strong>,<br />

with the addition of a new, heritage notice board, in front of the Park being the latest evidence of<br />

renaissance.<br />

Moss Row Community Allotments will also<br />

have a major role to play in <strong>2017</strong>, with their<br />

enthusiastic Committee and members working<br />

hard to add new and exciting features to the<br />

formula which won them the highest accolade<br />

from the RHS Judges in 2016.<br />

For a number of years, the judging party has<br />

commented favourably on the efforts which<br />

local businesses go to that bring colour and<br />

vibrancy to the shopping area at the heart of<br />

<strong>Norden</strong>. We are all looking forward to the<br />

focus which NEEVA, under new Chairman, Paul<br />

Ellison, will be bringing to floral displays and<br />

hanging baskets in the key part of the Judging<br />

Route.<br />

For <strong>2017</strong>, the In Bloom Committee is keen to<br />

Village centre who have ideas or projects to<br />

enhance their environment and add to the<br />

Caldershaw Primary School<br />

Go Eco Friendly<br />

On Friday 31st March, children from Caldershaw Primary School hosted VIP guests in the conclusion to a funpacked<br />

and thought-provoking Eco Week at the school. The week-long event helps to raise awareness of ecological<br />

and environmental issues and included a number of class activities and group projects.<br />

Children and staff were joined by the <strong>May</strong>or and <strong>May</strong>oress of Rochdale and<br />

Local Councillor / Eco Governor, Peter Winkler, who were shown aroundby<br />

members of the Eco Council. The guests were shown several different<br />

projects, which classes from throughout the school had undertaken as part of<br />

Eco Week, and then came the difficult task of judging the school’s upcycling<br />

competition.<br />

Children had been set the task of using used items and rubbish to create<br />

something new; entries included furniture, fashion, clocks, planters, bird<br />

boxes and banners.The upcycling process gives children the opportunity to<br />

create something new out of what is usually considered rubbish. Eco<br />

Coordinator, Miss Reed said:“We would like to say a huge thankyou to<br />

everyone who has entered this year’s upcycling competition. The response<br />

has been overwhelming and the standard of designs has been truly<br />

remarkable. We have been thoroughly impressed with the ideas pupils<br />

have come up with and the incredible amount of effort that has gone into<br />

their projects.”<br />

The <strong>May</strong>or and <strong>May</strong>oress had a tough job on their hands to choose winners<br />

but after a lot of deliberation they managed to narrow it down to two overall<br />

winners. The winner from Key Stage One was Lewis Whales and the Key<br />

Stage Two prize went to Harvey Crawford. A number of other prizes were<br />

given to runners up.The <strong>May</strong>or said: “It has been a difficult decision,everyone is a<br />

winner here today. We have chosen designs that caught our eye, they were very simple<br />

yet effective and something that everyone could have a go at.”<br />

Councillor Peter Winkler said: “The Children should be very proud of themselves, they<br />

have done a lot of excellent work. A big well done to all the children who got involved<br />

in the upcycling competition and to our winners.”<br />

All the entries will be displayed around the school and will become a feature when the<br />

RHS judges visit the school later in the year as part of Rochdale in Bloom.<br />

40 years of <strong>Norden</strong> Carnival!<br />

1977-<strong>2017</strong><br />

Just a reminder that you get to choose the theme of the 40th anniversary Carnival. That’s<br />

right, this year you can come as any theme over the last 40 years. There’s so many options<br />

to choose from. You could replicate the first Carnivals where local businesses would display<br />

their goods. Alternatively, why not pick something more recent – My Favourite Film, Music,<br />

Cartoons, Books and so many more.<br />

On the day, there’ll be plenty of stalls to browse and buy some treats. As it’s just before Father’s Day, it will<br />

be an ideal time to get dad a gift. There’s still time to book a stall – just email the address below. The<br />

parade starts at 1pm from Caldershaw School and goes all the way through the village where it’ll turn around<br />

at Jubilee Park and then back to <strong>Norden</strong> School. There’ll also be plenty of<br />

entertainment, music, rides and plenty of ice cream – as well as endless<br />

sunshine.<br />

We have reached an impressive milestone - and its all thanks to you in our<br />

community for continuing to support the event each year. So whatever you<br />

are doing and no matter how long you have supported the Carnival - a HUGE<br />

THE HISTORY OF<br />

Horse Carrs Manor House<br />

Horse Carrs Manor is a grand Victorian building that nestles in the heart of Shawclough and was originally<br />

the family home of Thomas Watson, one of Rochdale’s unsung heroes.<br />

Built of polished Astley Stone, Horse Carrs was completed in 1866 for the grand<br />

sum of £3,500, and according to an entry within Watson’s Journal, the build of<br />

Horse Carrs was given to W.A. Peters and Sons of Rochdale, the accredited builders<br />

of the Rochdale Town Hall. The Journal also records that John Ashworth was<br />

commissioned to paint the new house at the princely rate of seven old pence (7d)<br />

per square yard,<br />

(equating to just a<br />

smidgen more than<br />

2.5 pence in<br />

today’s money).<br />

On entering the Manor through the main entrance, it would have<br />

been difficult not to be impressed by the stained glass door panel<br />

that depicts the<br />

Watson’s coat of arms, and the grand entrance hall, decorated by elaborate floor<br />

tiles, a large wall mirror and a sweeping staircase, all of which is surmounted by<br />

a skylight which, weather allowing floods the hall in natural light. Records also<br />

suggest that the hallway was embellished by a life-size marble statue of Moses<br />

in the Basket, an artefact that sadly is no-longer resident in Horse Carrs.<br />

However, there is a preserved collection of Plush Fabric (a type of brushed velvet)<br />

which was invented and manufactured by Watson within his Silk Mill (Horse<br />

Carrs Silk Mill, Shawclough), and would have undoubtedly been used to add a<br />

splash of colour throughout the family home as curtains and soft furnishings.<br />

Clearly in its day, Horse Carrs was a house that befitted the social standing of a man<br />

that was not only a philanthropist, but also a Godly man who used his wealth to<br />

serve the local community. In addition to serving as a Justice of the Peace and<br />

Chairman of the Rochdale School Board, Watson also gifted the original Rochdale<br />

Infirmary, as well as financing a number of local church and education enterprises.<br />

Throughout its 150 years of existence Horse Carrs has established itself as<br />

something of a lighthouse of refuge within the community. Beyond being the<br />

Watson’s home, the Manor has opened its doors to accommodate; a Men’s refuge<br />

during WW1, a safe haven for WW2 Evacuees from occupied Channel Islands, an<br />

annex to the Municipal Girls High School, and a Council Home for the Elderly<br />

before becoming the Emanuel Christian School. Then in more recent years Horse<br />

Carrs become the new spiritual home for what is historically Rochdale’s First<br />

Baptist Church - now known as the Open Door Baptist Church. In fact the<br />

relationship between the church and Horse Carrs is also worth a mention, for<br />

though Thomas Watson was a lifelong Methodist, his wife Emily and many of<br />

their children were committed members of the fore mentioned Baptist Church –<br />

then known as the West Street Baptist Church.<br />

Today Horse Carrs continues to serve the local community through an Open Door<br />

fellowship of Christian Worship (Sunday mornings), the Coffee House (Thursdays<br />

and Fridays), ‘POPS’ a Toddlers Group (Thursday Mornings), along with a number<br />

of other activities and community services throughout the week. There is also the<br />

‘Free’ exhibition that portrays the collective stories of the Watson Family, Horse<br />

Carrs Manor and West Street Baptist Church (Open Thursdays 12:30-3.30 &<br />

English Asparagus with Lemon and<br />

Cracked Black Pepper Hollandaise<br />

You can’t beat a classic recipe and in this the asparagus and<br />

hollandaise is quite simply a perfect marriage. English asparagus is<br />

in sheer abundance right now so it’s the perfect time to try and of<br />

course enjoy.<br />

Serves 4<br />

3 egg yolks<br />

1 tablespoon lemon juice<br />

1 tablespoon white wine vinegar<br />

Salt and a generous grind of cracked black pepper<br />

115g butter, bubbling hot<br />

2 bunches English asparagus, peeled to just below the tip<br />

1) Put the egg yolks, lemon and vinegar into a food<br />

processor, season and set the machine in motion.<br />

2) Have the butter bubbling hot on the heat. Take the pan<br />

off the heat and pour it onto the whirling food processor<br />

blades in a thin stream, then leave to blend for about 30<br />

seconds until the sauce has thickened and is foamy. Season<br />

to taste before serving.<br />

3) Blanch the asparagus spears in a pan of boiling salted<br />

water and cook until al dente – approximately 2-3 minutes<br />

depending on thickness.<br />

4) Season, arrange on a plate or container and serve with a<br />

generous spoon of your hollandaise.<br />

Mediterranean Prawn Salad<br />

with Sesame Dressing - Serves 4<br />

Recipe from Heather Williams<br />

Ingredients<br />

8 large cooked Prawns<br />

100g courgette<br />

100g tomatoes<br />

100g red onions<br />

100g spring onions<br />

80 mls olive oil<br />

1 teaspoon soy sauce<br />

Pinch salt and few grinds of black pepper<br />

For the dressing<br />

1 tsp black sesame seeds<br />

1tsp honey<br />

1 tsp crème fraiche<br />

50mls sesame oil<br />

40mls warm water<br />

Method -<br />

Cut all vegetables into chunky pieces approx. 3cm x 3cm. Toss in olive oil, soy sauce<br />

and season with salt and pepper.<br />

Sear on a very hot griddle to achieve the chargrill lines and transfer to a roasting tin<br />

to cook in the oven for 20 minutes at 180C/ gas 4. Chill until ready to serve<br />

Layer the vegetables in ramekin dishes or glasses and place the peeled prawns on<br />

top<br />

Mix all the ingredients for the dressing together and pour over the vegetables and<br />

prawns.<br />

Serve as a starter or increase quantities and serve as a main course salad.<br />
