2 egg whites
1 tablespoon white sugar
¾ cup skim milk
1 tablespoons (15g) Flora® Light
margarine melted
½ teaspoon bicarb soda
¾ cup mashed ripe bananas
(2-3 bananas)
1¼ cups self-raising flour
cooking spray
Method
Beat egg whites, sugar for 1 minute in a
medium size mixing bowl using an
electric beater.
Combine milk with melted margarine and
add to egg white mix.
Stir bicarb into mashed banana then add
to bowl using a wooden spoon.
combined. The less the mixture is
moved, the lighter the pikelets will be.
Drop spoonful’s onto a skillet or frypan
that has been coated with cooking spray.
When mixture starts to bubble turn over.
Cook other side for a few minutes.
Repeat this spraying with cooking spray
each time until all mixture has been
used. Makes approx. 24
pikelets.
