Prime Media : Under what circumstances does a restaurant
consultant intervene?
Jean Hue : According to the standards of the UMIH, or Union
des Métiers et des Industries de l'Hôtellerie, whenever a major
establishment is planning to open its doors, it must call in
professionals. The intervention of a restaurant consultant
consists of the installation of kitchen furniture, dining rooms
and the choice of dishes. He also is in charge of recruiting
and training staff, putting in place the Chef, organizing the
Restaurants... in short, many things.

Autodidacte, Jean Hue entre dans l’univers de la
restauration à l’âge de 14 ans. Son parcours sera
parfaitement atypique puisqu'il a pu fréquenter pu
fréquenter de beaux établissements en France, à l’Ile
Maurice et dans d’autres pays du monde.

Self-taught, Jean Hue entered the world of
catering at the age of 14. His career path would be
completely atypical, since after having worked at
fine establishments in France, Mauritius and other
countries around the world.
Prime Media : Dans quelles circonstances un consultant en
restauration intervient-il ?
Jean Hue : Selon les normes de l’UMIH ou Union des
Métiers et des Industries de l’Hôtellerie, quand un grand
établissement envisage d’ouvrir ses portes, il se doit
de faire appel à des professionnels. L’intervention d’un
consultant en restauration consiste en l’implantation
du mobilier de cuisines, des salles de restauration et du
choix des vaisselles. Il assure également le recrutement
et la formation du personnel, la mise en place du Chef,
l’organisation des restaurants…bref, beaucoup de choses.
Prime Media : Quels sont les atouts touristiques de
Madagascar ?
Jean Hue : La Grande Ile a un grand potentiel notamment
par sa diversité climatologique favorisant une diversité de
produits biologiques et naturels. On peut allier une cuisine
gastronomique inspirée de la mode frenchy proposant des
produits de terroir et locaux… Rien ne sert d’importer, il faut
s’adapter à ce qui pousse sur place.
Prime Media : What are Madagascar's touristic advantages?
Jean Hue : The Big Island has great potential, particularly
because of its climatic diversity, which fosters a diversity in
organic and natural products. We can combine a gastronomic
cuisine inspired by French fashion proposing local and
regional products... Nothing is necessary to be imported, we
adapt to what grows on the spot.

Jean Hue : Ma conception est de poursuivre la transmission
d’un savoir unique français qui s’exporte à travers les tables
étoilées de par le monde, traiteurs ou organisateurs de
réceptions de renom.
Prime : Do you have a message to share?
Jean Hue : My concept is to continue the transmission of
a unique French knowledge, which is spread via starred
restaurants all over the world, caterers or organizers of
renown receptions.
