Marais shared a couple of inspirational thoughts with those attending 

and the owner of Pick n Pay Lemon Tree Bruno Barradas shared stories of 

women steering the Pick n Pay and why we should celebrate women’s 

power. Bruno expressed his gratitude to all attending and especially to

Two fearless 

athers 

Being 

a father can be 

accomplished by almost 

any man, but being a father 

in a child’s life is a special 

experience. In the eyes 

of Martin Claassen and 

Hugo Pienaar, fatherhood 

is a feeling that no words 

can ever describe and 

that nobody will truly 

comprehend until they 

hold their own child in 

their hands. 

We get to know two of Alberton’s 

well-known chefs, Martin Claassen and 

Hugo Pienaar, whose paths crossed 

again after several years of knowing 

each other after attending the same 

hotel school. 

They now share a kitchen at New 

Redruth Dros. Martin and Hugo chat 

about their careers, friendship and 

how they manage to be husbands 

and fathers and still pursue their 

dreams. 

Martin is living his dream 

He was born and bred in Bethal in 

Mpumalanga where he went to Laerskool 

HM Swart Primary in Bethal and 

matriculated from Middelburg High. 

Martin then went from studying 

French Terminology to cooking at 

HTA Capital Hotel School where he 

qualified. 

‘I studied under Stephen Bellingham 

and qualified in 2004. Over the years 

I have worked with amazing chefs in 

different places across the country, 

from convention centres to five-star 

hotels,’ he said. 


Martin has always had a passion for food and creating things in the world that 

people can enjoy. 

‘Creating dishes and moments that bring people together is my passion.’ 

Today he is an owner of two restaurants, Dros New Redruth and Dros Kyalami, 

with 20 years of experience behind him. He loves making dishes that include 

bread, pastries and meats. 

‘Every day brings new challenges and that is my favourite dish. If I need to 

choose, it is different sauces, it’s like getting dressed for your wedding. Sauces just 

light up different meals and bring the best out of different dishes.’ 

He is always up for a challenge so there has not been a meal he doesn’t enjoy 

cooking. 

Some of his proudest moments as a chef were being able to be part of local 

cooking shows on TV. 

‘I am the happiest at work when I need to rush, when everyone comes out to eat 

there is just something about that.’ 

One of the challenges he faces as a chef is dealing with the country’s load-shedding. 

‘Other challenges are finding the correct products. Sometimes your main ingredient 

can be out of stock and then you have to make a plan,’ Martin explained. 

The chefs he admires are Gordon Ramsey as he is a real go-getter and he never 

gives up. 

He said that the best cooking tips he ever received were at family gatherings. 

‘Once again food brings people together, if there is any tip that would be to 

spend time making food for your family. Get everyone in the kitchen.’ 

It is all about family 

Martin met the love of his life Jackie 27 years ago in Bethal. They have three 

beautiful children, two girls and a boy.

‘We all have different love stories and 

timing of doing things in life, but our 

love story is my favourite. We went to 

the same school and then I moved 

away. Seven years ago in October, 

I found Jackie on Facebook, and I 

decided to send her a message. We 

met up for coffee, and we just never 

looked back,’ he said. 

The couple tied the knot on March 19 

this year. 

Martin loves being a father and to 

him, fatherhood means the world and 

beyond. ‘I never had sisters and now I 

have two daughters. It amazes me to 

see them grow and become someone 

or something you prayed for. My 

‘laaitie’ is just the most adorable thing 

in the world. He is very fond of his 

mother and his grandfather.’ 

He added that he felt that a father 

plays an important role in life because, 

at the end of the day, your father 

needs to make something out of you. 

‘A father will separate the earth for his 

children. My father, Charles, always 

tried his best and I will try to do the 

same if not better. I think a father 

makes or breaks you and in my life my 

father made me.’ 

Being able to accomplish what he 

and his wife started is the best part 

of being a father. ‘To see their faces 

enjoying moments in life with you and 

to spoil them or surprise them with 

something they wanted badly.’ he said. 

‘Whatever they become or whatever 

they do in life, just enjoy it. I will always 

love them, and that will never change. 

You are entitled to do whatever you 

want to, as long as you are happy and 

take the responsibility,’ is his message 

to his children

Hugo makes chaos look beautiful 

Hugo was raised by Collette and 

Hugo Pienaar and grew up with his 

younger sister in Brakpan in the 

East Rand. 

Hugo’s fondest childhood memory 

was when he was 13-years-old. 

‘I went hunting with my father for the 

first time, and as a young boy to get 

the opportunity to provide for your 

family while having respect for mother 

nature is one of the best memories,’ 

said Hugo. 

He matriculated at Hoërskool Die 

Anker in 2012 before leaving for 

hotel school to pursue his dream of 

becoming a chef. ‘When my parents 

got divorced in 2008, my dad moved 

and I lived with my mother and my 

sister. When I got home from school, I 

would help my sister with her homework 

and prepare dinner for us. 

‘This led to the awakening of my passion. 

I started cooking more and tried 

out new recipes,’ said Hugo. 

He added he would sometimes 

phone his dad to ask him about the 

next step of the cooking process. ‘This 

is how my father and I bonded. He 

taught me cooking over the phone.’ 

Hugo has been in the industry for the 

last nine years and he knows many 

fields in his industry. 

These days you will see him at the 

Dros New Redruth, working as the 

general manager. 

“Being able to work for Martin and 

work with him in the kitchen is just 

priceless. I have so much respect 

for him and the things he does 

for others.’ 

A highlight of his career was when 

he was placed fourth in a regional 

Unilever Chef of the Year Competition 

and became a regional judge for the 

annual Checkers Boerewors Competition. 

‘Passion is not something you teach. 

It is a warm happy feeling you get 

when you do something you love. 

For example, when I competed for 

Unilever Chef of the Year, which was 

the penultimate professional cooking 

competition in South Africa, I didn’t 

win but I felt so accomplished and 

that I think that was the passion talking,’ 

he explained. 

Bring on the pressure 

Hugo is the happiest working under 

pressure. ‘When I’m under so much 



pressure that nothing is going through my head except the plate of food that 

I’m cooking, that is when I am the happiest.’ 

He enjoys cooking Beef Wellington. ‘I love a good hearty meal and there is 

nothing better than soft tender fillet steak rolled in grilled mushrooms and 

creamy spinach and buttery puff pastry.’ 

The three ingredients he will always use to cook with are salt, pepper 

and butter. 

There are a couple of ingredients which he doesn’t enjoy cooking with, but he 

will always make a plan to make the best out of the situation. 

Hugo is inspired by chefs like Marco Pierre White, Gordon Ramsay, Heston Blumenthal, 

Jan Hendrick, Bertus Basson and Jade van der Spuy. 

‘I’m a passionate chef who loves putting a smile on a person’s face. I was a lecturer 

and teaching is also a big passion of mine Why not share your knowledge 

with others?’ Hugo added. 

On the question about his kitchen disaster stories, he said the scariest moment 

for him in the kitchen was observing someone who placed a frozen chicken in 

a deep fryer. 

‘Let me tell you I feared for my life,’ he said laughingly. 

Nothing beats being a dad 

Hugo and Chante Lynn Bailey met while he was doing what you call rounds at 

the restaurant.

‘I stopped by Chante and her family’s 

table to see if everything is alright. 

Afterwards, she went to one of the 

waiters to ask them for my number. 

We chatted for three days before 

going on our first date. 

‘It was love at first sight.’ 

They have been together for two 

years, and they have a beautiful 

baby boy, Elijah. Hugo and Chante 

are getting married later this year on 

October 8. 

Chante said she had never met anyone 

who works harder than Hugo. 

‘During difficult times he pushed 

through, and kept providing for us,’ 

she said. 

To juggle his work life and his personal 

life, Hugo uses proper time 

management. 

‘Chefs have to be somewhat crazy to 

do what we do. My way of managing 

my time is by taking each day as it 

comes, as you never know what will 

happen. It has happened so many 

times that we have made plans, but 

whether they worked or not is a different 

story. 

‘The most important thing is you must 

make time for your family in your crazy 

schedule, sometimes even having 

them at work while I’m working can 

also be helpful.’ 

Fatherhood is an opportunity for Hugo 

to raise the future generations of this 

world. 

‘I am responsible to teach my son the 

right way, but I am also there to catch 

him when he falls, to cheer him on 

and to accept his choices in life,’ 

he said. 

According to him, fathers play a vital 

role in the lives of their children. ‘There 

are some things only my dad could 

teach me and that my mother couldn’t 

because it made more sense to me 

coming from him. Things like not 

digging in a woman’s handbag and 

opening the car door on your first date.’ 

Whether it was a good or bad day, he 

always looks forward to getting home 

to Chante and Elijah. 

‘Seeing my son’s face light up when 

I walk into the door after work melts 

my heart. It will be his second Father’s 

Day this year, and he looks forward to 

spending it with his family. ‘The advice 

I want to give Elijah is he must always 

follow his passion. Do what you love, 

and you’ll never have to work a day in 

your life,’ he concluded.

When counting sheep 

just doesn’t help 

Some of us are heavy sleepers and enjoy 

a good night’s rest no matter what. But for 

others ... we struggle to fall asleep, or wake up 

a few times during the night or unreasonably 

early in morning. And that makes us tired, 

irritable and stressed the following day, 

which more often than not leads to further 

insomnia issues. 

So while our genetic make-up may have a 

lot to do with the quality of sleep we can 

expect to have in our adult lives, there may 

be many other factors leading to insomnia 

and anxiety. 

These can include: 

• A stressful work, home life or situation 

• Inability to switch off brain activity at the 

end of the day 

• An excess of stimulants - we’re blaming you, 

coffee, but all caffeine, certain medications, 

rich food or sugary drinks as well as alcohol 

• Eating food that is too spicy or acidic, which 

can lead to stomach pains that keep us awake 

• Lack of exercise for de-stressing 

• A noisy environment 

• Not allowing ourselves enough time to 

sleep ... setting the alarm for too early in 

the morning 

• Using a mattress that is too soft or too hard 

• A general sense of not feeling safe at night

Avo on toast 

Avo on toast is our regular Sunday night dinner. Purists need 

just salt, pepper and a squeeze of lemon. But there are so 

many ways to ring the (delish) changes. Like these ... 

The easy options 

Slice, mash or smash your avo onto a slice of toast of your 

choice. Top with either • a poached egg • chorizo and goat’s 

cheese • a sprinkling of dukkah and squeeze of lemon. 

The healthy options 

Top your health bread toast with avo, hummus, pesto and 

lemon for a quick and tasty snack. Try adding some roasted 

chickpeas for a bit of crunch. 

Sourdough toast, topped with avocado slices, cherry 

tomatoes, crispy seaweed, and a sprinkling of pumpkin seed 

dukkah and smoked sea salt. 

Toast a bagel or English muffin, then top with pesto, 

smashed avocado, savoury granola, fennel and rocket salad, 

drizzled with avocado oil or extra virgin olive oil, crushed 

pistachio nuts and - if you’re famished, a poached egg. 

Toast some low GI bread, top with smashed avocado, 

cannellini beans, shaved radishes, thyme, parmesan cheese 

shavings, and avocado balls. Serve with a sprinkling of chilli 

flakes and a wedge of lemon. 

The LUXURY OPTIONS 

Toast some rye or health bread, smother in cream cheese 

(full cream is our choice, low fat versions if you prefer), then 

layer on some thinly sliced cucumber. Pile on the smoked 

salmon, sprinkle with capers and chives. 

Toast some sourdough bread. Slice avos and fan on the 

bread. Add shavings of parmesan, thin slices of red onion, 

and top with rocket leaves. Drizzle with an olive oil and 

balsamic reduction dressing. 

Could you ever go wrong with bacon? Nope. Toast ciabatta, 

spread with cream cheese, then pile on the smashed avo. 

Add a generous handful of crispy bacon. For a proper 

breakfast option, drop the cheese and add a poached egg. 

Try an Italian caprese version. Toast ciabatta, and while still 

hot rub with a cut garlic clove. Smash your avo on the toast, 

then top with cherry tomatoes, mozzarella balls or slices, basil 

leaves and olive oil, and just a smidgen of balsamic vinegar.

The DINNER PARTY option 

A retro avo ritz ... yes, please. Toast a 

piece of sourdough, smash an avo 

and spread thickly. Now add your 

cooked, peeled prawns, and drizzle 

with homemade Marie Rose sauce. 

Simply mix 100ml good quality mayo 

with a heaped tablespoon of tomato 

sauce, add a dash each of Tabasco 

and Worcestershire sauce and a shake 

of cayenne pepper. Squeeze in some 

lemon juice and add a touch (just a 

teaspoon or so) of brandy or sherry. 

Or cheat, and buy the prawn cocktail 

tub from Woolies. Sprinkle with a little 

cayenne pepper. 

The FRUITY options 

Toast health bread, top with smashed 

avo, then add thinly sliced strawberries, 

a scattering of toasted coconut flakes, 

a drizzle of honey and a generous 

grind of black pepper. 

Toast ciabatta bread, top with smashed 

avo. Add some thin slices of ripebut-still-firm 

pear, then crumbed 

blue cheese or Gorgonzola. Top with 

roasted walnuts and a drizzle of honey

The mexican option 

Smashed avo with charred sweetcorn 

and Mexican flavours on sourdough 

toast. Makes four generous slices. 

You’ll need ... 2 avocados, peeled and 

pitted; sea salt and black pepper; a 

few sprigs fresh coriander, chopped; 

2 limes ... 1 juiced and 1 quartered; a 

big pinch of smoked paprika; 2 grilled 

sweetcorn, removed from the cob; 

20 cherry tomatoes, halved; 4 slices 

sourdough bread, toasted 

To make... In a bowl, combine the 

avocado, salt, black pepper, coriander, 

lime juice and paprika. Smash using 

a potato masher or a fork. Add the 

sweetcorn, tomatoes and check the 

seasoning. Top toast with avocado mix, 

garnish with extra coriander and lime 

wedges. Serve immediately.

Tulips are exotic, colourful 

and best of all are happy 

to bloom indoors. A pot 

of tulips will flower for a 

month or more because 

each pot contains more 

than one bulb. The secret 

is to buy a pot with mostly 

closed buds because 

each bloom only lasts a 

week. To bring the tulips 

into flower, place the pot 

where it receives plenty of 

bright, indirect light but 

not direct sun because 

this makes the blooms go 

over faster. Let the potting 

soil dry out moderately 

before watering.

We’re planting … Cineraria Senetti because 

it loves the cold and we love its huge, 

showstopping daisy-like blooms. This garden 

or container variety thrives in full Winter sun 

or partial sun as well as indoors in bright light. 

The colour range incudes bi-colour magenta, 

blue and violet blooms with bright, white 

centres as well single colours. Cut back by 

50% after each flush of blooms to encourage 

another flush. ‘Senetti’ will flower through 

to early summer, only stopping to flower 

when night temperatures reach 26º C. Water 

regularly so that the soil doesn’t dry out and 

boost flowering with a liquid fertiliser twice 

a month. Plants grow up to 60 cm with a 45 

cm spread, which is taller than the normal

Garden 

tasks for June 

• Keep up the flower power of Winter 

flowering annuals with liquid fertiliser 

applied every two weeks. Remove the dead 

flowers to encourage new flowers. • Don’t let 

daffodils and other spring flowering bulbs or shrubs, 

like azaleas, camellias or magnolias dry out otherwise 

they will not flower. • Use all your garden waste and 

household scraps to make compost. • Spread the 

dried leaves onto the garden beds as thick mulch. 

• Move herbs in pots to a sheltered, sunny area, 

where there are no draughts. Water them once 

or twice a week and supplement with a 

liquid fertiliser (at half strength) every 

second week. • Water vegetables 

once a week 

Veggie of the month 

Micro greens are the only veggies you can safely sow 

in Winter. Use the big, black plastic seedling trays filled 

with a proper seedling soil mix which is weed free. 

Pre-fertilise by watering with Margaret Roberts Organic 

Supercharger so that the soil is damp. It is not necessary 

to fertilise again. 

RAW seeds has two flavourful mixes: ‘Old Mexico’ that 

consists of coriander, red beets, cabbage, radish and 

pepper cress and ‘Rainbow blend’ with beetroot, Asian 

cabbage, kohlrabi, Italian broccoli and radish. Sow 

seeds thickly, cover lightly with the soil mix, firm it 

down, and spritz with a spray bottle to dampen the 

soil. Cover the whole tray with plastic wrap and keep 

in a warm, sheltered place like a balcony, or patio. The 

seed should germinate within seven to 14 days. Harvest 

from 15 days onwards when the shoots are 5 to 10cm 

high. If you allow the leaves to grow bigger they can 

be harvested as baby leaves. Use as a garnish, salad 

topping, on open sandwiches and in omelette’s.

Holiday camp fun! 

While sending your child to a holiday camp might sound a little daunting, 

chances are it is exactly what they need. And, having recently been given a ‘sneak 

peek’ into a typical Sugar Bay holiday camp, we can pretty much guarantee that 

if they do go, they won’t want to come home afterwards!

There is nothing quite like seeing kids playing 

and interacting freely with each other, faceto-face, 

without a digital device in sight. 

Even more wonderful is seeing them being 

given full, undivided attention from the 

adults looking after them. In truth, this is 

something that even we, as parents, often 

struggle to do. 

With water slides, skateboards, rope swinging, 

arts and crafts, drama, body boarding, ocean 

swimming and loads of other activities on 

offer, Sugar Bay is a little slice of heaven for 

children aged between six and 17 years old. 

There is something to literally keep every 

child busy, entertained and happy at this 

beautiful resort situated in the coastal village 

of Zinkwazi on the North Coast of KZN. 

After having spent a few days and nights 

with the kids and counsellors at Sugar Bay, 

we realised however that the real magic of 

this place lies in the human connection and 

relationships the kids form while having the 

time of their lives. 

It’s been a rough couple of years for our 

children. Lockdowns, masks and spending 

way too much time in front of screens 

instead of playing with peers have all had 

a negative effect on both their mental and 

physical wellness. 



It’s for this reason, despite everything she and her team have faced, that Sugar 

Bay founder Zoe Ellender remains steadfast in her decision to keep the camp 

open. 

“Our children need this now more than ever,” says Zoe, who started the camp 20 

years ago. “The world is a very different place compared to when we first opened. 

Children are so protected and spend too much time in front of screens. They 

desperately need to connect, interact and socialise with each other.” 

Learning to spend time away from their parents, too, is an important part of 

their emotional development, she says. “What is amazing, is that it is usually the 

anxious kids who gain the most from spending a week with us. The children who 

are shy or nervous in the beginning are usually the ones who get on stage and 

confidently share their stories around the campfire on our final nights.” 

Based on the typical American-styled summer camp, Sugar Bay is the only 

sleepover resort in South Africa that has been built and run for children only. No 

parents are allowed! 

Children travel from all around South Africa (and overseas) to spend a week or 

two at a Sugar Bay holiday camp, where they make memories to last a lifetime. 

Sugar Bay also offers school tours outside of the holiday seasons. 

The camp is well-maintained and the kids sleep in wooden cabins nestled in a 

forest-like setting. There are two or more counsellors assigned to each cabin (kids 

are never left unsupervised) and boys’ and girls’ cabins are separate and secure 

with campers divided according to their grade. 

The professionally-engineered resort is comfortable, homey and very secure. 

There is a 25m swimming pool with three waterslides, a soccer field, five-sided 

climbing tower and obstacle and ropes courses. There is also a grand hall and 

dining room area, an arts and crafts centre, indoor sport hall and a tuckshop. 

Sugar Bay has private access to both the lagoon and beach - and all the water 

toys required for loads of summer fun! 

One of the highlights of a stay at Sugar Bay is definitely mealtime. The food is 

nutritious and tasty and made completely with kids in mind. It’s quite amazing, 

actually, to see how even the fussiest of eaters devour their breakfast, lunch and 

dinner (and snacks in-between) and, best of all, how they all work together to 

clean up their table and eating space afterwards. 

The thing that stands out above all though (and likely one of the most important 

aspects for parents), is the calibre of counsellors at Sugar Bay. Often students 

on holiday or those taking a gap year, the counsellors have all been extensively 

vetted and trained (in emergency first response and child psychology) and they 

all love what they do. 

“When I started the camp, I underestimated the impact the counsellors would 

have on the kids,” says Zoe. “I’ve since realised that it’s not about having the best 

SUP boards, skateboards and waterslides … it’s about the human interaction.” 

All the counsellors are fully engaged and passionate and bring their own skills 

and talents to the camp - which means there are always different classes and 

activities on offer, from dancing and yoga to martial arts, crab catching and flower 

identification. 

Sugar Bay also recently launched a counsellor’s academy (a three-month master 

class or 11-month gap year programme), where young adults gain useful 

qualifications and experience with things like lifeguarding, scuba diving and 

boating. 

“I know that what we do is incredibly important and I believe one hundred 

percent in all the benefits. I truly think that every child should go to camp at least 

once in their lifetime,” says Zoe.

Sugar Bay holiday camps (either 6, 7 or 12 days) are held during school holidays and each one has a different theme. The cost of
