Not even the morning chills could put a damper on the sound of the<br />

warm chatter of the women who attended the Pick n Pay Lemon Tree<br />

and Alberton Record ladies breakfast at Delforno’s. Guest speaker Laurette<br />

Marais shared a couple of inspirational thoughts with those attending<br />

and the owner of Pick n Pay Lemon Tree Bruno Barradas shared stories of<br />

women steering the Pick n Pay and why we should celebrate women’s<br />

power. Bruno expressed his gratitude to all attending and especially to<br />

Two fearless<br />

Being<br />

a father can be<br />

accomplished by almost<br />

any man, but being a father<br />

in a child’s life is a special<br />

experience. In the eyes<br />

of Martin Claassen and<br />

Hugo Pienaar, fatherhood<br />

is a feeling that no words<br />

can ever describe and<br />

that nobody will truly<br />

comprehend until they<br />

hold their own child in<br />

their hands.<br />

We get to know two of Alberton’s<br />

well-known chefs, Martin Claassen and<br />

Hugo Pienaar, whose paths crossed<br />

again after several years of knowing<br />

each other after attending the same<br />

hotel school.<br />

They now share a kitchen at New<br />

Redruth Dros. Martin and Hugo chat<br />

about their careers, friendship and<br />

how they manage to be husbands<br />

and fathers and still pursue their<br />

dreams.<br />

Martin is living his dream<br />

He was born and bred in Bethal in<br />

Mpumalanga where he went to Laerskool<br />

HM Swart Primary in Bethal and<br />

matriculated from Middelburg High.<br />

Martin then went from studying<br />

French Terminology to cooking at<br />

HTA Capital Hotel School where he<br />

qualified.<br />

‘I studied under Stephen Bellingham<br />

and qualified in 2004. Over the years<br />

I have worked with amazing chefs in<br />

different places across the country,<br />

from convention centres to five-star<br />

hotels,’ he said.<br />

Martin has always had a passion for food and creating things in the world that<br />

people can enjoy.<br />

‘Creating dishes and moments that bring people together is my passion.’<br />

Today he is an owner of two restaurants, Dros New Redruth and Dros Kyalami,<br />

with 20 years of experience behind him. He loves making dishes that include<br />

bread, pastries and meats.<br />

‘Every day brings new challenges and that is my favourite dish. If I need to<br />

choose, it is different sauces, it’s like getting dressed for your wedding. Sauces just<br />

light up different meals and bring the best out of different dishes.’<br />

He is always up for a challenge so there has not been a meal he doesn’t enjoy<br />

cooking.<br />

Some of his proudest moments as a chef were being able to be part of local<br />

cooking shows on TV.<br />

‘I am the happiest at work when I need to rush, when everyone comes out to eat<br />

there is just something about that.’<br />

One of the challenges he faces as a chef is dealing with the country’s load-shedding.<br />

‘Other challenges are finding the correct products. Sometimes your main ingredient<br />

can be out of stock and then you have to make a plan,’ Martin explained.<br />

The chefs he admires are Gordon Ramsey as he is a real go-getter and he never<br />

gives up.<br />

He said that the best cooking tips he ever received were at family gatherings.<br />

‘Once again food brings people together, if there is any tip that would be to<br />

spend time making food for your family. Get everyone in the kitchen.’<br />

Martin met the love of his life Jackie 27 years ago in Bethal. They have three<br />

beautiful children, two girls and a boy.<br />

‘We all have different love stories and<br />

timing of doing things in life, but our<br />

love story is my favourite. We went to<br />

the same school and then I moved<br />

away. Seven years ago in October,<br />

I found Jackie on Facebook, and I<br />

decided to send her a message. We<br />

met up for coffee, and we just never<br />

looked back,’ he said.<br />

The couple tied the knot on March 19<br />

this year.<br />

Martin loves being a father and to<br />

him, fatherhood means the world and<br />

beyond. ‘I never had sisters and now I<br />

have two daughters. It amazes me to<br />

see them grow and become someone<br />

or something you prayed for. My<br />

‘laaitie’ is just the most adorable thing<br />

in the world. He is very fond of his<br />

mother and his grandfather.’<br />

He added that he felt that a father<br />

plays an important role in life because,<br />

at the end of the day, your father<br />

needs to make something out of you.<br />

‘A father will separate the earth for his<br />

children. My father, Charles, always<br />

tried his best and I will try to do the<br />

same if not better. I think a father<br />

makes or breaks you and in my life my<br />

father made me.’<br />

Being able to accomplish what he<br />

and his wife started is the best part<br />

of being a father. ‘To see their faces<br />

enjoying moments in life with you and<br />

to spoil them or surprise them with<br />

something they wanted badly.’ he said.<br />

‘Whatever they become or whatever<br />

they do in life, just enjoy it. I will always<br />

love them, and that will never change.<br />

Hugo makes chaos look beautiful<br />

Hugo was raised by Collette and<br />

Hugo Pienaar and grew up with his<br />

younger sister in Brakpan in the<br />

<strong>East</strong> Rand.<br />

Hugo’s fondest childhood memory<br />

was when he was 13-years-old.<br />

‘I went hunting with my father for the<br />

first time, and as a young boy to get<br />

the opportunity to provide for your<br />

family while having respect for mother<br />

nature is one of the best memories,’<br />

said Hugo.<br />

He matriculated at Hoërskool Die<br />

Anker in 2012 before leaving for<br />

hotel school to pursue his dream of<br />

becoming a chef. ‘When my parents<br />

got divorced in 2008, my dad moved<br />

and I lived with my mother and my<br />

sister. When I got home from school, I<br />

would help my sister with her homework<br />

and prepare dinner for us.<br />

‘This led to the awakening of my passion.<br />

I started cooking more and tried<br />

out new recipes,’ said Hugo.<br />

He added he would sometimes<br />

phone his dad to ask him about the<br />

next step of the cooking process. ‘This<br />

is how my father and I bonded. He<br />

taught me cooking over the phone.’<br />

Hugo has been in the industry for the<br />

last nine years and he knows many<br />

fields in his industry.<br />

These days you will see him at the<br />

Dros New Redruth, working as the<br />

general manager.<br />

“Being able to work for Martin and<br />

work with him in the kitchen is just<br />

priceless. I have so much respect<br />

for him and the things he does<br />

for others.’<br />

A highlight of his career was when<br />

he was placed fourth in a regional<br />

Unilever Chef of the Year Competition<br />

and became a regional judge for the<br />

annual Checkers Boerewors Competition.<br />

‘Passion is not something you teach.<br />

It is a warm happy feeling you get<br />

when you do something you love.<br />

For example, when I competed for<br />

Unilever Chef of the Year, which was<br />

the penultimate professional cooking<br />

competition in <strong>South</strong> Africa, I didn’t<br />

win but I felt so accomplished and<br />

that I think that was the passion talking,’<br />

he explained.<br />

Bring on the pressure<br />

Hugo is the happiest working under<br />

pressure. ‘When I’m under so much<br />

pressure that nothing is going through my head except the plate of food that<br />

I’m cooking, that is when I am the happiest.’<br />

He enjoys cooking Beef Wellington. ‘I love a good hearty meal and there is<br />

nothing better than soft tender fillet steak rolled in grilled mushrooms and<br />

creamy spinach and buttery puff pastry.’<br />

The three ingredients he will always use to cook with are salt, pepper<br />

and butter.<br />

There are a couple of ingredients which he doesn’t enjoy cooking with, but he<br />

will always make a plan to make the best out of the situation.<br />

Hugo is inspired by chefs like Marco Pierre White, Gordon Ramsay, Heston Blumenthal,<br />

Jan Hendrick, Bertus Basson and Jade van der Spuy.<br />

‘I’m a passionate chef who loves putting a smile on a person’s face. I was a lecturer<br />

and teaching is also a big passion of mine Why not share your knowledge<br />

with others?’ Hugo added.<br />

On the question about his kitchen disaster stories, he said the scariest moment<br />

for him in the kitchen was observing someone who placed a frozen chicken in<br />

a deep fryer.<br />

‘Let me tell you I feared for my life,’ he said laughingly.<br />

Nothing beats being a dad<br />

Hugo and Chante Lynn Bailey met while he was doing what you call rounds at<br />

the restaurant.<br />

Afterwards, she went to one of the<br />

waiters to ask them for my number.<br />

We chatted for three days before<br />

going on our first date.<br />

‘It was love at first sight.’<br />

They have been together for two<br />

years, and they have a beautiful<br />

baby boy, Elijah. Hugo and Chante<br />

are getting married later this year on<br />

October 8.<br />

Chante said she had never met anyone<br />

who works harder than Hugo.<br />

‘During difficult times he pushed<br />

through, and kept providing for us,’<br />

she said.<br />

To juggle his work life and his personal<br />

life, Hugo uses proper time<br />

management.<br />

‘Chefs have to be somewhat crazy to<br />

do what we do. My way of managing<br />

my time is by taking each day as it<br />

comes, as you never know what will<br />

happen. It has happened so many<br />

times that we have made plans, but<br />

whether they worked or not is a different<br />

story.<br />

‘The most important thing is you must<br />

make time for your family in your crazy<br />

schedule, sometimes even having<br />

them at work while I’m working can<br />

also be helpful.’<br />

Fatherhood is an opportunity for Hugo<br />

to raise the future generations of this<br />

world.<br />

‘I am responsible to teach my son the<br />

right way, but I am also there to catch<br />

him when he falls, to cheer him on<br />

and to accept his choices in life,’<br />

he said.<br />

According to him, fathers play a vital<br />

role in the lives of their children. ‘There<br />

are some things only my dad could<br />

teach me and that my mother couldn’t<br />

because it made more sense to me<br />

coming from him. Things like not<br />

digging in a woman’s handbag and<br />

opening the car door on your first date.’<br />

Whether it was a good or bad day, he<br />

always looks forward to getting home<br />

to Chante and Elijah.<br />

‘Seeing my son’s face light up when<br />

I walk into the door after work melts<br />

my heart. It will be his second Father’s<br />

Day this year, and he looks forward to<br />

spending it with his family. ‘The advice<br />

I want to give Elijah is he must always<br />

follow his passion. Do what you love,<br />

and you’ll never have to work a day in<br />

your life,’ he concluded.<br />

When counting sheep<br />

just doesn’t help<br />

Some of us are heavy sleepers and enjoy<br />

a good night’s rest no matter what. But for<br />

others ... we struggle to fall asleep, or wake up<br />

a few times during the night or unreasonably<br />

early in morning. And that makes us tired,<br />

irritable and stressed the following day,<br />

which more often than not leads to further<br />

insomnia issues.<br />

So while our genetic make-up may have a<br />

lot to do with the quality of sleep we can<br />

expect to have in our adult lives, there may<br />

be many other factors leading to insomnia<br />

and anxiety.<br />

These can include:<br />

• A stressful work, home life or situation<br />

• Inability to switch off brain activity at the<br />

end of the day<br />

• An excess of stimulants - we’re blaming you,<br />

Avo on toast<br />

Avo on toast is our regular Sunday night dinner. Purists need<br />

just salt, pepper and a squeeze of lemon. But there are so<br />

many ways to ring the (delish) changes. Like these ...<br />

The easy options<br />

Slice, mash or smash your avo onto a slice of toast of your<br />

choice. Top with either • a poached egg • chorizo and goat’s<br />

cheese • a sprinkling of dukkah and squeeze of lemon.<br />

The healthy options<br />

Top your health bread toast with avo, hummus, pesto and<br />

lemon for a quick and tasty snack. Try adding some roasted<br />

chickpeas for a bit of crunch.<br />

Sourdough toast, topped with avocado slices, cherry<br />

tomatoes, crispy seaweed, and a sprinkling of pumpkin seed<br />

dukkah and smoked sea salt.<br />

Toast a bagel or English muffin, then top with pesto,<br />

smashed avocado, savoury granola, fennel and rocket salad,<br />

drizzled with avocado oil or extra virgin olive oil, crushed<br />

pistachio nuts and - if you’re famished, a poached egg.<br />

Toast some low GI bread, top with smashed avocado,<br />

cannellini beans, shaved radishes, thyme, parmesan cheese<br />

shavings, and avocado balls. Serve with a sprinkling of chilli<br />

flakes and a wedge of lemon.<br />

The LUXURY OPTIONS<br />

Toast some rye or health bread, smother in cream cheese<br />

(full cream is our choice, low fat versions if you prefer), then<br />

layer on some thinly sliced cucumber. Pile on the smoked<br />

salmon, sprinkle with capers and chives.<br />

Toast some sourdough bread. Slice avos and fan on the<br />

bread. Add shavings of parmesan, thin slices of red onion,<br />

and top with rocket leaves. Drizzle with an olive oil and<br />

balsamic reduction dressing.<br />

Could you ever go wrong with bacon? Nope. Toast ciabatta,<br />

spread with cream cheese, then pile on the smashed avo.<br />

Add a generous handful of crispy bacon. For a proper<br />

breakfast option, drop the cheese and add a poached egg.<br />

Try an Italian caprese version. Toast ciabatta, and while still<br />

hot rub with a cut garlic clove. Smash your avo on the toast,<br />

then top with cherry tomatoes, mozzarella balls or slices, basil<br />

leaves and olive oil, and just a smidgen of balsamic vinegar.<br />

A retro avo ritz ... yes, please. Toast a<br />

piece of sourdough, smash an avo<br />

and spread thickly. Now add your<br />

cooked, peeled prawns, and drizzle<br />

with homemade Marie Rose sauce.<br />

Simply mix 100ml good quality mayo<br />

with a heaped tablespoon of tomato<br />

sauce, add a dash each of Tabasco<br />

and Worcestershire sauce and a shake<br />

of cayenne pepper. Squeeze in some<br />

lemon juice and add a touch (just a<br />

teaspoon or so) of brandy or sherry.<br />

Or cheat, and buy the prawn cocktail<br />

tub from Woolies. Sprinkle with a little<br />

cayenne pepper.<br />

The FRUITY options<br />

Toast health bread, top with smashed<br />

avo, then add thinly sliced strawberries,<br />

a scattering of toasted coconut flakes,<br />

a drizzle of honey and a generous<br />

grind of black pepper.<br />

Toast ciabatta bread, top with smashed<br />

avo. Add some thin slices of ripebut-still-firm<br />

pear, then crumbed<br />

blue cheese or Gorgonzola. Top with<br />

roasted walnuts and a drizzle of honey<br />

The mexican option<br />

Smashed avo with charred sweetcorn<br />

and Mexican flavours on sourdough<br />

toast. Makes four generous slices.<br />

You’ll need ... 2 avocados, peeled and<br />

pitted; sea salt and black pepper; a<br />

few sprigs fresh coriander, chopped;<br />

2 limes ... 1 juiced and 1 quartered; a<br />

big pinch of smoked paprika; 2 grilled<br />

sweetcorn, removed from the cob;<br />

20 cherry tomatoes, halved; 4 slices<br />

sourdough bread, toasted<br />

To make... In a bowl, combine the<br />

avocado, salt, black pepper, coriander,<br />

lime juice and paprika. Smash using<br />

a potato masher or a fork. Add the<br />

sweetcorn, tomatoes and check the<br />

seasoning. Top toast with avocado mix,<br />

garnish with extra coriander and lime<br />

wedges. Serve immediately.<br />

to bloom indoors. A pot<br />

of tulips will flower for a<br />

month or more because<br />

each pot contains more<br />

than one bulb. The secret<br />

is to buy a pot with mostly<br />

closed buds because<br />

each bloom only lasts a<br />

week. To bring the tulips<br />

into flower, place the pot<br />

where it receives plenty of<br />

bright, indirect light but<br />

not direct sun because<br />

this makes the blooms go<br />

over faster. Let the potting<br />

soil dry out moderately<br />

before watering.<br />

We’re planting … Cineraria Senetti because<br />

it loves the cold and we love its huge,<br />

showstopping daisy-like blooms. This garden<br />

or container variety thrives in full Winter sun<br />

or partial sun as well as indoors in bright light.<br />

The colour range incudes bi-colour magenta,<br />

blue and violet blooms with bright, white<br />

centres as well single colours. Cut back by<br />

50% after each flush of blooms to encourage<br />

another flush. ‘Senetti’ will flower through<br />

to early summer, only stopping to flower<br />

when night temperatures reach 26º C. Water<br />

regularly so that the soil doesn’t dry out and<br />

boost flowering with a liquid fertiliser twice<br />

a month. Plants grow up to 60 cm with a 45<br />

cm spread, which is taller than the normal<br />

Garden<br />

tasks for <strong>June</strong><br />

• Keep up the flower power of Winter<br />

flowering annuals with liquid fertiliser<br />

applied every two weeks. Remove the dead<br />

flowers to encourage new flowers. • Don’t let<br />

daffodils and other spring flowering bulbs or shrubs,<br />

like azaleas, camellias or magnolias dry out otherwise<br />

they will not flower. • Use all your garden waste and<br />

household scraps to make compost. • Spread the<br />

dried leaves onto the garden beds as thick mulch.<br />

• Move herbs in pots to a sheltered, sunny area,<br />

where there are no draughts. Water them once<br />

or twice a week and supplement with a<br />

liquid fertiliser (at half strength) every<br />

second week. • Water vegetables<br />

once a week<br />

Veggie of the month<br />

Micro greens are the only veggies you can safely sow<br />

in Winter. Use the big, black plastic seedling trays filled<br />

with a proper seedling soil mix which is weed free.<br />

Pre-fertilise by watering with Margaret Roberts Organic<br />

Supercharger so that the soil is damp. It is not necessary<br />

to fertilise again.<br />

RAW seeds has two flavourful mixes: ‘Old Mexico’ that<br />

consists of coriander, red beets, cabbage, radish and<br />

pepper cress and ‘Rainbow blend’ with beetroot, Asian<br />

cabbage, kohlrabi, Italian broccoli and radish. Sow<br />

seeds thickly, cover lightly with the soil mix, firm it<br />

down, and spritz with a spray bottle to dampen the<br />

soil. Cover the whole tray with plastic wrap and keep<br />

in a warm, sheltered place like a balcony, or patio. The<br />

seed should germinate within seven to 14 days. Harvest<br />

from 15 days onwards when the shoots are 5 to 10cm<br />

high. If you allow the leaves to grow bigger they can<br />

be harvested as baby leaves. Use as a garnish, salad<br />

topping, on open sandwiches and in omelette’s.<br />

Holiday camp fun!<br />

While sending your child to a holiday camp might sound a little daunting,<br />

chances are it is exactly what they need. And, having recently been given a ‘sneak<br />

peek’ into a typical Sugar Bay holiday camp, we can pretty much guarantee that<br />

if they do go, they won’t want to come home afterwards!<br />

There is nothing quite like seeing kids playing<br />

and interacting freely with each other, faceto-face,<br />

without a digital device in sight.<br />

Even more wonderful is seeing them being<br />

given full, undivided attention from the<br />

adults looking after them. In truth, this is<br />

something that even we, as parents, often<br />

struggle to do.<br />

With water slides, skateboards, rope swinging,<br />

arts and crafts, drama, body boarding, ocean<br />

swimming and loads of other activities on<br />

offer, Sugar Bay is a little slice of heaven for<br />

children aged between six and 17 years old.<br />

There is something to literally keep every<br />

child busy, entertained and happy at this<br />

beautiful resort situated in the coastal village<br />

of Zinkwazi on the North Coast of KZN.<br />

After having spent a few days and nights<br />

with the kids and counsellors at Sugar Bay,<br />

we realised however that the real magic of<br />

this place lies in the human connection and<br />

relationships the kids form while having the<br />

time of their lives.<br />

It’s been a rough couple of years for our<br />

children. Lockdowns, masks and spending<br />

way too much time in front of screens<br />

instead of playing with peers have all had<br />

a negative effect on both their mental and<br />

physical wellness.<br />

It’s for this reason, despite everything she and her team have faced, that Sugar<br />

Bay founder Zoe Ellender remains steadfast in her decision to keep the camp<br />

open.<br />

“Our children need this now more than ever,” says Zoe, who started the camp 20<br />

years ago. “The world is a very different place compared to when we first opened.<br />

Children are so protected and spend too much time in front of screens. They<br />

desperately need to connect, interact and socialise with each other.”<br />

Learning to spend time away from their parents, too, is an important part of<br />

their emotional development, she says. “What is amazing, is that it is usually the<br />

anxious kids who gain the most from spending a week with us. The children who<br />

are shy or nervous in the beginning are usually the ones who get on stage and<br />

confidently share their stories around the campfire on our final nights.”<br />

Based on the typical American-styled summer camp, Sugar Bay is the only<br />

sleepover resort in <strong>South</strong> Africa that has been built and run for children only. No<br />

parents are allowed!<br />

Children travel from all around <strong>South</strong> Africa (and overseas) to spend a week or<br />

two at a Sugar Bay holiday camp, where they make memories to last a lifetime.<br />

Sugar Bay also offers school tours outside of the holiday seasons.<br />

The camp is well-maintained and the kids sleep in wooden cabins nestled in a<br />

forest-like setting. There are two or more counsellors assigned to each cabin (kids<br />

are never left unsupervised) and boys’ and girls’ cabins are separate and secure<br />

with campers divided according to their grade.<br />

The professionally-engineered resort is comfortable, homey and very secure.<br />

There is a 25m swimming pool with three waterslides, a soccer field, five-sided<br />

climbing tower and obstacle and ropes courses. There is also a grand hall and<br />

dining room area, an arts and crafts centre, indoor sport hall and a tuckshop.<br />

Sugar Bay has private access to both the lagoon and beach - and all the water<br />

toys required for loads of summer fun!<br />

One of the highlights of a stay at Sugar Bay is definitely mealtime. The food is<br />

nutritious and tasty and made completely with kids in mind. It’s quite amazing,<br />

actually, to see how even the fussiest of eaters devour their breakfast, lunch and<br />

dinner (and snacks in-between) and, best of all, how they all work together to<br />

clean up their table and eating space afterwards.<br />

The thing that stands out above all though (and likely one of the most important<br />

aspects for parents), is the calibre of counsellors at Sugar Bay. Often students<br />

on holiday or those taking a gap year, the counsellors have all been extensively<br />

vetted and trained (in emergency first response and child psychology) and they<br />

all love what they do.<br />

“When I started the camp, I underestimated the impact the counsellors would<br />

have on the kids,” says Zoe. “I’ve since realised that it’s not about having the best<br />

SUP boards, skateboards and waterslides … it’s about the human interaction.”<br />

activities on offer, from dancing and yoga to martial arts, crab catching and flower<br />

Sugar Bay also recently launched a counsellor’s academy (a three-month master<br />

class or 11-month gap year programme), where young adults gain useful<br />

qualifications and experience with things like lifeguarding, scuba diving and<br />

boating.<br />
