1886<br />

The Locher family start brewing beer in<br />

Oberegg. In 1886, the family takes over the<br />

brewery in Appenzell, which continues to<br />

run as a brewery and distillery today.<br />

1999<br />

After the ban on producing spirits from grain<br />

is lifted, Master Brewer Karl Locher, known<br />

for his creative range of beers, starts to make<br />

the <strong>Säntis</strong> <strong>Malt</strong> using spring water from the<br />

Alpstein mountains and oak barrels previously<br />

used for beer.<br />

2002<br />

Brauerei Locher AG launches its first <strong>products</strong><br />

on the market, entering the history books as<br />

a pioneer of <strong>Swiss</strong> whisky production.<br />

2003<br />

Brauerei Locher AG starts using barley grown<br />

in high-altitude regions of Switzerland. This<br />

barley is characterised by its strength and<br />

vitality thanks to the extreme weather conditions<br />

in which it is grown.<br />

2010<br />

<strong>Whisky</strong> expert Jim Murray selects the<br />

Appenzeller <strong>Säntis</strong> <strong>Malt</strong> ‘Dreifaltigkeit’ as<br />

the European <strong>Whisky</strong> of the Year.<br />

2011<br />

<strong>Whisky</strong> Guide Switzerland votes Brauerei<br />

Locher AG <strong>Whisky</strong> Distillery of the Year.<br />

2012<br />

Brauerei Locher AG takes part in the<br />

presti gious International Wine & Spirit<br />

Competition (IWSC) in London for the first<br />

time. All whiskies entered are prize winners.<br />

2013<br />

Once again, all whiskies entered are<br />

awarded prizes by the IWSC. The ‘Alpstein<br />

2013 Special Edition’ is the first whisky from<br />

a German- speaking country to win a gold<br />

medal. The ‘Snow White Limited Winter<br />

Edition’ is launched.<br />

2014<br />

The <strong>Säntis</strong> <strong>Malt</strong> ‘Alpstein VIII’ and ‘Snow<br />

White 2’ editions win Silver Outstanding<br />

awards from the IWSC in London for their<br />

unique quality.<br />

2015<br />

The ‘<strong>Säntis</strong> <strong>Malt</strong> Germany No- 2’ edition is<br />

awarded gold and the ‘Alpstein X’ edition<br />

receives a Silver Outstanding award from<br />

the IWSC in London.<br />

2016<br />

Our ‘Single Cask 1103’, ‘Himmelberg’, ‘Alpstein<br />

XI’ and ‘Alpstein XII’ whiskies all receive<br />

Silver IWSC awards.<br />

2017<br />

Two new editions are added to the whisky<br />

liqueur range, namely the ‘Apricot <strong>Malt</strong><br />

Liqueur’ and ‘Plum <strong>Malt</strong> Liqueur’. Our ‘Cask<br />

8’ and ‘Cask 1208’ editions receive Silver<br />

Outstanding awards from the IWSC, while<br />

our ‘Snow White 4’ whisky wins silver.<br />

2018<br />

The ‘Alpstein XIV’ and ‘Snow White 5’<br />

editions win silver at the IWSC in London.<br />

The German ISW awards ‘Alpstein XIV’ a gold<br />

medal, and the ‘Germany No- 3’ edition a silver.<br />

2019<br />

The <strong>Säntis</strong> <strong>Malt</strong> Distillery celebrates the 20th<br />

anniversary of its first bottling of whisky.<br />

The ‘Genesis’ whisky, a limited edition which<br />

commemorates the origins and history<br />

behind the <strong>Säntis</strong> <strong>Malt</strong> casks, is released onto<br />

the market. The ‘Alpstein XV’ and the<br />

‘Genesis No- 1’ whiskies are each awarded a<br />

silver medal at the IWSC Awards, while the<br />

‘Föhnsturm’ and ‘Snow White 6’ editions<br />

bring home bronze. The new ‘Golfer's Birdie<br />

Water’ single malt whisky is launched.<br />

2020<br />

The ‘Alpstein XVI’ edition is awarded the silver<br />

medal at the IWSC London. The ‘Golfer's<br />

Birdie Water’ and ‘Snow White 7’ whiskies<br />

win bronze. The ‘Genesis No- 2 Acolon Wine<br />

Cask Finish Edition’ and the ‘Pineau des<br />

Charentes Snow White 8 Cask Finish Edition’<br />

are re leased. 2020 also marks the launch of<br />

the new ‘Bärli-Biber <strong>Whisky</strong> Liqueur’ in<br />

cooperation with the family-run bakery<br />

2021<br />

Launch of the ‘Single Cask Exploration’ Series<br />

celebrating the diversity of the casks in our<br />

Gold Award for the ‘Liechtenstein’ Edition<br />

in the <strong>Swiss</strong> Spirits Review and Silver for<br />

CHARACTER COMES FROM WITHIN<br />

The shine of the copper pot still, the gentle flow of the heart of the run, the earthy<br />

aromas of the warehouse. The production of our unique <strong>Säntis</strong> <strong>Malt</strong> engages all of<br />

our senses. However, the true soul of our whisky comes from within. Inside the barrel,<br />

the whisky develops its true character – a character unlike any other.<br />

We use only the purest spring water<br />

The water for our <strong>Säntis</strong> <strong>Malt</strong> flows<br />

gently from the rocks at the foot of<br />

the Alpstein mountains, providing us<br />

with our very own private water<br />

source. In terms of mineral content,<br />

the water is soft and pure, meaning<br />

that it needs no harsh chemical treatment<br />

before we use it. This purity has<br />

a decisive influence on the taste of<br />

our whisky.<br />

<strong>Swiss</strong> mountain gold<br />

Another important ingredient for our<br />

<strong>Säntis</strong> <strong>Malt</strong> is the malted barley that<br />

is grown for us by 35 <strong>Swiss</strong> farmers in<br />

the highest regions of Switzerland.<br />

This variety of barley is characterised<br />

by its strength and vitality, which it<br />

gains from its late ripening and the<br />

extreme weather conditions in the<br />

mountains. But it doesn’t stop<br />

there because the barley is doublebarrelled:<br />

for our whisky, growing the crop<br />

helps the <strong>Swiss</strong> mountain farmers to<br />

maintain their livelihoods – a crop<br />

that’s definitely worth its weight in<br />

gold!<br />

Patience is a virtue<br />

It takes real skill. During distillation,<br />

the stillman waits patiently for the<br />

exact moment that he can separate<br />

the heart of the run from the rest<br />

of the distillate. His knowledge and<br />

experience are not only needed<br />

during distillation, but also during<br />

maturation. He will use his expertise<br />

to carefully select the correct barrel,<br />

decide on the period of maturation<br />

and judge the influences which air<br />

pressure and climate will have on<br />

the whisky. Last, but most certainly<br />

not least, he will use his pronounced<br />

sense of smell and taste to decide<br />

when the whisky is ready to be<br />

bottled.<br />

Maturation in oak-wood barrels<br />

The oak barrels in the warehouse at<br />

Brauerei Locher protect the heart of<br />

our <strong>Säntis</strong> <strong>Malt</strong>. The barrels started<br />

their journey 60 to 130 years ago and<br />

have absorbed decades worth of beer<br />

aromas. They now give our whisky its<br />

extraordinary character. Finishing the<br />

whisky is done in wooden casks from<br />

all over the world, for example casks<br />

previously used for port, sherry, bourbon,<br />

sweet wines, Pinot Noir and<br />

numerous other specialities. They are<br />

responsible for the final character of<br />

each <strong>Säntis</strong> <strong>Malt</strong> Edition and give<br />

each one a unique finishing touch.<br />

Maturation in oak beer barrels that are over 130<br />

years old gives our <strong>Säntis</strong> <strong>Malt</strong> ‘Sigel Edition’ its<br />

unique flavour. <strong>Whisky</strong> connoisseur Jim Murray<br />

describes it as a single malt with “an exclusive<br />

aroma and one that melts on the tongue,<br />

combining a juicy fruitiness with a light spiciness.<br />

Vanilla flavours compliment oak flavours in the<br />

most amicable way possible.”<br />

Like all our whiskies, the spring water for our<br />

<strong>Säntis</strong> <strong>Malt</strong> ‘Himmelberg Edition’ originates from<br />

the Alpstein. The secret to this whisky lies in<br />

transferring it from a beer barrel into various<br />

wine casks during maturation. Independent<br />

whisky consultant Julia Nourney describes it as<br />

a “light and fruity whisky, with spicy and woody<br />

aromas whose true character is best tasted on<br />

the roof of the mouth.”<br />

<strong>Malt</strong>ing the barley used for this whisky over the<br />

fire with peat from the Appenzell moor gives it<br />

its unique smoky flavour. The ‘Dreifaltigkeit<br />

Edition’ (meaning ‘trinity’) was chosen by Jim<br />

Murray as the European <strong>Whisky</strong> of the Year<br />

2010. He added, “What we have here is a whisky<br />

of such a controlled yet immense quality that<br />

one simply has to enjoy this whisky.”<br />

The <strong>Säntis</strong> <strong>Malt</strong> ‘Alpstein Edition’ acquires its<br />

award-winning quality from the moment it is<br />

poured into the former beer barrels. To finish the<br />

whisky, it is transferred into casks formerly used<br />

to hold bourbon, port or sherry. Every cask<br />

provides a unique flavour which is reflected in<br />

the whisky. This edition is produced as a continued<br />

limited edition.<br />

A mixture of various flavours. After being aged<br />

for between four to five years in beer barrels, our<br />

‘Föhnsturm’ whisky is finished for just a few<br />

months in wine casks. Flavours from different<br />

wine casks give it both sweet and fruity notes.<br />

The whisky is bottled when the distinct aromas<br />

of maturation are prominent but the sweet,<br />

fruity notes of the finishing process come<br />

through.<br />

Every year we are pleasantly surprised by the<br />

new design and fruity finish of the winter edition,<br />

of which just 2,000 bottles are produced<br />

– a single malt whisky, matured in a beer barrel<br />

and completed in casks that were previously<br />

filled with various fruit spirits. Whether the<br />

‘Snow White’ has a prune, pear, cherry, apricot<br />

or orange finish, the whisky and fruit flavours<br />

complement one another perfectly.<br />

A typical <strong>Säntis</strong> <strong>Malt</strong> with a ‘princely’ finish.<br />

Traditionally aged for five years in historical,<br />

sometimes over 100-year-old oak beer casks,<br />

the <strong>Säntis</strong> <strong>Malt</strong> ‘Liechtenstein Edition’ goes on<br />

to mature and soak up the goodness of select red<br />

wine casks from the Princely Wine Cellar of the<br />

Prince of Liechtenstein Foundation for several<br />

almond and rose water aromas also come<br />

through. On the palate, this liqueur gives<br />

brandy-soaked apricot flavours backed up by a<br />

gentle sweetness. There is a surprisingly strong,<br />

long-lasting finish as seldom experienced with<br />

a liqueur.<br />

PLUM MALT LIQUEUR<br />

Our ‘Plum <strong>Malt</strong> Liqueur’ is matured in old beer<br />

barrels and later combined with plums, giving it<br />

a delicate yet mature aroma. Fruity flavours<br />

dominate, but it packs a good punch. The taste<br />

is rounded off with a hint of the soft, spicy<br />

touches of clove and cinnamon. This liqueur has<br />

a finish with a delicate sweetness like that of<br />

dried fruit.<br />

SOME WHISKIES ARE WORTH TREKKING FOR<br />

The highest-elevation <strong>Whisky</strong> Trek takes you deep into the <strong>Swiss</strong> Alpstein mountains. Each<br />

leg of the trail ends in a mountain tavern where a <strong>Säntis</strong> <strong>Malt</strong> <strong>Whisky</strong> is maturing. The<br />

location of the mountain tavern will directly impact the taste and colour of the whisky,<br />

making each one different. Each mountain chalet’s own house whisky is served to drink or<br />

to take home in collector bottles, filled and signed by the cask-keeper in the tavern.<br />

Each edition of <strong>Säntis</strong> <strong>Malt</strong> is named<br />

after a mountain formation in the<br />

Alpstein massif. It is here that the 26<br />

mountain taverns are also located<br />

where our Single <strong>Malt</strong> is stored in<br />

oak barrels and offered to drink or to<br />

take away in collectors’ bottles. The<br />

idea to mature whisky, not only in<br />

oak casks from all over the world, but<br />

also in various different mountain<br />

taverns, is a prime example of regional<br />

collaboration anchored in the history<br />

of the area.<br />

Each cask is unique<br />

Each of the whiskies on offer in the<br />

taverns has a unique taste, even<br />

though each one starts with the same<br />

Single <strong>Malt</strong>. Factors such as altitude,<br />

temperature and warehouse and<br />

weather conditions are responsible<br />

for changes in the way whisky<br />

matures. This means that the whiskies<br />

from the 26 mountain taverns will all<br />

be different, varying in aroma, colour<br />

and flavour.<br />

Alpstein mountains. Each leg of the<br />

journey ends at a mountain tavern,<br />

where an individually stored whisky<br />

is available to drink or to take away<br />

in 10cl or 50cl collectors’ bottles<br />

after being filled in the tavern and<br />

signed by the tavern’s cask-keeper.<br />

whiskies? Passionate whisky lovers get answers to their questions and can discover<br />

their own personal favourites with a tasting in our cosy Appenzell <strong>Whisky</strong> Stöbli.<br />

<strong>Whisky</strong> Degustation<br />

can recognise from our <strong>Säntis</strong> <strong>Malt</strong>.<br />

We introduce the aromas of our fine<br />

spirits in the Appenzeller <strong>Whisky</strong><br />

Stöbli. The <strong>Säntis</strong> <strong>Malt</strong> whisky degustation<br />

trains the senses, allowing<br />

you to get a little more familiar<br />

with our whisky with each sip.<br />

Our Visitor Centre takes adventureseekers<br />

to a fascinating world of beer<br />

and whisky. There you will find out<br />

how we create our Appenzell beer<br />

and <strong>Säntis</strong> <strong>Malt</strong> from pure spring<br />

water straight from the spring and<br />

high-quality raw materials through<br />

our audio tour.<br />

Take a trip back in time in the historic<br />

hop cellar, where you will view a<br />

short film about the brewery. The<br />

small museum also brings past times<br />

back to life.<br />

There is also a shop in the Visitor<br />

Centre where you are more than<br />

welcome to browse for the perfect<br />

gift for yourself or to take home for<br />

friends and family.<br />

Individual guests<br />

Individual persons are welcome at<br />

any time and will be given a free<br />

audio guide for the tour (available in<br />

German, French, Italian and English).<br />

We recommend allowing approx.<br />

40 minutes for a visit. Please be<br />

aware, in peak season waiting time<br />

is likely to be longer.<br />

Groups<br />

For registered groups of 8 to 50 people,<br />

we would be delighted to organise<br />

an Appenzell Beer Degustation in<br />

our historic Gnoss-Stöbli or a <strong>Säntis</strong><br />

<strong>Malt</strong> <strong>Whisky</strong> Degustation in the cosy<br />

<strong>Whisky</strong> Stöbli following the tour.<br />
