EAL EATS PRIME CUTS By Ann Cipperly 54 EAST ALABAMA LIVING
During the holiday season, tender, flavorful beef is an impressive centerpiece for a festive menu, celebrating Christmas, New Year’s Eve and other celebratory occasions. Prime steaks and roasts are easy to prepare, and local butchers offer custom cuts and sizes for every budget. In addition to an excellent source of protein, beef supplies 10 essential nutrients, including B-vitamins, zinc and iron. These nutrients have been found to play an important role in muscle maintenance, prevention of chronic disease and maintaining cognitive ability. VINTAGE 2298 BUTCHER SHOP After a successful career at famed Frank Stitt’s awardwinning restaurant and opening another restaurant in Birmingham, Chef Randall Baldwin and wife Laura opened Vintage 2298 in Auburn in 2022. In June 2023, the couple opened the Village 2298 Butcher Shop next door to offer the same meats and seafood served in their chic restaurant, as well as a variety of items for creating delectable meals at home. “When we opened the restaurant, this suite was available,” says Chef Randall. “I thought it would be a good idea to utilize this since it is next to the restaurant. I surprised my wife Laura with this on her birthday. She has taken over the shop, planning the product selection. “We use the same products at the shop that we use in the restaurant,” the chef adds. “We felt Auburn needed it, and we wanted to have a shop with a higher standard.” “We are gearing the business for one-stop shopping,” says Laura. “For a special evening, you can come in and grab a bouquet of fresh-cut flowers, select a meat that is cut to order and can get it seasoned as we do in the restaurant. “We are taking orders for cakes, such as coconut cakes, for the holidays. The pastry chef, Alicia Martin, does all of our desserts.” The butcher, Harrison Davis, has been with the restaurant since it opened and then switched to the butcher shop last June.
